Brownie de beterraba / Beetroot brownie
O meu filho adora beterraba e quando vi este brownie no blog Doces Experiências, nesse mesmo dia comprei 2 beterrabas. Devo dizer que ficou tão bom que até a minha filha, que detesta tudo o que leva beterraba, gostou e comeu logo uma fatia. Devo salientar que vale a pena usar um bom chocolate para fazer este bolo.

My son loves beets and when I saw this in Doces Experiências, I bought two beets that same day. I must say that was so good that even my daughter, who hates everything that has beets, liked it and ate a slice right away. You should use a good chocolate to make this cake.


Ingredientes:
300 g chocolate de culinária em pedaços (72% cacau)
100 g manteiga
300 g beterraba cozida descascada (2 beterrabas médias)
1 c. chá de essência de baunilha
3 ovos
250 g açúcar amarelo
100 g farinha
1 c. chá de fermento em pó
20 g cacau em pó

Pré-aquecer o forno a 180ºC.
Numa tigela funda coloca-se a farinha, o fermento e o cacau em pó, mistura-se e reserva-se.
Coloca-se o chocolate numa picadora e pica-se até ficar em pó. No liquidificador coloca-se o chocolate que se pulverizou, junta-se a manteiga, a beterraba e a baunilha e bate-se até ficar uma pasta homogénea.
Juntam-se os ovos e o açúcar e volta-se a bater no liquidificador.
Deita-se esta massa batida na tigela com farinha e mistura-se bem.
Coloca-se a massa num tabuleiro quadrado (20x20) e leva-se ao forno durante +/- 30 minutos.
Servir com uma bola de gelado de baunilha.


Ingredients:
300 g chocolate (72% cocoa)
100 g butter
300 g cooked peeled beets (2 medium beets)
1 tsp vanilla extract
3 eggs
250 grams brown sugar
100 g flour
1 teaspoon baking powder
20g cocoa powder

Preheat oven to 180ºC.
In a deep bowl place the flour, baking powder and cocoa powder, mix and reserve.
Place the chocolate in a food processor and pulverize into powder. In a blender place the chocolate that has pulverized, add the butter, sugar beet and vanilla and beat until it is smooth.
Add the eggs and sugar and beat for a couple of minutes.
Pour this batter into the bowl with flour and mix well.
Place the dough on a greased square baking pan (20x20) and take to the oven for +/- 30 minutes.
Serve with a spoon of vanilla ice-cream.

Uma das minhas carnes preferidas para grelhar é o coelho, mas não costumo fazer muitas vezes porque os meus filhos parecem não apreciar esta carne grelhada. Mas esta semana encontrei num supermercado ao pé de casa, embalagens de pernas de coelho em promoção e trouxe uma embalagem. Temperei com as ervinhas aromáticas que tenho a crescer na minha varanda e ficou fantástico!

My favorite meat for grilling is rabbit, but I don't make it often because my kids don't seem to enjoy this grilled meat. But this week I found in a supermarket near home, packages of rabbit legs in promotion and brought one. I seasoned with herbs that I grow on my balcony and it was fantastic!


Ingredientes:
1 perna de coelho por pessoa
1 ramo de alecrim
7 folhas de salva
sal e pimenta qb
raspa de meio limão
1 copo de vinho branco
2 colheres de sopa de azeite.
3 dentes de alho

Colocam-se as pernas de coelho num recipiente, rega-se com o azeite, o vinho, o sal e a pimenta. Juntam-se as ervas aromáticas picadas, a raspa de limão e os dentes de alho descascados e esmagados. Misturar tudo bem e envolver bem as pernas de coelho. Tapa-se o recipiente de deixa-se de um dia para o outro no frigorífico.
No dia seguinte, retiram-se as pernas da marinada e grelham-se num grelhador bem quente ou nas brasas.
Servi com batatinhas e brócolos cozidos.


Ingredients:
a rabbit leg per person
1 sprig of rosemary
7 sage leaves
salt and pepper to taste
zest of half a lemon
1 cup white wine
2 tablespoons olive oil.
3 cloves of garlic

Put the rabbit legs in a bowl, drizzle with olive oil, wine, salt and pepper. Add the chopped herbs, lemon zest and garlic cloves, peeled and crushed. Mix everything well and cover the meat. Cover the container and keep it overnight in the refrigerator.
The next day, pull up the legs from the marinade and grill on a hot grill or in hot coals.
Serve with boiled potatoes and broccoli.

Este pão, para além de ser saudável, é também muito rápido de fazer, pois não precisa de levedar. É excelente para um lanche ou para o pequeno almoço. Os meus filhotes adoraram este pão!

This bread, in addition to being healthy is also very quick to make, because it does not need to rest. It's great for a snack or for breakfast. My children loved this bread!


Ingredientes:
aveia para polvilhar
sementes de girassol e de linhaça
1 copo aveia em flocos,
1 1/3 copo de farinha de trigo integral
1 copo de farinha de trigo
2 1/4 colheres de chá de fermento em pó
1/4 colher de chá bicarbonato de sódio
1 1/4 colheres de chá de sal
1 copo mal cheio de iogurte magro
1 ovo grande
1/4 copo de óleo
1/4 copo de mel
3/4 copo de leite magro

Numa tigela colocam-se as farinhas, o fermento em pó, o bicarbonato de sódio e o sal. Noutra tigela coloca-se 1 copo de aveia, o óleo, o iogurte, o ovo e o mel. Mistura-se bem e junta-se o leite. Deita-se esta mistura nos ingredientes secos e mexe-se o suficiente para ficar bem envolvido.
Unta-se uma forma de bolo inglês e polvilha-se com a aveia que sobrou. Deita-se a massa e polvilha-se com aveia, sementes de girassol e de linhaça.
Leva-se a forno a 180ºC durante 30 minutos. Ao fim deste tempo retira-se do forno e deixa-se repousar durante 30 minutos (se conseguirem).





Ingredients:

flaxseed and sunflower seeds
1 cup oat

1 1/3 cups wholewheat flour

1 cup all-purpose flour
2 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1 1/4 teaspoons salt
1 cup plain, nonfat yogurt
1 large egg
1/4 cup oil
1/4 cup honey
3/4 cup nonfat



Stir together the wholewheat flour, all-purpose flour, baking powder, baking soda and salt
in a large bowl. In another bowl, beat the remaining 1 cup oats, yogurt, egg, oil and honey. Stir in milk. Gently stir the yogurt mixture into the flour mixture just until incorporated but not over mixed.
Scrape the batter into a greased and sprinkled with oats pan. Sprinkle with the remaining oats, the flaxseed and the sunflower seeds over the top.
Bake the loaf for 30 minutes. Take it out of the oven and let it rest for 30 minutes (if you can resist).

Ingredientes:
1 copo de farinha integral
1/2 copo de amêndoa moida
1 copo de açúcar amarelo
125g de iogurte
2 ovos
raspa de 1 limão
1 colher de fermento em pó
90g de manteiga derretida

Pré aquecer o forno a 180ºC.
Bater o iogurte com o açúcar, adicionar os ovos e a raspa de limão e bater bem. Juntar a farinha, a amêndoa e o fermento em pó e envolver bem. Junta-se a manteiga derretida e mistura-se bem.
Distribuir a massa por forminhas de queques e levar ao forno durante 20 a 25 minutos.

Ingredients:
1 cup whole wheat flour
1/2 cup powdered almonds
1 cup light brown sugar
125g fat free yoghurt
2 eggs
zest of 1 lemon
1 tsp baking powder
90g melted butter

Heat de oven to 180ºC.
Beat de yoghurt and the sugar, add the eggs and the lemon zest. Add the flour, the powdered almonds and the baking powder. Add the melted butter and beat the whole mixture well.
Pour into muffin tins and bake for 20 to 25 minutes.

Ontem estava eu a olhar para dentro do frigorífico a tentar pensar em algo para fazer para o jantar. Eu ia comer sopa, mas os meus filhos estavam a pedir algo para "trincar", para além da sopa. Foi quando me lembrei de duas salsichas de peru frescas grelhadas que sobraram do almoço deles. Juntando a courgette solitária na gaveta dos legumes e um resto de queijo mozzarella que precisava de ser consumido, nasceram estes muffins que os meus filhos adoraram!

Yesterday I was looking in the refrigerator trying to think of something to do for dinner. I would eat soup, but my children were asking for something to "bite" in addition to the soup. That's when I remembered two fresh grilled turkey sausage left over from their lunch. Adding the lonely courgette in the vegetables tray and rest of mozzarella cheese that needed to be consumed, these muffins we're born and my children loved it!


Ingredientes (rende 16 muffins):
2 salsichas frescas grelhadas
1 courgette grande com cerca de 350g
1/2 pacote de queijo mozzarela ralado
250g de farinha integral
2 colheres de chá de fermento em pó
1 colher de chá de bicabornato de sódio
1 pitada de sal
1 colher de sobremesa de cebolinho picado
1 colher de chá de alecrim picado
1 ovo
60ml de azeite
150g de iogurte natural magro

Pré aquecer o forno a 180ºC.
Cortar as salsichas em rodelas finas e ralar a courgette para dentro de uma tigela grande. Juntar o queijo ralado, a farinha, o fermento e o bicabornato de sódio. Picar as ervas e juntar à mistura. Adicionar o sal, o ovo, o azeite e o iogurte. Mexer até todos os ingredientes estarem bem envolvidos.
Deitar a massa em formas de queques e deixar cozer durante cerca de 30 minutos.
Servir com uma sopinha ou com uma salada :)

2 fresh grilled sausages
1 large courgette with about 350g
1/2 package shredded mozzarella cheese
250g wholemeal flour
2 teaspoons baking powder
1 teaspoon baking soda
a pinch of salt
1 tablespoon chopped chives
1 teaspoon chopped rosemary
1 egg
60ml of olive oil
150g plain fat free yogurt


Preheat oven to 180 º C.
Cut the sausages into thin slices and grate the zucchini into a large bowl. Add the grated cheese, flour, baking powder and baking soda. Chop herbs and add to mixture. Add salt, egg, olive oil and yogurt. Mix until all ingredients well mixed.
Pour the dough into the muffin cups and bbake for about 30 minutes.
Serve with a soup or a salad :)

A Vera do blog "E hoje para o jantar temos" lançou-me o desafio de fazer uma receita de um país que já tivesse visitado, por isso aqui fica a minha participação :)

Fui com o meu marido à Irlanda em Agosto de 1999. Foi uma viagem fantástica, que me deixou memórias que ainda hoje me fazem rir.
A Irlanda é um país lindo, muito verde e com pessoas muito simpáticas. As paisagens são fabulosas e é certamente um país que eu gostaria de voltar a visitar.
Percorremos o país de carro, partimos de Dublin, subimos em direcção a Belfast e demos a volta ao país terminando novamente em Dublin. Todo o país é lindo, mas os mais bonitos, para mim, são os condados de Galway e o de Kerry. Mas o mais impressionante é a famosa Calçada dos Gigantes no condado de Antrim que consiste no conjunto de cerca de 40 000 colunas prismáticas de basalto, encaixadas como se formassem uma enorme calçada de pedras gigantescas resultante de uma erupção vulcânica ocorrida há cerca de 60 milhões de anos. É absolutamente deslumbrante!

Muito sinceramente, não tenho grande memórias da comida lá. Tenho a vaga ideia de ter comido um estufado, mas não devia estar assim tão bom, pois nem me lembro se gostei ou não... E acreditem, quando eu gosto muito de alguma comida, eu lembro-me!
É claro que à noite fomos aos pubs beber uma pint de Guiness, mas lembro-me que, apesar de gostar da Guiness, gostei mais de outra cerveja chamada Kilkenny.
Apesar de não ter ficado deslumbrada em termos de gastronomia, no último dia fomos a uma papelaria no aeroporto e trouxe de lá o livro "The best of Irish cooking". Desde essa altura que ando para fazer alguma receita deste livro, mas por alguma razão fica sempre adiada.

Mas foi desta vez que me decidi e fiz estas bolachas de aveia conhecidas por oatcakes. São incrivelmente fáceis de fazer e para quem está em regime de perda de peso, como é o meu caso, é uma alternativa para um pequeno almoço nutritivo.


Vera of "E hoje para o jantar temos" presented me the challenge of making a recipe from a country that had already visited, so here's my contribution :)


I went with my husband to Ireland in August 1999. It was a fantastic trip, that left memories that still make me laugh.
Ireland is a beautiful country, very green and with very nice people. The landscapes are fabulous and it is certainly a country that I would like to re-visit.
We traveled the country by car, we left Dublin, we went up towards Belfast and went around the country ending up again in Dublin. The whole country is beautiful, but the most beautiful, to me, are the counties of Galway and Kerry. But most impressive is the famous Giants Causeway in County Antrim which consists of a set of about 40 000 prismatic columns of basalt, fitted as forming a huge cobbled resulting from a massive volcanic eruption about 60 million years. It is absolutely stunning!


Quite frankly, I don't have great memories of the food there. I have a vague idea of ​​eating a stew, but it didn't impressed that much because I can not remember if I liked it or not ... And believe me, when I really like some food, I remember!
Of course, in the evening we went to pubs to drink a pint of Guinness, but I remember that, although I like the Guiness, I liked another beer called Kilkenny.
Despite not having been dazzled in terms of gastronomy, in the last day we went to a book shop at the airport and brought the book "The best of Irish cooking." Since then I've been wanting to make a recipe from this book, but for some reason is always postponed.


But this time I decided to make these oatcakes. They are incredibly easy to make and who is under weight loss diet, as is my case, is an alternative for a nutritious breakfast.


Estas bolachas de aveia são comidas com manteiga, ou barradas com manteiga. O meu filho fez questão de experimentar várias coberturas, tal como se pode ver na foto.
As "oatcakes" são uma das mais tradicionais de todas as comidas irlandesas.

Ingredientes:
120g de farinha (eu usei integral)
1 pitada de sal
1 colher de chá de fermento em pó
225g de aveia
60ml de água
30g de manteiga

Coloca-se a farinha, o sal e o fermento em pó numa tigela com a aveia e mistura-se bem.
Aquece-se a água com a manteiga até esta derreter, de seguida junta-se aos ingredientes secos e mistura-se rapidamente, adicionando um pouco mais de água se necessário.
Divide-se a massa em 2 pedaços e estende-se. Cortam-se rodelas de massa e cozinham-se numa chapa quente (eu usei uma frigideira de fazer panquecas) até ficarem dourados. Deixar as bolachas de aveia arrefecer numa rede.
Agora só resta escolher a cobertura. Bom apetite! :)


Oatcakes are eaten with cheese, or spread with butter. My son wanted to try several toppings, as you can see in the photo.
They are one of the most traditional of all Irish foods.

Ingredients:
120g flour (I used whole wheat flour)
a pinch of salt
1 tsp baking powder
225g oatmeal
60ml water
30g butter


Sieve the flour, salt and baking powder into a bowl containing the oatmeal and mix well.
Heat the water and butter together until the butter melts, then pour the mixture into the dry ingredients and mix quickly together, adding a little extra water if necessary.
Divide the dough into two and roll out. Cut into round biscuits and cook it on a hot griddle (I used a pancake pan) until golden.
Leave to cool on a wire rack.
Now choose the topping. Enjoy! :)

Uma das frutas preferidas da minha filha é o ananás, então tento sempre ter este fruto no frigorífico. Mas, já há algum tempo que me dá pena deitar para o lixo as cascas sem fazer nada com elas. Tenho visto em vários blogs, que se utiliza as cascas para fazer geleia, então pus mãos à obra e fiz à minha maneira com os sabores que nós cá em casa gostamos.
Devo dizer que vou voltar a fazer muitas mais vezes, pois foi um verdadeiro sucesso! A minha filha adorou esta geleia e o meu filho adora a sua torradinha com geleia de ananás pela manhã.
E sim, eu também adorei :) Fica uma geleia muito suave, com um sabor muito agradável e a consistência ficou au point!
Baseei-me no blog Canela Moída para fazer esta geleia. Mas chega de conversa e passemos à receita :)


One of my daughter's favorite fruit is pineapple, so I try to always have this fruit in the refrigerator. But now, for some reason, I hate throwing away the shell of the pineapple without doing anything with them. I have seen on various blogs, using the shell of the pineapple to make jelly, so I decided to make it my way with the flavors that we enjoy here at home.
I must say that I will be making this jelly many more times because it was a real success! My daughter loved this jelly and my son loves his toast with pineapple jelly in the morning.
And yes, I loved it :) It is a very soft jelly with a very pleasant taste and the consistency was au point!
I have relied on the blog Canela Moída to make this jam. But enough talk and lets see the recipe :)


Ingredientes:
Cascas de 1 ananás
1 mão cheia de folhas de menta
1 pau de canela
água
açúcar

Colocam-se as cascas de ananás numa panela e cobre-se com água. Junta-se o pau de canela e a menta e leva-se ao lume e quando começar a ferver, deixa-se ferver durante 10 minutos em lume brando.
Coa-se o líquido, mede-se a quantidade de líquido que se obteve e junta-se a mesma quantidade de açúcar (1litro de líquido leva 1 kg de açúcar).
Leva-se novamente ao lume e deixa-se ferver em lume brando até se obter ponto de fio (quando se coloca um pouco de geleia arrefecida entre o indicador e o polegar e se juntam os dois dedos, ao afasta-los formar-se-à um fio de geleia).
Quando estiver pronta, coloca-se a geleia dentro de frascos esterilizados e fecham-se hermeticamente. Os frascos de geleia deverão ser conservados em local fresco e escuro para não alterar a cor do doce.


Ingredients:
shell of a Pineapple
1 handful of mint leaves
1 cinnamon stick
water
sugar


The shells are placed in a pan and cover with water. Add in the cinnamon stick and mint, bring it to a boil, and let it boil for 10 minutes over low heat.
Strain the liquid, measuring the amount of liquid that was obtained and add the same amount of sugar (1 liter of liquid takes 1 kg of sugar).
Bring it to a boil and allow to simmer until it gets to the thread point.
When ready, pour the jelly into sterilized jars and close tightly. The jelly jars should be stored in a cool, dark place to avoid altering the color of the jelly.

Recebi esta receita esta semana, num caderno de receitas saudáveis. Chamou-me logo à atenção, e depois de verificar que tinha duas courgettes perdidas no frigorífico, fiz estes queques para o lanche dos meus filhos. Ficaram húmidos e deliciosos! A minha filha torceu o nariz quando viu a courgette dentro do queque, mas depois de provar comeu mais dois queques com leite. Vale bem a pena experimentar!

I got this recipe in a book of healthy recipes. It immediately draw my attention, and after knowing that I had two lost zucchinis in the fridge, I made these cupcakes for my kids. They were moist and delicious! My daughter was sure that she wouldn't like it when she saw the zucchini, but after tasting she ate two more cupcakes with milk.


Ingredientes:
3 ovos
2 copos de açúcar amarelo
1/2 copo de óleo
1 colher de chá de essência de baunilha
2 courgettes médias raladas com a pele
1 colher de chá de sal
2 colheres de chá de bicarbonato de sódio
1 colher de chá de fermento em pó
1 copo de farinha trigo integral
1 copo de farinha de trigo
2 colheres de chá de canela
100 g de nozes raladas
raspa de um limão

Bate-se os ovos com o açúcar. De seguida adiciona-se o óleo e a baunilha e mexe-se bem.
Adiciona-se a courgette ralada, o sal, o bicarbonato, a canela, o fermento em pó e as farinhas.
Juntam-se as nozes raladas e a raspa de limão ao preparado e envolve-se bem.
Coloca-se o preparado em forminhas de papel de queques e leva-se a cozer a 180ºC durante cerca de 20 minutos.

1 teaspoon salt
2 teaspoons baking soda
1 teaspoon baking powder
1 cup whole wheat flour

100 g of grated nuts
zest of one lemon


Beat the eggs with the sugar. Then add the oil and vanilla and stir well.
Add the grated zucchini, salt, baking soda, cinnamon, baking powder and flour.
Join walnuts and grated lemon zest and mix well.
Place the dough in paper cupcake cups and bake at 180°C for about 20 minutes.

Hoje apetecia-nos um almoço leve, por isso, quando voltámos das compras fiz este almocinho simples, económico, rápido e saudável.
Os meus filhos adoraram esta sanduiche e já me disseram que querem que eu a faça mais vezes.

Today we felt like having light lunch, so when we returned from shopping I made this simple, economical, fast and healthy lunch.
My kids loved this sandwich so much so they told me that they want me to make it more often.


Ingredientes:
1 baguette
1/4 de abacaxi cortado em fatias finas
1 queijo fresco mozzarella light cortado em fatias
rúcula
1 peito de frango assado no forno cortado em fatias
mostarda l'ancienne

Começa-se por cortar a baquette ao meio, no sentido do comprimento e barra-se com a mostarda. Colocam-se as fatias de mozzarella e por cima as fatias de frango. Dispõem-se as fatias de abacaxi e a rúcula e tapa-se com a segunda metade da baguette.


Ingredients:
1 baguette
1/4 pineapple cut into thin slices
1 fresh light mozzarella cheese sliced
arugula
1 chicken breast roasted sliced
l'ancienne Mustard

Até há pouco tempo, os meus filhos não ligavam muito a doces. O meu filho comia ocasionalmente, e a minha filha nem lhes tocava. De repente despertou neles uma vontade de comer doce de frutas com pão ou com scones, panquecas ou mesmo com iogurte. E o que a mãe faz?... faz doces :)
Tinha uns morangos a precisar de ser comidos e ninguém queria batido ou comê-los ao natural, então fiz doce de morango. Para variar, e porque eu e o meu filho adoramos anis, experimentei colocar umas estrelas de anis no doce e devo dizer que ficou delicioso!


Until recently, my kids didn't care much for jams. My son ate occasionally, and my daughter wouldn't even eat it. Suddenly awakened in them a desire to eat fruit jam with bread or scones, pancakes or with yogurt. And what does the mother make? ... jam! :)
I had some strawberries that needed to be eaten and no one wanted a milkshake or eat them au naturel, so I made strawberry jam. For a change, and because my son and I love anise, tried to put some star anise in the jam and I must say it was delicious!


Ingredientes:
700g de morangos arranjados e cortados em pedaços
500g de açúcar amarelo
sumo de meio limão
2 estrelas de anis
100ml de água

Colocar todos os ingredientes num tacho e levar a lume brando até o líquido começar a reduzir. Leva mais ou menos 30 minutos. Para testar a consistência do doce, coloca-se um pouco num prato arrefecido e com o dedo fazer uma estrada. Estará no ponto quando o doce não voltar a ocupar o espaço onde o dedo desenhou a estrada. Retiram-se as estrelas de anis e passa-se com a varinha mágica (este passo é opcional).
Colocar o doce em frascos esterilizados e fechar bem. Guardar em local escuro e fresco.



Ingredients:
700g of strawberries clean and cut in pieces
500 g of brown sugar
means lemon juice
2 star anise
100ml water

Place all ingredients in a saucepan and bring to simmer until the liquid begins to reduce. It takes about 30 minutes. To test the consistency of the jam, put some jam in a cool plate and with your finger to make a road. Will be done when the jam does not re-occupy the space where the finger drew the road. Remove the star anise and reduce it to a puree (this step is optional).
Place the jam in sterilized jars and close tightly. Keep in a cool dark place.

Tal como tantas de nós, fui mais uma das meninas que se juntou à iniciativa da Miss B e do seu blog "Arco-íris na cozinha".


Recebi uma  receita que me despertou o interesse e que os meus filhos adoraram! Fica delicioso, mas tal como me acontece sempre, improviso sempre, e acabei por fazer algumas alterações na receita.
Aqui fica a minha participação:


Pistachio and raspberry financiers

Ingredientes:

120g de manteiga
100g de pistachios (não usei por terem muito sal, substituí por amêndoa)
120g de açúcar em pó
50g de amêndoa ralada
50g de farinha
1 pitada de sal
4 claras de ovo
1 colher de chá de baunilha
framboesas

A receita manda derreter a manteiga numa frigideira até esta se tornar ligeiramente acastanhada e depois passa-se por um pano limpo e muito fino. Eu limitei-me a derreter a manteiga ligeiramente sem deixar ganhar cor.
Picam-se os pistachios (ou no meu caso as amêndoas) com o açúcar em pó até ficar como a farinha. Adiciona-se a amêndoa ralada, a farinha e a pitada de sal e mistura-se tudo bem numa tigela funda.
Batem-se ligeiramente as claras (não bater em castelo, apenas até formar espuma) e juntar à mistura anterior junto com a baunilha. Envolver bem e juntar a manteiga derretida.
Distribuem-se pelas forminhas de papel de queques, coloca-se uma framboesa ou uma amêndoa em cima e leva-se ao forno pré-aquecido a 160ºC durante cerca de 12 minutos.

Ingredients:

120g of butter
100g pistachio nuts (I used almonds)
120g icing sugar
50g ground almonds
50g flour
pinch of salt
4 egg whites, lightly beaten
1 tsp vanilla extract
raspberries

Put the butter in a medium pan set over a medium heat and cook, swirling the pan occasionally, until the butter turns a medium brown. Remove from the heat and pass through a fine sleeve into a small bowl (I just melted the butter without letting it brown).
Put the pistachio nuts (I used almonds) and icing sugar into a food processor and whizz until finely ground. Put the almonds, flour and salt into a medium bowl and then add the pistachio nut mixture.
Add the egg whites and the vanilla extract to the mixture and stir until evenly combined. Slowly add the wam butter, a little at a time, until well combined. Divide the financier batter evenly between the muffin paper cups and top each with a raspberry or an almond.
Bake for 12 minutes in a pre-heated oven at 160ºC.
