On summer days it's so hard for me to leave the house in the afternoon to go shopping. And since I only needed bread, I prefer to turn the oven on than leaving the house. And from my oven came this light and crispy that my children loved.

Ingredientes:
500g de farinha de trigo
350g de água tépida
1 pitada de sal
1 1/2 colher de chá de fermento desidratado

Deitar a farinha numa tigela funda, no centro deitar o fermento, o sal e a água.
Levar a forno pré-aquecido a 200ºC durante 20 minutos.

Rissóis de pescada e camarão / Hake and shrimp rissoles

Rissóis de pescada e camarão / Hake and shrimp rissoles

I had four slices of hake in the freezer and did not feel like making boiled fish, so I remembered to make these rissoles that my mother taught me when I was a little girl.
I made the double of this dough and yielded about 40 rissoles..

Ingredientes:
noz moscada
1 gema de ovo
sal
salsa
sumo de limão

Cozer a pescada e o camarão.
Bom apetite!

Ingredients:
4 slices of hake
1 cup peeled shrimp
2 tablespoons margarine
2 tablespoons flour
about 500ml of milk (I eyeball it because the amount of milk always varies)
nutmeg
1 egg yolk
salt
parsley
lemon juice

Bake hake and shrimp. Drain and shred the fish and cut the shrimp into small pieces.
Heat a pan with the margarine and when melted, add the flour. Stir well and let the flour cook, but be careful not to burn. Add milk gradually until a thick bechamel. Season with salt and nutmeg. Add the fish and shrimp, mix, add the egg yolk and stir. Cook for one minute. Add the parsley and a few drops of lemon juice. Let the custard cool before filling the dough rissoles.
Now just fill the rissoles dough, dip in egg and breadcrumbs and fry. Enjoy!

Almôndegas à moda da Inês e do Manuel / Meatballs a la Inês and Manuel

My kids love helping in the kitchen and this time they came before me with an apron and ready to work. I was going to make meatballs and they soon began to make suggestions! As férias de verão começaram! / Summer holidays has begun

As férias de verão começaram! / Summer holidays has begun
A escola acabou!

School is over! My daughter now goes to the 3rd grade now and my boy just ended the first step of his life. The primary school is finished and in September he will start fifth grade. It's with great pride that I write this, because despite all odds, my kids managed to finish another successful year.
Now it's time to rest, play, go out, go to the beach and .... play! Very much!
But the given knowledge transpires in their games and yesterday I found a skeleton made of magnets in my living room :)

For breakfast today I wanted to make a treat for my children and I made this recipe from the blog Full Bellies, Happy Kids. But instead of doing as pancakes, my son asked me to make waffles. They were heavenly! You cannot eat just one. Follow the recipe link and prepare for something magnificent!

After many attempts to make pizza crust, I finally managed to make a crust that to me is perfect. It's crispy on the edges and perfectly holds the filling. With this crust I made a vegetable calzone and a pizza with mushrooms, onions, broccoli and salami.
We love pizza, but the restaurant pizzas have too much fat and are extremely expensive. My kids asked me a pizza and a calzone and it was so. After this, I will think twice before ordering the next pizza :) I can say that this was the best calzone I've ever had! And as the dough is made from wholewheat flour, has the advantage of being somewhat more healthy.

Ingredientes:

Levar a forno pré-aquecido a 200ºC

Ingredients:

For the pizza dough
2 cups flour
1 cup wholewheat flour
2 teaspoons instant yeast
1 desert spoon olive oil
a pinch of fleur de sel
1 1/3 cups warm water
semolina

For the filling of 1 calzone:
2 tablespoons of tomato sauce
2 handfuls of spinach
4 mushrooms into quarters
2 strips of peppers diced
a few slices of onion
2 handfuls of shredded light mozzarella cheese

Add all the ingredients for the dough (except for the semolina) in the stand mixer bowl. Mix everything until you get a ball of dough. Flour the kitchen counter and knead the dough by hand. If the dough sticks to your hands add a little more flour.
Let rise for 45 minutes in warm, draft-free place.
Sprinkle the countertop with corn semolina and stretch half the dough into a circle. Place the circle on a pizza tray. Place 2 tablespoons of tomato sauce on one half of the dough, cover with spinach, mushrooms, onion and pepper. Sprinkle with mozzarella cheese. Fold dough in half and close the edges. Proceed similarly for the other half of the dough or to make a pizza. Bring to a preheated oven at 200 °C.

ADORAM!

Yes, this food was made thinking about my children :) Yes I will speak of them again! I know it's repetitive, but the truth is that I do all the food here at home is made thinking of them and in ways to present them with foods they like less.
My kids love meatballs! LOVE! But honestly, I didn't feel like eating meatballs with tomato sauce, I felt like something different (and no, I felt like Ferrero Rocher) :)
It was then that I remembered to make a meatball pie. To be lighter, these meatballs are baked in the oven instead of being fried in olive oil or oil.
This pie was promptly eaten by two hungry children with plenty of salad.

2 peitos de galinha
1 molho de salsa
4 colheres de sopa de queijo parmesão

Aquecer o forno a 180ºC.

Waffles salgadas / Savory waffles

Waffles salgadas / Savory waffles

Dia da Criança e pizza / Children's Day and pizza

Dia da Criança e pizza / Children's Day and pizza

Today here at home nobody does their homework, just do nothing and play all day .... A LOT! It is a day to play and roll on the floor with their parents!

Yesterday my children have reached a consensus and elected the meal for today's lunch.... PIZZA! :) My son's  favorite ingredients are bacon and broccoli, and my daughter are salami and banana, and of course the two will have extra, extra cheese! We took a long time and these pizzas were eaten on the balcony overlooking the Sintra mountains and the sea, which made the meal even more enjoyable!
