Os meus filhos adoram queijo mozzarella. Seja fresco, fatiado, derretido, em saladas, na massa, eles adoram!
Esta ideia surgiu quando eu me preparava para temperar umas azeitonas, mas como não as tinha, lembrei-me destas bolinhas deliciosas de mozzarells e, assim, nasceram estas pequenas delícias salgadas. As crianças devoraram o queijo e os adultos, que geralmente não ligam muito ao queijo mozzarella, também adoraram!

Colocar as bolinhas de queijo mozzarella numa tigela. Descascar e esmagar os dentes de alho e adicionar ao queijo. Adicionar também os oregão, o sal e a pimenta.
Comer na hora, mas fica melhor se deixarem repousar pelo menos 1 hora.

Ingredients:

Por vezes, ao abrir o frigorífico, deparo-me com restos de comida e embalagens que estão prestes a passar a validade. Como deitar fora não é opção, um dia destes fiz esta mousse com uma embalagem de natas quase no fim de validade, uns iogurtes na mesma situação e um pacote de bolachas que andava enjoado e ninguém as comia.
Tão simples de fazer e rápida, esta mousse será uma sobremesa à qual vou recorrer mais vezes. Ficou tão saborosa, que a minha filha repetiu, e ela raramente repete as sobremesas!

Ingredientes:
4 iogurtes gregos naturais
200ml de natas
2 colheres de sopa de açúcar
1 folha de gelatina
1 colher de chá de essência de baunilha
1 embalagem de Bolachas Mulata moída grosseiramente

Começa-se por colocar a folha de gelatina de molho em água fria e, quando estiver macia, aquecer num tachinho ou no microondas até ficar líquida.
Numa tigela batem-se as natas em chantili com o açúcar e adiciona-se o iogurte e a baunilha, envolvendo delicadamente. Junta-se a gelatina derretida e volta-se a envolver.
Numa taça média de servir ou em taças individuais, coloca-se uma pequena camada de mousse de iogurte e cobre-se com a bolacha moída. Repetir a operação até não haver mousse e terminar com bolacha moída. Decorar a gosto e levar ao congelador durante 30 minutos e está pronto a servir!


YOGURT MOUSSE WITH COOKIES

Ingredients:
4 Greek natural yoghurt

Start by placing the sheet gelatin in cold water, and when soft, warm in the microwave until liquid.
In a bowl beat the cream with the sugar to get whipped cream and add the vanilla and yogurt, gently mixing. Add the gelatin and mix again.
In a medium serving bowl or in individual bowls, spread a small layer of yogurt mousse and cover with the ground cookies. Repeat the operation until there's no more mousse and finish with ground cookies. Garnish to taste and place in the freezer for 30 minutes and is ready to serve!

Um destes dias encontrei esta receita num papelinho dentro de um caderno de receitas. Como tinha um restinho de coco a pedir para ser utilizado, decidi fazer este bolo. É tão saboroso, leve e com um toque ácido do glacé de limão. A prova disso é o facto do bolo ter desaparecido no dia em que foi feito.
Para além de ser bonito visualmente, o sabor do limão vai estimular as vossas papilas gustativas e comer só uma fatia, vai ser tarefa difícil!

One of these days I found this recipe in a note inside a notebook. I had some coconut begging to be used, so I decided to make this cake. It's so tasty, light and with a touch of acid from the lemon glaze. The proof is the fact that the cake have disappeared the day it was made.
In addition to being beautiful visually, the lemon flavor will stimulate your taste buds and eating just one slice, it's going to be difficult task.

Ingredientes:
1 chávena de açúcar
2 ovos
1/2 chávena de manteiga amolecida
raspa e sumo de 1 limão
1 1/2 chávena de farinha de trigo
1 colher de chá de fermento em pó
1/4 colher de chá de sal
1/2 chávena de leite
1/2 chávena de coco ralado

Glacé de limão:
3/4 chávena de açúcar em pó
2 colheres de chá de sumo de limão

Pré-aquecer o forno a 180ºC. Untar uma forma de bolo inglês com manteiga e polvilhar com pão ralado.
Bater o açúcar e a manteiga numa tigela. Adicionar os ovos, um de cada vez, batendo bem após cada adição. Junta-se o sumo e a raspa de limão.
Noutra tigela mistura-se a farinha, o fermento e o sal e adiciona-se à mistura de manteiga alternadamente com o leite, misturando até estar incorporada. Por último, junta-se o coco e mistura-se até se obter uma mistura uniforme. Colocar a massa na forma e levar ao forno durante cerca de 45 minutos ou até o palito sair limpo.
Quando estiver cozido, deixar arrefecer em cima de uma rede.
Entretanto faz-se o glacé de limão. Numa tigela pequena mistura o açúcar em pó com o limão até se obter uma mistura brilhante. Com um garfo, mergulha-se no glacé e rega-se o bolo formando linhas. Deixar o glacé solidificar e servir.


LEMON AND COCONUT CAKE

Ingredients:
1 cup of sugar
2 eggs
1/2 cup of softened butter
zest and juice of 1 lemon
1 1/2 cup all purpose flour
1 tsp baking powder
1/4 teaspoon salt
1/2 cup of milk
1/2 cup of unsweetened shredded coconut

Lemon Glaze:
3/4 cup icing sugar
2 teaspoons lemon juice

Pre-heat the oven to 180°C. Grease a cake tin with butter and sprinkle with breadcrumbs.
Beat sugar and butter in a bowl. Add the eggs, one at a time, beating well after each addition. Add the lemon zest and the juice.
In another bowl mix the flour, baking powder and salt and add it to the butter mixture alternately with the milk, mixing until incorporated. Finally, add the coconut and mix. Put the batter in the cake tin and bake for about 45 minutes or until a toothpick comes out clean.
When it is cooked, let it cool on a rack.
Meanwhile make the lemon glaze. In a small bowl mix the icing sugar with the lemon until the mixture is shiny. With a fork, dip it in the glaze and make lines on the cake. Let the icing harden and serve.

Esse canal é o 24Kitchen. Um dos meus programas preferidos é o "Doce Diário" apresentado pela Rachel Allen. Todos os bolos apresentados neste programa têm um aspecto delicioso e são na sua maioria muito fáceis de fazer.
Esta semana enquanto pensava que bolo iria fazer para comemorar o meu aniversário de casamento, lembrei-me deste programa e de um bolo que vi esta semana, que me ficou na ideia. É tão simples de fazer e o cheiro é tão bom, que temos de resistir e não comer o bolo assim que sai do forno. A cobertura é igualmente deliciosa e muito cremosa, com um sabor amanteigado, doce e com aroma a baunilha. O crocante de amêndoa é a decoração mais saborosa que eu já coloquei num bolo! Resumindo, este bolo é delicioso e fica lindo! Perfeito para uma comemoração especial!

One of my favorite shows is "Cake Diary" presented by Rachel Allen. All cakes featured in this program look delicious and the majority is very easy to make.
This week as I thought what cake I would make to celebrate my wedding anniversary, I remembered this program and a cake I saw this week, that stayed on my mind. It is so simple to make and the smell is so good, that we must control ourselfs and not eat the cake right out of the oven. The iccing is also delicious and very creamy with a buttery flavor, and a sweet aroma to vanilla. The crunchy almond is the tastiest decoration I've ever put on a cake! In short, this cake is delicious and looks beautiful! Perfect for a special celebration!


BOLO DE AMÊNDO CROCANTE

Para 12 pessoas

Ingredientes:

para o bolo

150 g de manteiga à temperatura ambiente
175 g de açúcar refinado
3 ovos grandes
150 g de farinha com fermento
1 colher de chá de fermento em pó
75 g de amêndoas moídas
2 colheres de chá de leite


para o crocante de amêndoa

óleo em spray para untar
100 g de açúcar granulado
100 g de amêndoas peladas inteiras


para a cobertura

225 g de manteiga à temperatura ambiente
450 g de açúcar em pó
1 colher de chá de extrato de baunilha


para os bolos
Pré-aquecer o forno a 180ºC. Untar duas formas de bolos 18 centímetros com um pouco de manteiga e cobrir as bases com papel manteiga.
Bater a manteiga e o açúcar até ficar leve e cremosa, em seguida, adicionar os ovos aos poucos, batendo bem entre cada adição. Peneirar a farinha e o fermento juntos, e adicionar à mistura de manteiga com as amêndoas moídas. Misture o leite.
Dividir igualmente pelas formas e assar durante 20 minutos.
Retire os bolos do forno quando eles estiverem prontos. Deixar arrefecer nas formas durante alguns minutos, em seguida, desenformar e deixar arrefecer numa rede.

Ingredients

for the cake

150 g butter
175 g caster sugar
3 large eggs
150 g self-raising flour
1 tsp baking powder
75 g ground almonds
2 tsp milk


for the almond brittle

spray vegetable oil, for greasing
100 g caster sugar
100 g unskinned whole almonds


for the almond butter icing

225 g butter
450 g icing sugar
1 tsp vanilla extract


for the cakes

Preheat the oven to 180ºC. Grease two 18cm cake tins with butter and line the bases with baking paper. 
Beat the butter and sugar together until light and creamy then gradually add the eggs, beating well between each addition. Sieve the flour and baking powder together then add to the butter mixture with the ground almonds. Stir in the milk. 
Divide equally between the prepared tins. Bake for 20 minutes.
Remove the cakes from the oven when they are ready. Leave to cool in the tins for a few minutes, then turn out and cool on a wire rack. 

for the almond brittle

While the cakes are baking, make the almond brittle. First, grease a baking sheet with the vegetable oil. Combine the sugar and almonds in a saucepan. Put over a medium-low heat until the sugar turns caramel colour, carefully rotating the pan until the almonds are covered – this will only take a few minutes. Very carefully pour the mixture onto the baking sheet to cool.
Take great care when making the caramel, because it reaches an extremely high temperature. Don't leave the saucepan unattended. 


for the icing
Beat the butter until soft then gradually beat in the icing sugar, using an electric mixer. Beat in the vanilla extract.

To assemble, slice both cakes horizontally so you have four layers. Spread the first layer with the butter icing and place the second layer on top, then repeat this operations with all layers. Spread the rest of the icing around the top and sides of the cake. 
Break the almond brittle and arrange on top of the cake.

O pequeno almoço preferido dos meus filhos é um delicioso prato de panquecas. Tento fazer a comida o mais saudável possível, por isso incluo farinhas integrais sempre que posso. É o caso destas panquecas. No caso da gordura, substituí a típica manteiga por óleo de coco que é mais saudável. Estas panquecas resultam muito bem e ninguém se vai lembrar que são saudáveis! Experimentem e vão ver que vão adorar!

The breakfast of choice for my kids is a delicious plate of pancakes. I try to make the food as healthy as possible, so I include fibers whenever I can. In this case, I replaced the typical butter for coconut oil which is healthier. These pancakes are very good and no one's going to remember that these pancekes are healthy! Make them and you will love it!


PANQUECAS INTEGRAIS

Ingrediente principal: Farinha de trigo integral, óleo de coco, ovos
Para 4 pessoas
Prato: Pequeno almoço
Tipo de cozinha- Cozinha saudável

Ingredientes:
1 copo de farinha de trigo sem fermento
1 copo de farinha integral
2 colheres de chá de fermento em pó
1/3 de açúcar em pó
2 ovos
1 1/2 copo de leite magro
70g de óleo de coco
1 pitada de flor de sal com pólen

Misturar os ingredientes secos numa tigela. Noutra tigela, misturar os ingredientes líquidos e deitar sobre os secos. Misturar.
Aquecer uma frigideira antiaderente de crepes em lume médio alto e deitar 1/4 de copo de cada vez. Cozinhar até aparecerem bolinhas. Virar a panqueca e deixar cozinhar durante 1 a 2 minutos. Repetir até acabar a massa.
Servir com xarope de agave, xarope de ácer, creme de chocolate, doce de fruta ou simplesmente com açúcar e canela.




WHOLMEAL PANCAKES
(Adapted from the book: Kitchen for those who don't have the time, Mafalda Pinto Leite)

Preparation time: 15 minutes
Difficulty: Easy

Main ingredient: whole wheat flour, coconut oil, eggs
For 4 people
Dish: Breakfast
Type of cuisine: Healthy cooking

Ingredients:
1 cup of wheat flour without yeast
1 cup of wholemeal flour
2 teaspoons baking powder
1/3 icing sugar
2 eggs
1 1/2 cup of skim milk
70 g of coconut oil
1 pinch of Fleur de Sel with pollen

Mix the dry ingredients in a bowl. In another bowl, mix the liquid ingredients and pour this mixture into the dry. Mix.
Heat a nonstick skillet over low medium high and pour 1/4 cup at a time. Cook until bubbles appear. Flip the pancake and cook for 1 to 2 minutes. Repeat until the batter ends.
Serve with agave syrup, maple syrup, chocolate cream, sweet fruit or simply with sugar and cinnamon.

Este livro de que vou falar e de onde tirei esta receita, foi uma das melhores aquisições que já fiz para a minha cozinha! Tem receitas fantásticas, ideais para a família, não tivesse ele sido escrito por uma mãe dedicada a cuidar da sua família. Estou a falar do livro "Receitas da Felicidade para Robôs de Cozinha" da Mariana Teixeira. Não, eu não tenho Bimby, nem Mycook, mas isso não me impede de adaptar as receitas do livro para o método tradicional.
Estas bolas de Berlim fizeram sucesso cá em casa, de tal forma que quando saíram do forno o meu filho atacou-as e comeu-as como se fossem pães de leite, pois eram tão fofos e aromáticos, que ele não resistiu a barrar com manteiga e rechear com fiambre! Já a minha filha pediu-me para rechear um com Nutella.
Mas o deleite veio quando experimentamos com o creme de caseiro de ovos, receita tirada também do mesmo livro. Claro que não têm o sabor das fritas, mas são tão fofinhas, saborosas e leves que nem vão sentir falta do sabor frito.

These Berliners were a success here at home, in such a way that when they were out of the oven my son attacked them and ate them as brioches, because they were so fluffy and aromatic, that he couldn't resist spreading butter and garnish with ham! My daughter asked me to fill with Nuttella.
But the delight came when we experienced with the homemade egg cream recipe taken from the same book. Of course it doesn't have the flavor of fried Breliners, but they're so fluffy, tasty and light that you won't even miss the fried flavor.


BOLAS DE BERLIM NO FORNO
(Adaptado do livro: Receitas da Felicidade para Robôs de Cozinha, Mariana Teixeira)

Tempo de preparação: 1h e 10 minutos
Dificuldade: Médio

Ingrediente principal: Farinha de trigo, ovos, manteiga, limão
Para 6 pessoas
Prato: Bolos
Tipo de cozinha- Pastelaria

Ingredientes:
50g de fermento de padeiro
3,5dl de leite
700g de farinha
1 ovo
2 gemas
100g de açúcar em pó
80g de manteiga
raspa de meio limão
essência de baunilha
açúcar em pó para polvilhar

recheio
100g de açúcar
500g de leite
50g de amido de milho
4 ovos
1 gema
1 vagem de baunilha

Dissolver o fermento em 2 dl de leite morno e adicionar a 100g de farinha.
Numa tigela grande adicionar os restantes ingredientes e juntar a mistura de fermento. Amassar numa superfície enfarinhada até se despegar das mãos. Coloca-se a massa numa tigela e tapa-se com película aderente de deixar repousar durante 30 minutos.
Moldam-se pequenas bolas de massa e colocam-se num tabuleiro forrado com papel vegetal. Tapam-se com um pano e deixa-se levedar durante uns minutos. Leva-se a cozer a 190ºC durante 15 a 20 minutos ou até ficarem douradas.
Retiram-se e deixam-se arrefecer. Entretanto faz-se o recheio.

Recheio:
Abre-se a vagem da baunilha e raspam-se as sementes e colocam-se todos os ingredientes num tacho. Deixa-se levantar fervura, mexendo sempre e quando espessar retirar do lume e descartar a vagem de baunilha.

Abrem-se as bolas com uma tesoura de cozinha e recheiam-se com o creme caseiro de ovos, ou então com um pouco de Nutella para os mais gulosos.

Preparation time: 1h 10 minutes

Main ingredient: wheat flour, eggs, butter, lemon
For 6 people
Dish: Cakes
Type of cuisine: Pastry

Ingredients:
50 g of yeast
3,5 dl of milk
700 g of flour
1 egg
2 egg yolks
100 g icing sugar
80 g of butter
zest of half a lemon
vanilla essence
powdered sugar for dusting

stuffing:
100 g of sugar
500 g of milk
50 g cornstarch
4 eggs
1 egg yolk
1 vanilla bean

Dissolve the yeast in 2 dl of warm milk and add 100 g of flour.
In a large bowl add the remaining ingredients and add the yeast mixture. Knead on a floured surface until the dough doesn't stick to your hands. Put the dough in a bowl and cover it with cling film and let it rest for 30 minutes.
Shape small balls of dough and place on a tray lined with parchment paper. Cover with a cloth and let it rise for a few minutes. Bake at 190ºC for 15 to 20 minutes or until golden.
Remove and leave to cool.

Filling:
Open the vanilla pod and scrape out the seeds and place all ingredients in a pot. Let it boil, stirring constantly and when it thickens remove from heat and discard the vanilla pod.

Open the Berliners with a kitchen scissors and fill with homemade cream of eggs, or with a bit of Nutella if you want to please your sweet tooth.

Muito saudável, fácil de fazer e rápido, pois não tem de levedar, este pão é uma sugestão deliciosa para o vosso pequeno almoço. Com manteiga, doce ou simplesmente sem nada, vai certamente ser um sucesso!



Whenever my family asks me bread for breakfast, but I don't have it at home or I can't go shopping, I make this quick bread that's promptly eaten fresh out of the oven. Very healthy, easy to make and quick, because it doesn't have to rise, this bread is a delicious suggestion for your breakfast. With butter, jam or simple, will surely be a success!


PÃO DE ESPELTA, FRUTOS SECOS E CARDAMOMO

Ingredientes:
100 ml de leite
150 ml de iogurte grego natural
100 ml de agave
50 g de passas
50 g de tâmaras descaroçadas e cortadas em pedaços
70g de pinhões
50 g de amendoins torrados e partidos em pedaços
50 g de aveia
150 g de farinha integral
180 g de farinha de espelta
1 pitada de cardamomo moído
2 colheres de sopa de sementes de linhaça
2 colheres de sopa de sementes de papoila
2 colheres de sopa de sementes de girassol
2 colheres de sopa de pevides de abóbora
1 colher de sal com pólen
1 1\2 colher de chá de fermento em pó
1 1\2 colher de chá de bicarbonato de sódio

Pré-aquecer o forno a 180ºC. Forrar um tabuleiro de ir ao forno com papel vegetal. 
Numa tigela funda misturar o leite, o iogurte e o xarope de agave. Noutra tigela misturar todos os ingredientes secos e juntar à mistura do leite, amassando até ficar tudo incorporado.
Formar um cilindro grosso com a massa e colocar no tabuleiro de ir ao forno. Pincelar com água e polvilhar com sementes a gosto.
Levar ao forno durante 45 minutos. Quando fora do forno, deixar repousar 5 minutos (se conseguirem!) antes de cortar.

Ingredients:
100 ml milk
150 ml natural Greek yogurt
100 ml agave syrup
50 g raisins
50 g pitted dates, stoned and cut into pieces
70 g of pine nuts
50 g roasted peanuts and broken into pieces
50 g of oats
150 g wholemeal flour
180 g spelt flour
1 pinch of ground cardamom
2 tablespoons flax seeds
2 tbsp poppy seeds
2 tbsp sunflower seeds
2 tablespoons pumpkin seeds
1 tablespoon of salt with pollen
1 1\2 tsp baking powder
1 1\2 tsp bicarbonate of soda

Pre-heat the oven to 180°C. Line a baking tray with parchment paper.
In a deep bowl mix milk, yogurt and agave syrup. In another bowl mix all dry ingredients and add to the milk mixture, kneading until it is all incorporated.
Form a thick cylinder with the dough and place onto baking tray. Brush with water and sprinkle with seeds to taste.
Bake for 45 minutes. When out of the oven, let stand for 5 minutes (if you can resist!) before cutting.

São várias as razões pelas quais nós devemos incluir a courgette na nossa dieta diária. Uma chávena desta fruta da família das abóboras, tem 36 calorias e fornece 10% da quantidade diária recomendada de fibras, as quais ajudam a digestão, previnem a obstipação e ajuda a manter um baixo nível de açúcar no sangue.
Outra das propriedades da courgette é o facto de ajudar a baixar o nível de colesterol do sangue devido ao seu elevado nível de fibras. Os seus niveis elevados de magnésio e potássio ajudam a diminuir a hipertensão.
A courgette fornece também 19% da quantidade diária recomendada de manganês, que ajuda a metabolizar as proteínas e os hidratos de carbono.
Estas são apenas algumas das propriedades da courgette, por isso faz todo o sentido usá-la, pricipalmente por ser tão versátil (sopas, saladas, recheadas, grelhadas, etc).
Estas panquecas serviram para acompanhar um peixe grelhado, mas podem ser servidas como entrada acompanhadas do molho.

There are several reasons why we should include zucchini in our daily diet. A cup has 36 calories and provides 10% of the recommended daily amount of fiber intake, which help digestion, prevents constipation and helps to maintain a low blood sugar level.
Another of the properties of the zucchini is the fact that helps to lower cholesterol levels due to it's high level of fiber. Their high levels of magnesium and potassium help lower high blood pressure.
The courgette also provides 19% of the recommended daily quantity of manganese intake, which helps metabolize proteins and carbohydrates.
These are just some of the properties of courgette, so it makes sense to use it, especially  because it is so versatile (soups, salads, stuffed, grilled, etc).
These pancakes accompanied a grilled fish, but can be served as a starter with the sauce.

Ingredientes:

Para as panquecas:
1 courgette ralada média espremida (cerca de 2 chávenas)
Salsa picada
Cebolinho picado
3 colheres de sopa de farinha
1 ovo
sal e pimenta, a gosto

Para o molho:
2 colheres de sopa de molho de soja
1 colher de sopa de vinagre de arroz
1 colher de chá de açúcar
1 colher de chá de óleo de sésamo
1 colher de chá de hot sweet chili sauce

Misturar os ingredientes do molho e reservar no frigorífico.
Numa tigela, misturar a courgette ralada e espremida, a salsa picada, o cebolinho, a farinha, o ovo, o sal e a pimenta.
Pincelar uma frigideira de panquecas com manteiga e deitar colheradas de massa. Deixar cozinhar durante 3 a 4 minutos de cada lado, em lume médio.
Sirvir com o molho.

Ingredients:

For the pancakes:
1 medium grated and squeezed zucchini (about 2 cups)
chopped parsley to taste
chopped chives to taste
3 tbsp flour
1 egg
salt and pepper, to taste

For the dipping sauce:
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sugar
1 tsp sesame oil
1 tsp hot sweet chili sauce

Mix together the dipping sauce and set it aside in the fridge.
In a  bowl, combine grated zucchini, parsley, chives, flour, egg, salt and pepper.
Brush a non stick pan with butter.  Over medium high heat cook tablespoons of batter at a time for about 3-4 minutes.
Serve with the dipping sauce.

Os meus filhos adoram este tipo de tartes. São tão fáceis de fazer e tão versáteis, que, mantendo a base da tarte, podemos fazer com o quer que seja que tivermos no frigorífico, sendo por isso, uma excelente forma de aproveitar aqueles restos de comida e vegetais que vão enchendo o nosso frigorífico e congelador.
Além disso é tão rápida e fácil de fazer, excelente para um pic-nic ou para um almoço na praia.

My kids love this kind of pies. It's so easy to make and so versatile, that you can make it with whatever you have in the fridge, so it's a great way to use those leftovers and vegetables that are filling your fridge and freezer.
In addition it is so quick and easy to make, great for a picnic or a lunch on the beach.

Ingredientes:
1 base de massa folhada
1 embalagem de natas de soja
4 ovos
1 lata de 8 salsichas
1 molho de espinafres
azeite
1 dente de alho
queijo mozzarela 
sal e pimenta a gosto

Pré-aquecer o forno a 200ºC.
Começa-se colocar a base de massa folhada na tarteira, sem tirar o papel vegetal que a envolve. Desta forma é mais fácil de desenformar e de lavar a tarteira.
Numa frigideira coloca-se um fio de azeite e o dente de alho picado. De seguida coloca-se o molho de espinafres, tempera-se com sal e pimenta e deixa-se cozinhar até as folhas dos espinafres murcharem.
Entretanto cortam-se as salsichas em rodelas e colocam-se na tarteira forrada com a massa folhada. Colocam-se por cima os espinafres e um pouco de queijo mozzarela ralado.
Numa tigela batem-se as natas de soja com os ovos, tempera-se com sal e pimenta e deita-se por cima dos espinafres e salsichas. Polvilha-se com um pouco de queijo ralado e oregãos e leva-se ao forno durante cerca de 20 minutos ou até ficar dourada.

Ingredients:
1 round puff pastry sheet
250ml of soy cream
4 eggs
1 can of 8 hot dog sausages
1 handfull of spinach
olive oil
1 clove of garlic
mozzarela cheese
salt and pepper to taste

Preheat oven to 200ºC.
Start by lining the pie pan with the puff pastry, without taking the parchment paper that covers the puff pastry sheet. This way is easier to unmold and wash the pie pan.
In a skillet put a dash of olive oil and the chopped garlic clove. Then add the spinach, season with salt and pepper and let it cook until wilted.
Meanwhile cut the sausages into slices and place in pie pan lined with the puff pastry. Add the spinach and a little of grated mozzarella cheese.
In a bowl beat the eggs with soy cream, season with salt and pepper and pour over the spinach and sausages. Sprinkle with a little of grated cheese and oregano and bake for about 20 minutes or until golden.

São poucos os bolos que agradam à minha filha, e o bolo de chocolate é um deles. Mas tem de ser bem fofinho e de ter um creme bem achocolatado!
Um destes dias "passeava" eu pelo meu livro de pastelaria preferido "Le Grand Livre Marabout de la Pâtisserie Facile" e reparei num papelinho a marcar a receita deste bolo. Já há algum tempo que ando para o fazer e desta foi de vez. E não me arrependi! Delicioso, fofinho e o creme que o cobre é muito suave e sabe bem a chocolate.
Experimentem e vão ver que vão adorar este bolo!

There are few the cakes that appeal to my daughter's taste, and the chocolate cake is one of them. But it must be very fluffy and have a chocolaty topping!
One of these days I was reading my favorite pastry book "Le Grand Livre Marabout de la Pâtisserie Facile" and noticed a note to check the recipe of this cake. For some time now I've been wanting to bake this cake and this was the time. And I  haven't regretted it! Delicious, fluffy and the topping is so soft and chocolaty just like we love it.
Try it and you'll see you'll love this cake!



Ingredientes:
125g de manteiga amolecida
1 colher de chá de essência de baunilha
275g de açúcar em pó
2 ovos
200g de farinha com fermento
50g de cacau em pó
160ml de água

para o glacé de chocolate:
90g de chocolate negro
30g de manteiga
160g de açúcar em pó
2 colheres de sopa de água quente
2 colheres de sopa de cacau em pó

Pré-aquecer o forno a 180ºC. Untar uma forma com 20cm de diâmetro, forrar com papel vegetal e polvilhar com cacau em pó.
Numa batedeira bater a manteiga, o extracto de baunilha, o açúcar em pó, os ovos, a farinha, o cacau e a água durante 3 minutos. Deitar a massa dentro da forma forrada e untada e levar ao forno durante cerca de 45 minutos. Quando estiver cozido, retirar do forno e deixar repousar na forma durante 5 minutos. Após os 5 minutos, desenformar e deixar arrefecer numa rede.
Entretanto fazer a cobertura. Derreter o chocolate e a manteiga em banho maria, incorporar progressivamente o açúcar em pó, a água quente e o cacau em pó. Mexer até obter um creme sedoso.
Cobrir a parte de cima do bolo com o creme de chocolate e deixar arrefecer totalmente.


Ingredients:
125 g softened butter
1 teaspoon vanilla essence
275 g icing sugar
2 eggs
200 g self-raising flour
50 g cocoa powder
water 160ml

for the chocolate glaze:
90 g dark chocolate
30 g of butter
160 g icing sugar
2 tbsp hot water
2 tbsp cocoa powder

Pre-heat the oven to 180° C. Grease a 20 cm diameter baking tray and line with parchment paper and sprinkle with cocoa powder.
In an electric mixer mix the butter, vanilla extract, icing sugar, eggs, flour, cocoa and water for 3 minutes. Pour the batter into the greased and lined baking tray and bake for about 45 minutes. Remove from the oven and allow to stand in the baking tray during 5 minutes. After the 5 minutes, unmold and let cool on a wire rack.
Meanwhile, make the topping. Melt the chocolate and butter in water bath, gradually incorporate the icing sugar, hot water and cocoa powder. Stir until you get a silky cream.
Cover the top of the cake with the chocolate cream and leave to cool completely.

Esta era uma comida que eu odiava quando era miúda! Como eu detestava qualquer que fosse o peixe no molho do escabeche... E desde que me casei que nunca fiz, porque sabia que não gostava. Curiosamente, este Verão no Algarve, o meu filho, que adora comer e experimentar sabores novos, questionou-me sobre o que eram sardinhas de escabeche. Eu expliquei em que consistia, e a ideia ficou, estranhamente, a matutar-me na cabeça! Quando voltei de férias, vi umas sardinhas lindas e fresquinhas no super-mercado e num momento de impulsividade, comprei as ditas sardinhas. Com umas cebolas muito sumarentas e uns tomates bem maduros, lá fiz as sardinhas de escabeche.
Não percebi bem porquê, mas a conversa com o meu filho aguçou-me o apetite por sardinhas de escabeche, e eu na hora de comer deliciei-me! Pois... parece que já gosto de sardinhas de escabeche! Parece que é mesmo verdade que os gostos mudam à medida que ganhamos idade.
Deliciosas quando comidas frias, estas sardinhas são um verdadeiro petisco para um dia quente de Verão, acompanhadas com um bom vinho!

This was a food I hated when I was a little girl! How I hated whatever was the fish in that pickled sauce ... And since I got married I never made it, because I knew I didn't like it. Interestingly, this summer in Algarve, my son, who loves to eat and try new flavors, questioned me on what was pickled sardines. I explained what it was, and the idea was, strangely, coming to my head the foloowing days! When I returned from vacation, I saw beautiful and fresh sardines at the supermarket and in a moment of impulsiveness, I bought the sardines. With very juicy onions and very ripe tomatoes, I made pickled sardines.
Not clear why, but the conversation with my son sharpened my appetite for pickled sardines, and when I ate it, it seemed the most delicious food in the planet! Well ... it seems that I like pickled sardines! It also seems that it is true that tastes change as we age.
Delicious when eaten cold, these sardines are a real tasty treat for a hot summer day, accompanied with a good wine!


Ingredientes:

8 sardinhas
3 cebolas médias
2 tomates médios bem maduros
6 dentes de alho
1 copo de vinho branco
3 colheres de sopa de azeite
1/2 copo de vinagre
sal
pimenta
1 colher de chá de colorau
1 pitada de pimenta caiena
3 folhas de louro

Arranjam-se as sardinhas, tirando a cabeça, guelras, tripas e escamas, de forma a ficar como na foto abaixo:


Tapam-se e guardam-se no frigorífico. 
Numa frigideira larga coloca-se o azeite e, quando este estiver quente junta-se a cebola cortada em rodelas, o alho picado e o louro. Quando a cebola estiver translúcida junta-se o tomate e o vinho. Deixa-se cozinhar em lume médio até a cebola estar macia.
Nesta altura juntam-se as sardinhas e tempera-se com o sal, a pimenta, o colorau e a pimenta caiena e tapa-se a frigideira. Quando as sardinhas estiverem cozinhadas retiram-se do molho e colocam-se numa travessa funda. Adiciona-se o vinagre ao molho e deixa-se ferver durante 5 minutos em lume médio. Após este tempo deita-se o molho em cima das sardinhas e guarda-se no frigorífico durante umas horas.
Servir frio em cima de uma fatia de pão alentejano com bastante molho.



Ingredients:

8 sardines
3 medium onions
2 medium ripe tomatoes
6 cloves of garlic
1 cup of white wine
3 tbsp olive oil
1/2 cup of vinegar
Salt
pepper
1 teaspoon of paprika
1 pinch of cayenne pepper
3 bay leaves

Arrange the sardines, taking the head, gills, guts and scales, as pictured below:



Cover and keep in the refrigerator.
In a wide skillet place the olive oil and, when it's hot add the onion cut into slices, the chopped garlic and the bay leaf. When the onion is translucent add the tomatoes, peeled and cut into small pieces and the wine. Let it cook on medium heat until the onion is soft.
At this point add the sardines and season with the salt, pepper, paprika and cayenne pepper and cover the skillet. When the sardines are cooked remove from the sauce and place in a deep serving tray. Add the vinegar to the sauce and let it boil for 5 minutes on medium heat. Pour the sauce on top of sardines and put in the refrigerator for a few hours.
Serve cold on top of a slice of bread with plenty of sauce.

O pêssego é uma das minhas frutas preferidas, por isso aproveito o Verão para comer esta fruta de diversas maneiras. Aproveitei o facto de ter muitos pêssegos em casa para fazer este crumble, que foi feito meio a olho. Mas saiu perfeito! Eu adoro comer ainda quente, acabadinho de sair do forno com uma colher de natas ácidas, mas os meus filhos preferem esta sobremesa com uma colher de gelado de doce de leite ou de baunilha.
Nesta sobremesa, a bana entra como factor de equilíbrio para compensar a acidez do pêssego quando cozinha. Além disso, desta forma não é necessário adicionar tanto açúcar, conferindo um sabor doce.
Na cobertura pode-se ser criativo e em vez de amêndoas, podem substituir por nozes, pistácios, pinhão ou também por aveia, sementes de abóbora, de girassol ou linhaça. Deixem-se levar pela imaginação e experimentem!

Peach is one of my favorite fruits, so I try eat this fruit in a variety of ways. I had so many many peaches at home so I improvised this crumble. It came out perfect! I love to eat it hot, just out of the oven with a scoop of sour cream, but my kids prefer this dessert with a scoop of dulce de leche ice cream or vanilla.
In this dessert, the banana enters as a factor of balance to counteract the acidity of the peach when cooked. In addition, you don't need to add as much sugar, giving a sweeter taste to the fruit.
For the topping you can be creative and instead of almonds, you may replace it with walnuts, pistachios , pine nuts or also by oats, pumpkin seeds, sunflower seeds or flaxseeds. Let yourself be carried away by your imagination and try it!


Ingredientes:
2 nectarinas
2 pêssegos vermelhos
2 pêssegos de roer
1 banana média madura
1 colher de sopa de açúcar mascavado
1 colher de chá de farinha Maizena
1 colher de chá de essência de baunilha

para a cobertura:
120g de farinha
1 colher de chá de fermento em pó
80 de margarina ou manteiga fria
80g de amêndoa picada grosseiramente
80g de açúcar mascavado

Pré-aquecer o forno a 200ºC.
Descascam-se os pêssegos e cortam-se em pedaços. Procede-se da mesma forma com a banana. Colocam-se as frutas num tabuleiro de ir ao forno e polvilha-se com o açúcar, a farinha Maizena e a baunilha. Envolve-se bem e reserva-se.
Numa tigela larga, misturam-se com as pontas dos dedos os ingredientes da cobertura até se obter uma mistura tipo areia e cobre-se a fruta. Não é preciso pressionar a cobertura, basta cobrir a fruta de forma irregular.
Levar ao forno durante 30 minutos. Após esse tempo, retirar do forno e deixar repousar durante 5 minutos para a cobertura solidificar.


Ingredients:
2 nectarines
2 red peaches
2 yellow peaches
1 medium ripe banana
1 tablespoon brown sugar
1 teaspoon cornstarch
1 teaspoon vanilla essence

for the topping:
120g of all purpose flour
1 teaspoon baking powder
80 of cold butter or margarine
80 g of roughly chopped almond
80 g brown sugar

Pre-heat the oven to 200ºC.
Peel the peaches and cut into pieces. Proceed the same way with the banana. Place the fruit on a baking tray and sprinkle with the sugar, cornstarch and vanilla. Mix and reserve.
In a large bowl, mix with your fingertips the topping ingredients until you get a mixture like sand and cover the fruit. It's not necessary to press the topping with your hands, just cover the fruit.
Bake for 30 minutes. After this time, remove from the oven and allow to stand for 5 minutes to solidify.

As férias acabaram e a vida diária volta ao ritmo normal. Isto significa que mais receitas deliciosas vão chegar ao blog! E são tantas em lista de espera! Sim, porque apesar do blog ter estado num estado de estivação, a cozinha funcionou todos os dias durante as férias. Umas salgadas e outras doces, mas todas deliciosas e aprovadíssimas pelos meus críticos culinários :-)

Para quem acompanha a página do Facebook deste blog, soube que durante o mês de Julho houve algumas novidades! E todas boas! A primeira é que este blog passou a ser um blog recomendado pelo 24Kitchen, o que me deixou extremamente feliz! A segunda novidade tem a ver com o facto da página do Facebook d´As Coisas da Mãe Sofia ter ultrapassado os 2000 seguidores. Para comemorar estas novidades deliciosas, foram partilhadas no Facebook algumas receitas bem docinhas. Espreitem que não se vão arrepender!

Mas agora passemos à receita! O que fazer com os restos de bife de atum?! Deitar fora está fora de questão! Nos tempos que correm, tudo se aproveita e temos de ser criativos para reutilizar as sobras de comida.
Um dia destes, sobrou um pouco de bife de atum e eu resolvi fazer umas pataniscas para acompanhar a sopa do jantar. São simples e rápidas de fazer e ficaram tão saborosas que não sobrou nada! Já tinha feito com atum de lata, mas com os restos do bife de atum ficou muito mais saboroso.

But now lets move on to the recipe! What to do with the leftovers of tuna steak?! Throwing out is out of the question! These days, every leftover has to be kept and we have to be creative to reuse the leftovers.
One of these days, I made tuna steaks but they were so big that we didn't eat everything, so I decided to make tuna patties to eat with soup for dinner. Are so simple and quick to make and were so tasty that there was none left! I have already made with canned tuna, but with the leftovers of the tuna steak was tastier.




Ingredientes:
175g de bife de atum cozinhado desfeito em lascas
100g de farinha
salsa picada
1 cebola pequena picada
1 dente de alho picado
2 ovos médios
1/4 de chávena de cerveja
sal e pimenta a gosto
óleo

Numa tigela colocar a farinha, os ovos, a cerveja o sal e a pimenta e misturar. De seguida adiciona-se a cebola, o alho, a salsa e o atum e envolve-se.
Coloca-se o óleo a aquecer num frigideira e quando este estiver quente, deita-se o polme em colheradas e deixa-se fritar até a patanisca ficar dourada. Vira-se e deixa-se fritar do outro lado, também até ficar dourada. Retira-se do óleo e escorre-se em papel absorvente.

Ingredients:
175 g of tuna steak cooked and broken into flakes
100 g of all purpose flour
chopped parsley
1 small onion chopped
1 clove of garlic chopped
2 medium eggs
1/4 cup of beer
salt and pepper to taste

In a bowl place the flour, eggs, salt and pepper and mix. Then add the onion, the garlic, the parsley and the tuna and mix.

Heat the oil in a frying pan and when it is hot, pour in the batter in large spoonfuls and fry until the pattie is golden. Turn and fry the other side until golden, too. Remove from oil and drain on absorbent paper.
