Passei anos a ver receitas com pepitas de caramelo, pepitas de manteiga de amendoim, pepitas de chocolate branco e com as pepitas de chocolate semi-amargo. Infelizmente, no mercado nacional, apenas se encontra à venda as pepitas de chocolate semi-amargo.
Os meus filhos muito me pediam para encontrar umas pepitas diferentes do habitual, e eu até procurei saber como poderia comprar online, mas saía tão caro que acabava sempre por desistir!
Finalmente, esta semana, descobri uma loja em Lisboa que vende as famosas pepitas de caramelo, de manteiga de amendoim e de chocolate branco! Fiquei tão contente! Sim!, eu fico contente com coisas assim!  E depressa dei um pulinho a Lisboa para procurar a loja e saí de lá uma cliente muito feliz e satisfeita por finalmente ter encontrado o que procurava há anos!
O problema foi saber por onde começar! Enquanto vinha sentada no metro, a minha mente fervilhava de ideias! Faria eu umas bolachas?! Um bolo? Muffins? Tanta ideia e tanta dificuldade em decidir!
Até que ontem, enquanto vagueava pelas receitas da Nigella Lawson, encontrei esta receita de muffins de banana com pepitas de caramelo. São deliciosos! Fofos, leves e o sabor destas pepitas dão um sabor muito especial a estes muffins. Cada vez que se morde uma pepita de caramelo há uma explosão de sabor na nossa boca que eleva estes muffins a um nível muito superior!


I spent years watching recipes with butterscotch morsels, peanut butter chips, chocolate chips and white chocolate chips. Unfortunately, in the national market, we only find the chocolate chips.
My kids asked me to search different chips, and I even searches how I could buy online, but it was so expensive that always ended up quitting!
Finally, this week, I found a shop in Lisbon that sells the famous butterscotch morsels, peanut butter and white chocolate! I was so happy! Yeah, things like that makes me happy! So I  made a quick visit to Lisbon to search for the store and walked out a very happy customer and glad to have finally found what I was looking for for years!
The problem was knowing where to start! As I was sitting on the subway, my mind buzzed with ideas! Would I make some cookies?! A cake? Muffins? So many ideas and it was so hard to decide!
Until yesterday, while wandering through Nigella Lawson's recipes, I found this recipe for banana muffins with butterscotch morsels. They are delicious! Fluffy, light and the flavor of these chips give a very special flavor to these muffins. Each time you bite a butterscotch chip there is an explosion of flavor in our mouths that raises these muffins to a much higher level!


Ingredientes:
3 bananas muito maduras
125ml de óleo vegetal
2 ovos
250g de farinha
80g de açúcar
1/2 colher de chá de bicarbonato de sódio
1 colher de chá de fermento
100g de pepitas de caramelo

Forrar  as formas de muffins com formas papel e reservar. Pré-aquecer o forno a 180ºC.
Bater ligeiramente o óleo com os ovos e reservar. Descascar as bananas e esmagar com um garfo.
Numa tigela juntar a farinha, o açúcar, o bicarbonato de sódio e o fermento e misturar. Juntar as bananas esmagadas e a mistura de óleo e ovos e mexer. Juntar as pepitas de caramelo.
Dividir a massa pelas formas de muffins e levar ao forno durante 20 minutos.



Ingredients:
3 very ripe bananas
125ml vegetable oil
2 eggs
250g flour
80g sugar
1/2 teaspoon baking soda
1 teaspoon of baking powder
100g butterscotch chips

Line a muffins baking pan with muffin papers and set aside. Preheat oven to 180 º C.
Lightly mix the oil with the eggs and set aside. Peel the bananas and mash with a fork.
In a bowl add the flour, sugar, baking soda, baking powder and mix. Add the mashed bananas and the mixture of oil and eggs and mix. Add the butterscotch chips.
Place equal quantities of dough in the muffin tins and bake for 20 minutes.

Com o mau tempo que tem estado só nos apetece uma comida quentinha e reconfortante. Esta semana tenho tido vontade de provar sabores de outros países exóticos. Esta manhã a minha mente foi parar à Tailândia e depois de ter pesquisado como fazer algo delicioso com os sabores característicos deste país, acabei por fazer esta sopa que ficou deliciosamente picante!
Tão simples de fazer, delicioso, muito rápida de fazer, cheia de legumes frescos, com o aroma delicioso do marisco, ligeiramente picante e com umas cores lindas! Experimentem que vale a pena! Fiquem agora com as fotos e com a receita!

With the bad weather that has been going on I feel like eating warm and comforting food. This week I had wanted to try exotic flavors from other countries. This morning my mind flew to Thailand and after researching how to make something delicious with the flavors of this country, I ended up making this soup that was deliciously spicy!
So simple to make, delicious, very quick to make, full of fresh vegetables, with the delicious aroma of seafood, slightly spicy and with some beautiful colors! Try it! I'll leave you now with the photos and the recipe!



Ingredientes:

para o caldo de galinha:
1/4 de galinha
1 cenoura
1 cebola
1 pedaço de gengibre
sal e pimenta qb
4 dentes de alho
1,5l de água

para a sopa:
1,5L de caldo de galinha
10 camarões
1 dente de alho picado finamente
1/4 chávena de sumo de lima
3 colheres de sopa de molho de peixe
3 colheres de sopa de açúcar mascavado
2 malaguetas
120g de cogumelos shiitake
2 ovos, levemente batidos
125g de rice noodles
4 couves pak choi
amendoins torrados
coentros picados
cebolinho
gomos de lima para decorar


Para o caldo de galinha colocar todos os ingredientes numa panela de pressão e cozer durante 20 minutos.  Enquanto isso, descascar os camarões (reservar as cascas e cabeças ), retirar a tripa e reservar. Ao fim desse tempo coar o líquido através de um passador.
Ferver o caldo com as cascas e cabeças do camarão em lume brando durante 10 minutos. Coar os sólidos do caldo .Levar de novo ao lume e adicionar o sumo de lima, o molho de peixe, 1 colher de sopa de cebolinho picado, a couve, o açúcar, 1 malagueta (sem sementes) cortada em juliana fina, o alho e os cogumelos cortados em fatias. Cozinhar durante 10 minutos.
Entretanto ferver 2 litros de água e juntar os rice noodles. Esperar 4 minutos. Depois disso escorrer os noodles e colocar um montinho em cada prato.
Acrecentar o camarão ao caldo da sopa e cozinhar durante 3 minutos. Bater ligeiramente os ovos e mexendo sempre, deitar os ovos em fio.
Deitar a sopa sobre a massa e decorar com os coentros picados, a malagueta cortada em rodelas finas, o amendoim, cebolinho picado e um gomo de lima.



Ingredients:

for chicken broth:
1/4 chicken
1 carrot
1 onion
1 piece of ginger
salt and pepper
4 cloves of garlic
1,5 l of water

for the soup:
1,5 liters of chicken stock
10 shrimps
1 clove garlic, finely chopped
1/4 cup of lime juice
3 tablespoons of fish sauce
3 tablespoons brown sugar
2 chillies
120g shiitake mushrooms
2 eggs, lightly beaten
125g rice noodles
4 cabbage pak choi
roasted peanuts
chopped coriander
chive
lime wedges for garnish


For chicken broth place all ingredients in a pressure cooker and cook for 20 minutes. Meanwhile, peel the shrimps (reserving the shells and heads), remove the gut and reserve. After this time strain the liquid through a sieve.
Boil the broth with shrimp shells and heads on low heat for 10 minutes. Strain the solids from the broth. Boil again and add the lime juice, fish sauce, 1 tablespoon of chopped chives, cabbage, sugar, 1 chili (without the seeds) cut into thin julienne, garlic and sliced ​​mushrooms. Cook for 10 minutes.
Meanwhile boil 2 liters of water and add the rice noodles. Wait 4 minutes. After that drain the noodles and place it on each plate.
Add the shrimp to the soup and cook for 3 minutes. Stirring constantly, slowly pour the eggs.
Pour the soup over the pasta and garnish with chopped coriander, chili thinly sliced​​, peanuts, chopped chives and a slice of lime.

Quando fiz este roscón de reyes, sobrou-me metade de um bolo. Para não se estragar acabei por o congelar. Há uns dias vi esta receita no blog Coco&Baunilha e decidi fazê-la com o roscón de reyes. Fiz algumas alterações e ficou delicioso! Fica aqui a minha versão deste pudim, que vale bem a pena experimentar, nem que seja com pão. Fica com uma textura cremosa com os pedacinhos de pinhões e nozes que decoravam o roscón de reyes.

When I made this roscón de reyes, I ended up with half a cake. To prevent from wasting it I froze it. A few days ago I saw this recipe on the blog Coconut & Vanilla and decided to make it with the leftover of the roscón de reyes. I made some changes and it was delicious! Here is my version of this pudding, which is well worth experiencing, even if it is with bread. It has a creamy texture and the little bits of the pine nuts and walnuts that decorated the roscón de reyes give it a little crunch.


Ingredientes:
1 litro de leite
casca de 1 limão
1 pau de canela
1/2 roscón de reyes de chocolate (não retirar os frutos secos que decoram o bolo)
4 ovos
130g de açúcar
1 colher de chá de baunilha
3 colheres de sopa de licor de cacau
caramelo

Aquecer o leite com a casca de limão e a canela. Colocar o roscón de reyes, cortado em fatias, dentro do leite e deixar repousar até absorver todo o leite. Nessa altura retirar a casca do limão, o pau de canela e triturar com a varinha mágica. Os frutos secos irão ficar em pedacinhos o que vai dar uma textura muito agradável ao pudim.
Juntar os ovos, o açúcar, a baunilha e o licor de cacau e mexer. Deitar esta mistura num pirex untado com caramelo e levar a forno aquecido a 180ºC durante 1 hora.



Ingredients:
1 liter of milk
1 lemon peel
1 cinnamon stick
1/2 chocolate roscón de reyes (do not remove the nuts that decorate the cake)
4 eggs
130g sugar
1 teaspoon of vanilla extract
3 tablespoons of cocoa liquor
caramel

Heat the milk with the lemon peel and cinnamon. Place roscón de reyes, sliced​​, inside the milk and let stand until it absorbed all the milk. By then remove the lemon peel, cinnamon stick and grind with the immersion blender. The nuts will be in small pieces which will give a very nice texture to the pudding.
Add the eggs, sugar, vanilla and cocoa liquor and mix. Pour this mixture into a baking dish with caramel and bake in a heated oven at 180°C for 1 hour.

Eu e o meu marido adoramos comida indiana. Mas como não estamos em altura de andar muito em restaurantes e também porque não há nada como uma comidinha caseira, procurei, li, investiguei, procurei os melhores ingredientes e meti mãos à obra.
Este frango ficou delicioso, e superou as minhas expectativas! Revelou-se tão fácil de fazer, que vai ficar na minha lista de receitas a repetir.

Me and my husband love Indian food. But as we are not in time to eat regularly in restaurants and also because there's nothing like a homemade food, I searched, read, researched, and searched for the finest ingredients to work.
This chicken was delicious and exceeded my expectations! Proved so easy to make, that it will be on my list of recipes to repeat.






Ingredientes:
1 frango do campo
6 dentes de alho
15g de amêndoas peladas
15g de creme de côco
15g de gengibre fresco
20g Meat Curry Masala
1 cebola média
4 colheres de sopa de azeite
120g de iogurte grego natural
1 tomate maduro grande
sal qb

Colocar o gengibre, o alho, a amêndoa, o creme de coco e duas colheres de sopa de água num copo e triturar com a varinha mágica até se obter uma pasta. Reservar.Lavar e cortar o frango em pedaços pequenos e reservar.Picar a cebola e levar ao lume com o azeite. Quando a cebola estiver translúcida, deitar a pasta de gengibre feita anteriormente e cozinhar durante 5 minutos. Juntar o pó meat curry masala e cozinhar durante 2 minutos. Juntar o iogurte, mexer, de seguida deitar o sal e o tomate descascado e triturado com a varinha mágica. Cozinhar durante 4 minutos, mexendo de vez em quando.A esta altura juntar o frango e deixar ganhar cor por uns minutos. Juntar 250ml de água a ferver, tapar a panela e deixar cozinhar durante 45 minutos.Servir com arroz basmati cozido.




Ingredients:
1 chicken
6 cloves of garlic
15g of peeled almonds
15g coconut cream
15g fresh ginger
20g Meat Curry Masala
1 medium onion
4 tbsp olive oil
120g 
natural 
Greek yoghurt 
1 large ripe tomato
salt to taste



Place the ginger, garlic, almond, coconut cream and two tablespoons of water in a cup and blend with a immersion blender until you get a paste. Reserve.
Wash and cut the chicken into small pieces and set aside.
Chop the onion and cook in medium heat with olive oil. When the onion is translucent, pour the ginger paste made earlier and cook for 5 minutes. Add the Meat Curry Masala and cook for 2 minutes. Add the yogurt, stir, then pour the salt and tomato peeled and blended with the immersion blender  Cook for 4 minutes, stirring occasionally.
At this point add the chicken and cook for a few minutes. Add 250ml of boiling water, cover the pan and simmer for 45 minutes.
Serve with cooked basmati rice.

O meu filho adora ajudar-me na cozinha. Na sexta feira meteu na cabeça que queria fazer um bolo, e então lá foi ele procurar nos meus livros de culinária. Encontrou esta receita de torta de laranja, que ficou um mimo! Tem uma forma diferente das outras que estou habituada a ver. Mas, talvez por isso, resultou muito bem e ficou muito fofinha, saborosa e enrolou-se com relativa facilidade.
A receita original sugere que se recheie o interior com doce de framboesas, mas como a minha filhota não ia gostar, fiz creme de pasteleiro. Foi a melhor torta que já provei!


My son loves helping me in the kitchen. On Friday all he wanted was to make a cake, and then there he was looking in my cookbooks for a recipe. He found this recipe for orange roulade, which was a treat! It's made in a different way from othersroulades that I'm used to seeing. But, maybe because of that, it worked very well and was very soft, tasty and it rolled  up with relative ease.
The original recipe suggests a filling of raspberry jam, but as my little girl would not like it, I made cream pastry. It was the best pie I've ever tasted!


Ingredientes:
6 ovos
180g de açúcar em pó
150g de farinha com fermento
30g de Becel líquida
raspa e sumo de duas laranjas
açúcar e canela para decorar
creme de pasteleiro (receita aqui)

Pré-aquecer o forno a 180ºC. Forrar um tabuleiro com papel vegetal e untar.
Na batedeira, bater as claras em meio castelo. Nessa altura juntar o açúcar e continuar a bater até formar um merengue firme. Com cuidado juntam-se as gemas, o sumo e a raspa de laranja. Envolve-se bem a farinha e a Becel líquida. Espalha-se a massa no tabuleiro e leva-se ao forno durante 20 minutos.
Desenforma-se num pano polvilhado com açúcar e barra-se com o creme de pasteleiro. Enrola-se com cuidado e deixa-se arrefecer. Decora-se com canela a gosto.

Ingredients:
6 eggs
180g icing sugar
150g self-raising flour
30g of liquid Becel
zest and juice of two oranges
sugar and cinnamon for garnish
pastry cream (recipe here)

Preheat oven to 180ºC. Line a tray with parchment paper and grease.
Using an electric mixer, beat the egg whites for 1 minute. At this point add the sugar and continue to beat until it forms a stiff meringue. Carefully add the egg yolks, orange zest and juice. Mix in the flour and the liquid Becel. Spread the dough into the tray and bake for 20 minutes.

Os meus filhos adoram massa.... mas os adultos cá de casa também adoram! Este prato ficou simplesmente delicioso! O molho de 5 queijos fica muito cremoso e muito saboroso. Este prato é tão fácil, rápido, delicioso e económico de fazer. Experimentem e vão ver que todos vão adorar!

My kids love pasta .... but we, the adults also love pasta! This dish was simply delicious! The sauce made with 5 cheeses is very creamy and very flavorful. This dish is so easy, quick, delicious and cheap to make. Try it and you will see that everyone will love it!


Ingredientes: (para 2 pessoas)
2 copos de massa de cotovelos
1 colher de sopa de margarina ou manteiga
2 colheres de sopa de farinha
leite qb
sal, noz moscada e pimenta qb
6 fatias de fiambre picado
1 colher de sopa de queijo mozzarela
1 colher de sopa de queijo emmental
1 colher de sopa de queijo gouda
1 colher de sopa de queijo parmesão
1 colher de sopa de queijo cheddar
oregãos

Cozer a massa em água e sal. Reservar.
Numa frigideira derreter a margarina, juntar a farinha e mexer. Deitar o leite a pouco e pouco, mexendo com uma vara de arames, até ficar um molho cremoso e homogéneo. Retirar do lume. Juntar os queijos e misturar.
Juntar a massa e o fiambre ao molho de queijo, envolver bem e deitar num prato de ir ao forno. Polvilhar com queijo parmesão e oregãos e levar ao forno até ficar dourado.



Ingredients: (for 2 people)
2 cups macaroni
1 tablespoon margarine or butter
2 tablespoons of flour
milk
salt, nutmeg and pepper
6 slices of ham, chopped
1 tablespoon mozzarella cheese
1 tablespoon of emmental cheese
1 tablespoon of cheese gouda
1 tablespoon Parmesan cheese

Boil the pasta in water and salt. Set aside.

Add the pasta and ham to cheese sauce, mix well and pour into a baking dish. Sprinkle with Parmesan cheese and oregano and bake until golden.

Depois de ter recebido o prémio da Bacalhau Dias, tinha de fazer um prato delicioso de bacalhau. A crosta feita de broa de milho e amêndoa fica crocante e muito saborosa!

After receiving the award from Bacalhau Dias, I had to make a delicious dish of cod. The crust made  with corn bread and almond is crunchy and very tasty!




Ingredientes (para 2 pessoas)
2 lombos de bacalhau da Bacalhau Dias
3 dentes de alho
1 folha de louro
5 colheres de azeite
1/2 copo de vinho branco

para a crosta:
1/4 de broa de milho
2 colheres de sopa de amêndoa laminada
sal e pimenta qb
1 dente de alho picado
azeite qb

Colocar os lombos de bacalhau numa travessa, regar com o azeite e o vinho branco. Juntar os dentes de alho esmagados e a folha de louro. Levar a forno quente a 200ºC. Entretanto preparar a crosta, desfazendo o miolo do pão de milho, junta-se o alho picado, a amêndoa, o sal e a pimenta. Rega-se com azeite suficiente para envolver o pão (não muito!).
Quando o bacalhau estiver quase pronto, retirar do forno e cobrir o bacalhau com a mistura de pão de milho. Levar novamente ao forno com o grill ligado para tostar a cobertura. Servir como batata e grelos de couve cozidos.


Ingredients (for 2 people)
2 cod loins Bacalhau Dias
3 cloves of garlic
1 bay leaf
5 tablespoons of olive oil
1/2 cup white wine

for the crust:
1/4 cornbread
2 tablespoons sliced ​​almonds
salt and pepper
1 clove garlic, minced
olive oil to taste

Place the cod loins on a baking pan, drizzle with the olive oil and white wine. Add the crushed garlic cloves and bay leaf. Bake in a hot oven at 200ºC. Meanwhile prepare the crust, in a bowl add the cornbread crumbs, add the chopped garlic, almonds, salt and pepper. Drizzle with olive oil enough to moist the bread (not much!).
When the cod is almost done, remove from oven and cover the cod with the cornbread mixture. Put it back in the oven with the grill on for toasting the crust. Serve with boiled potatoes and kale.

Ia eu com a ideia fixa de fazer tarte de batata doce, mas quando cheguei ao supermercado não havia! Mudei então de planos e decidi fazer esta tarte de pinhão que vi no blog Papinha Doce. Mas quando fui ver à dispensa não tinha pinhões suficientes. Também não tinha amêndoas suficientes para fazer uma tarte de amêndoa. Então usei as duas embalagens solitárias de pinhão e amêndoa. Ficou deliciosa!

I went with the fixed idea of making sweet potato pie, but when I got to the store there wasn´t any!  Then I changed plans and decided to make this pine nut pie I saw on the blog "Papinha Doce. But when I looked in the pantry There wasn't sufficient pine nuts. Nor had sufficient almonds to make an almond pie. So I used the two solitary packages of pine and almond. It was delicious!


Ingredientes:

para o bolo:
250 g de farinha
120 g de açúcar
100 g de manteiga
2 ovos
50 ml de leite
raspa de 1 limão
1 colher de chá fermento

para a cobertura:
100 g de pinhões
100g de amêndoa picada
120 g de açúcar
80 g de manteiga
6 colheres de sopa de leite


Para o bolo:
Pré-aquecer o forno a 180ºC e untar e polvilhar com pão ralado uma tarteira.
Numa tigela misturar todos os ingredientes, colocar a massa na tarteira e levar ao forno durante 15 minutos.

Para a cobertura:
Enquanto o bolo está no forno, preparar a cobertura. Num tacho, colocar todos os ingredientes e ferver durante 10 minutos, com cuidado para não deixar queimar.
Quando faltarem 5 minutos para acabar de cozer o bolo cobrir com a cobertura e colocar novamente dentro do forno.

120 g sugar
100 g butter
2 eggs
50 ml of milk
zest of 1 lemon
1 teaspoon baking powder

for the topping:
100 g pine nuts
100g chopped almonds
120 g sugar
80 g butter
6 tablespoons milk


For the cake:
Preheat oven to 180 º C and grease and sprinkle with breadcrumbs a pie pan.
In a bowl mix all the ingredients, put dough in the baking pan and bake for 15 minutes.

For the topping:
While the cake is in the oven, prepare the topping. In a pan, place all ingredients and simmer for 10 minutes, being careful not to let it burn.
When there is 5 minutes left to finish baking the cake cover with the topping and put back into the oven.

Esta manhã tinha em mente sair para tratar de uns assuntos, mas acabei por ficar em casa... Subitamente toca a campaínha e para grande surpresa minha, um senhor muito simpático carregava uma caixa da Bacalhau Dias! Fiquei tão contente com a surpresa, pois hoje não estava à espera de receber este mimo!
Para quem acompanha o blog "Hoje para jantar temos", talvez se lembrem que as minhas azevias de chocolate e nozes foram umas das vencedoras do passatempo "As melhores receitas de Natal".
Adorei esta prendinha e nos próximos dias vão ver uns pratinhos deliciosos de bacalhau!


This morning I had in mind going out to take care of some issues, but I ended up staying home ... Suddenly the doorbell rings and much to my surprise, a very nice gentleman carrying a box of Bacalhau Dias! I was so happy with the surprise, because today was not expecting to receive this treat!

Bolachas de cevada, queijo e oregãos / Barley, cheese and oregano cookies
Se fazemos bolachas de aveia, porque não fazer também com outros grãos? Afinal de contas a cevada é um cereal rico em hidratos de carbono, fibras, vitaminas do complexo B e em selénio e magnésio. O magnésio é um mineral utilizado na formação dos ossos e na liberação de energia dos músculos, e o selénio é um antioxidante que ajuda a proteger as células e o organismo.
Por causa da grande quantidade de fibras, a cevada é considerada um alimento funcional. Este grão é um primo distante do trigo e, embora, muitas vezes,  possa ser usado da mesma maneira que o trigo, não causa sensibilidade em muitas pessoas que são intolerantes ao trigo.

Esta receita rende apenas 9 bolachas, mas são muito saciantes. São rápidas de fazer, ideais para um lanche de última hora. Cruzei-me com esta receita no site Valio, e após as minhas habituais modificações, sairam estas bolachas deliciosas e saudáveis do meu forno directamente para a barriguinha esfomeada de um rapaz de 10 anos! ;-)

If we make oatmeal cookies, why not do as well with other grains? After all barley is a cereal rich in carbohydrates, fiber, B vitamins, selenium and magnesium. Magnesium is a mineral used in building bones and releasing energy from muscles, and selenium is an antioxidant that helps protect cells and body.
Because of the large amount of fiber, barley is considered a functional food. This grain is a wheat's relative and, although often can be used the same way as wheat, does not cause sensitivity in many people that are intolerant to wheat. 

This recipe yields only 9 crackers, but they are very satiating. They are quick to make, perfect for a last minute snack. I came across this recipe on the site Valio, and after my usual modifications, these cookies came out delicious and healthy from my oven directly into the belly of a hungry 10 year old boy! ;-)



Ingredientes:
50g de cevada (grão esmagado como a aveia)
1/2 colher de sopa de farinha de trigo integral
1 colher de chá de fermento
2 pitadas de oregãos
1 ovo
25ml de azeite
50g de queijo parmesão ralado
sementes de sésamo, linhaça e girassol para polvilhar

Pré-aquecer o forno a 180ºC.
Misturar os ingredientes todos excepto as sementes. Envolver e fazer pequenos montinhos num tabuleiro forrado com papel vegetal. Polvilhar com as semente e cozer durante 13 minutos. Servir ainda morno.




Ingredients:
50g of barley (crushed grain like oats)
1/2 tablespoon of whole wheat flour
1 teaspoon of baking powder
2 pinches of oregano
1 egg
25ml olive oil
50g grated parmesan cheese
sesame seeds, linseeds and sunflower seeds to sprinkle

Preheat oven to 180 º C.
Mix all the ingredients except the seeds. Involved and make small piles on a tray lined with greaseproof paper. Sprinkle with seeds and bake for 13 minutes. Serve still warm.

Para comemorar o facto de já sermos mais de 600 n'As coisas da Mãe Sofia do Facebook, lembrei-me de fazer esta torta que eu vi no blog "A Culinária e Eu" . Deste modo, esta torta é para todos os seguidores d'As coisas da Mãe Sofia, seja aqui ou no Facebook! Obrigado por estarem desse lado a acompanhar as minhas aventuras na cozinha nestes dois anos e meio!

To celebrate the fact that we are already over 600 on "As coisas da Mãe Sofia" Facebook page, I remembered to make this roulade that I saw on the blog "A Culinária e Eu." Thus, this roulade is for all followers of "As coisas da Mãe Sofia", either here or on Facebook! Thank you for being over that side following my adventures in the kitchen in these two and a half years!


Ingredientes:
350g de açúcar
raspa de uma laranja
150g de sumo de laranja
8 ovos
40g de farinha Maizena
60g de manteiga (temperatura ambiente)

Pré-aquecer o forno a 180ºC. Untar um tabuleiro com spray Espiga, forrar com papel vegetal e voltar a untar com o spray Espiga.
Numa tigela, colocar o açúcar e os ovos e bater bem. À parte misturar o sumo de laranja com a farinha Maizena e juntar à mistura de açúcar e ovos. Juntar também a raspa da laranja e a manteiga e misturar tudo com a batedeira.
Levar ao forno durante 20 minutos. Preparar um pano de cozinha e polvilhá-lo com açúcar. Quando a torta estiver cozida, retirar o tabuleiro do forno e virar com cuidado para cima do pano. Com cuidado enrolar a torta e passar para uma travessa.




Ingredients:
350g sugar
zest of an orange
150g of orange juice
8 eggs
40g of cornstarch
60g of butter (room temperature)

Preheat oven to 180 º C. Lightly grease a tray, line with parchment paper and grease again.
In a bowl, put the sugar and eggs and mix well. Apart mix orange juice with cornstarch and add to the mixture of sugar and eggs. Add the orange zest and the butter and mix with an electric mixer.
Bake for 20 minutes. Prepare a tea towel and sprinkle with sugar. When it's cooked, remove the pan from the oven and carefully turn onto the cloth. Carefully roll the cake and transfer to a platter.

Tinha duas claras de ovos e não me apetecia deitá-las fora. Lembrei-me que o meu filho me andava a pedir estes merengues e como há uma receita no meu livrinho "Le grand livre Marabout de la pâtisserie facile", decidi fazer. São tão simples de fazer e a criançada adora!

I had two egg whites and did not feel like throw them away. I remembered that my son had been asking for these meringues and since there is a recipe in my book "Le grand livre Marabout de la pâtisserie facile" I decided to make it. They are so simple to make and the kids love it!


Ingredientes:
2 claras
110g de açúcar em pó
2 colheres de sopa de cacau

Bater as claras com o açúcar, durante 15 minutos, numa batedeira. Ao fim deste tempo incorporar delicadamente o cacau. Colocar o merengue num saco de pasteleiro e fazer pequenos merengues num tabuleiro forrado com papel vegetal. Cozer em forno pré aquecido a 100ºC durante 1 hora.


Ingredients:
2 egg whites
110g icing sugar
2 tablespoons of cocoa

Whisk egg whites and sugar, for 15 minutes in a mixer. At this time gently incorporate the cocoa. Place meringue a pastry bag and make small meringues on a tray lined with parchment paper. Bake in oven preheated to 100 ° C for 1 hour.

Havia uma maçã no cesto da fruta a pedir para ser comida, mas ninguém a quis comer. Triste por ser desprezada por quem a comprou na praça, chorava por ninguém gostar dela. Certo dia, pegaram nela e a maçã foi a estrela num bolo delicioso. E foi desta forma que todos em casa comeram a maçã e ela feliz por todos gostarem dela!

There was an apple in the fruit's basket asking to be eaten, but no one wanted her. Sad to be despised by those who bought her, crying for not being wanted. One day someone took her and made the star in a delicious cake. And it was in this way that everyone in the house ate the apple and she was so happy that everyone liked her!


Ingredientes:
125g de manteiga
200g de açúcar
2 ovos
1 colher de chá de baunilha
150g de farinha de trigo
100g de farinha de trigo integral
1 colher de chá de fermento
1 maçã sem casca cortada em cubos
100g de nozes picadas grosseiramente
açúcar em pó e canela para polvilhar

Pré aquecer o forno a 180ºC. Untar com manteiga e polvilhar com pão ralado uma forma de bolo inglês.
Numa tigela bater a manteiga com o açúcar. Juntar os ovos e a baunilha e encorporar bem. Adicionar a farinha com o fermento e mexer a massa até ficar homogénea. Incorporar a maçã e as nozes e deitar na forma. Levar ao forno durante cerca de 45 minutos.
Ao fim desse tempo desenformar e polvilhar com açúcar em pó e canela.


Ingredients:
125g butter
200g sugar
2 eggs
1 teaspoon vanilla
150g plain flour
100g of whole wheat flour
1 teaspoon of baking powder
1 apple, peeled, diced
100g coarsely chopped walnuts
powdered sugar and cinnamon for sprinkling

Preheat the oven to 180 ° C. Grease with butter and sprinkle with breadcrumbs baking pan of pound cake.
In a bowl beat the butter with the sugar. Add the eggs and vanilla and mix well. Add the flour and baking powder and mix until you get a homogeneous dough. Mix in the apple and walnuts and pour into the baking pan. Bake for about 45 minutes.
At the end of that time unmold and sprinkle with powdered sugar and cinnamon.

No Natal comprei um livro que já andava a "namorar" há meses "Le grand livre Marabout de la pâtisserie facile". Tem 600 receitas, cada uma mais deliciosa que a outra, já para não falar das imensas técnicas de pastelaria.
Tenho andado indecisa sobre qual seria a primeira receita a ser feita e acabei por me decidir por este bolo. Este bolo ficou como um dos meus preferidos! Mesmo muito saboroso!

Last month I bought a book that I have been wanting for months "Le grand livre Marabout de la patisserie facile." It has 600 recipes, each one more delicious than the other, not to mention the pastry techniques.
I've been indecisive about what would be the first recipe to be made and I ended up deciding on this cake. This cake was one of my favorites! It's SO tasty!


Ingredientes:
2 laranjas
1 colher de chá de fermento
6 ovos
220g de açúcar em pó
240g de amêndoa moída
75g de farinha
50g de pinhão

Lavar as laranjas e cozer num tacho com água durante 1h e 30m ou até ficarem macias. Escorrer e deixar arrefecer.
Pré-aquecer o fono a 180ºC. Untar uma forma com manteiga redonda e forrar com papel vegetal.
Cortar as extremidades da laranja, cortar em quartos e descartar as sementes. Reduzir a puré junto com o fermento e reservar.
Numa tigela bater os ovos com o açúcar até se obter uma espuma fofa e homogénea. Adicionar a amêndoa moída, a farinha e o puré de laranja. Mexer delicadamente até não ter grumos.
Deitar na forma, polvilhar com os pinhões e levar ao forno durante cerca de 1h. Ao fim desse tempo, retirar do forno e polvilhar com açúcar em pó.


Ingredients:
2 oranges
1 teaspoon of baking powder
6 eggs
220g icing sugar
240g almond flour
75g flour
50g pine nuts

Wash the oranges and boil in a pan with water for 1 hour 30 minutes or until tender. Drain and leave to cool.
Preheat oven to 180ºC. Grease a round pan with butter and line with parchment paper.
Cut the ends of the orange, cut into quarters and discard the seeds. Reduce to puree along with the baking powder and set aside.
In a bowl beat the eggs with the sugar until a soft and homogeneous foam. Add the ground almonds, the flour and orange puree. Stir gently until there is no lumps.
Pour into the round baking pan, sprinkle with pine nuts and bake for about 1 hour. At the end of this time, remove from oven and sprinkle with powdered sugar.

Estes palmiers foram uma experiência, que acabou por ser bem sucedida. Surgiram da necessidade de aproveitar um resto de queijo Parmesão que tinha sobrado de outra refeição.
O leve sabor a pimenta caiena confere o toque picante que torna estes palmiers muito saborosos. Mas o melhor é experimentarem! Não se vão arrepender!

These palmiers were an experience that turned out to be successful. Arose from the need to use a rest  of Parmesan cheese that was left from another meal.
The mild flavor of cayenne pepper gives the spicy touch that makes these palmiers very tasty. But  the best is for you to try it! You will not regret it!


Ingredientes:
1 embalagem de massa folhada (usei do Lidl)
queijo Parmesão
pimenta caiena qb
oregãos
sementes de sésamo

Abrir a folha de massa folhada e polvilhar com o Parmesão. Pressionar o queijo com as mãos para se agarrar à massa folhada. Polvilhar com pimenta caiena (lembro que esta pimenta é muito picante, por isso basta usar um pouco) e com os oregãos. Polvilhar com as sementes de sésamo. Enrolar a massa até meio a partir de uma das extremidades, depois repitar a operação a partir da outra extremidade.
Cortar com em fatias de meio centímetro e colocar num tabuleiro forrado com papel vegetal. Levar ao forno a 200ºC até ficarem douradinhos e crocantes.


Ingredients:
1 pack of puff pastry (I used one from Lidl)
Parmesan cheese
cayenne pepper to taste
oregano
sesame seeds

Open the sheet of puff pastry and sprinkle with Parmesan cheese. Press the cheese with your hands. Sprinkle with cayenne pepper (remember that this pepper is very spicy, so just use a little) and the oregano. Sprinkle with sesame seeds. Roll the dough from one end to the middle and do the same on the other end.
Cut into slices with half a centimeter and place on a tray lined with parchment paper. Bake at 200ºC until golden and crispy.
