A pedido dos rebentos, trouxe do supermercado uma língua de vaca. Geralmente faço-a de fricassé ou guisada com tomate. Desta vez apeteceu-me variar e lembrei-me da minha velha panela de barro. Não é costume fazer língua na panela de barro, mas a comida feita no barro fica com um sabor diferente por isso valia a pena experimentar.
Foi uma experiência a repetir, pois não sobrou nada! O aroma inebriante fazia crescer água na boca e o sabor delicioso conquistou todos cá em casa!
Para além desta variação, também fiz gnocchi de espinafres para acompanhar, mas essa receita virá noutro post.
At the request of the kids, I brought from the supermarket a beefs tongue. I usually beefs tongue fricassee or stew with tomato. This time I felt like changing the way I cook it and I remembered my old terracotta pan. It is not customary to cook the beefs tongue this way, but the food gets a different flavor so it was worth experiencing.
It was an experience to repeat, because there's nothing left! The heady aroma was mouth watering and the delicious taste conquered all here at home!
Besides this variation, I also made spinach gnocchi as a side dish, but this recipe will come in another post.
LÍNGUA DE VACA EM PANELA DE BARRO
Ingredientes:
1 língua de vaca
1 cebola inteira
1 cenoura inteira
1/2 chouriço
6 fatias de bacon
1 cebola grande picada grosseiramente
2 cenouras cortadas em cubos
1 molho de salsa
3 folhas de louro
1 raminho de tomilho fresco
1 lata pequena de tomate
2 copos de vinho branco
1 colher de sopa de colorau
1 copo de vinho tinto
3 colheres de sopa de azeite
1/2 chávena de caldo de galinha caseiro
sal e pimenta a gosto
Começa-se por se dar um "escaldão" à língua de vaca, numa panela de pressão com água temperada com sal e pimenta, a cebola e a cenoura inteiras e 1 folha de louro, durante 20 a 30 minutos. Após esse tempo retira-se a pele da língua e retiram-se também quaisquer pedaços de gordura que possa ter e corta-se em fatias de 2 centímetros.
Colocam-se as fatias de língua num tabuleiro e temperam-se com os vinhos, o colorau, a salsa picada, o sal e pimenta, o azeite, o louro e o tomilho. Deixa-se marinar 2 horas no frigorífico.
Findo este tempo, coloca-se no fundo da panela de barro metade da cebola picada, 1 cenoura aos cubos e a língua. De seguida, cobre-se com a restante cebola, cenoura, o chouriço às rodelas, o bacon cortado em pedaços e o tomate esmagado. Rega-se com a marinada e junta-se o caldo de galinha caseiro.
Tapa-se a panela e leva-se ao forno a 200ºC durante 1 hora.
BEEF TONGUE IN TERRACOTTA PAN
Ingredients:
1 beef tongue
1 whole onion
1 whole carrot
1/2 chorizo
6 slices of bacon
1 large onion, coarsely chopped
2 diced carrots
1 bunch of parsley
3 bay leaves
1 sprig of fresh thyme
1 small can of tomato
2 cups of white wine
1 tablespoon paprika
1 glass of red wine
3 tablespoons olive oil
1/2 cup homemade chicken broth
salt and pepper to taste
Begin to cook the beef tongue, in a pressure cooker with water, salt, pepper, onion and carrot and 1 whole bay leaf for 20 to 30 minutes. After this time remove the skin and also remove any pieces of fat it may have and cut into 2 cm slices.
Put the beef tongue slices in a tray and season with the 2 wines, paprika, chopped parsley, salt and pepper, olive oil, bay leaf and thyme. Allow to marinate 2 hours in the refrigerator.
After this time, place in bottom of the terracotta pan half the chopped onion, 1 carrot diced and the beef tongue. Then cover with the remaining onion, carrot, sliced chorizo , bacon cut into pieces and crushed tomatoes. Add the marinade and the homemade chicken broth.
Cover and put the pan in the oven at 200°C for 1 hour.
