Tinha um restinho de morangos e uns iogurtes de morango no frigorífico que precisavam de ser consumidos urgentemente. Lembrei-me então destes muffins que vi recentemente no blog Inspired Taste. Só posso dizer que são maravilhosamente deliciosos!! Os meus filhos adoraram e eu também!!

Ingredientes
1 3/4 copos de farinha de trigo integral
3/4 copo de açúcar amarelo
1/2 colher de chá de canela em pó
1 colher de chá de fermento em pó
3/4 colher de chá de bicarbonato de sódio
1/2 colher de chá de sal
2 iogurtes Activia 0%  pedaços de morango
1 ovo
6 colheres de sopa de manteiga sem sal, derretida
1 copo de morangos picados grosseiramente

Glacé de baunilha
1/2 copo de açúcar em pó
1/2 colher de chá de extrato de baunilha
2 colheres de chá de leite

  • Aqueça o forno a 180ºC. Preparar um tabuleiro de muffins com forminhas de papel.
  • Numa tigela grande, misture a farinha, o açúcar, a canela, o fermento, o bicarbonato e o sal. Numa tigela pequena, misture a manteiga derretida, iogurte e o ovo, em seguida, adicionar os ingredientes secos. Use uma espátula ou colher para mexer até combinar. Adicione os morangos.
  • Encha as forminhas de muffins até 3/4 de altura e levar ao forno pré-aquecido por aproximadamente 20 minutos ou até ficarem douradinhos.
  • Faz-se o glacé de baunilha misturando o açúcar em pó, o extrato de baunilha e leite. Regar os muffins com o glacé e apreciar!

Ingredients
1 3/4 cups wholewheat flour
3/4 cup light brown sugar
1/2 teaspoon ground cinnamon
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
2 strawberry yogurts Activia 0%
1 egg
6 tablespoons unsalted butter, melted
1 cup roughly chopped strawberries


Vanilla Glaze
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
2 teaspoons milk


  • Heat oven to 180ºC. Line a muffin pan with paper liners.
  • In a large mixing bowl, combine flour, sugar, cinnamon, baking powder, baking soda and salt. In a small bowl, whisk together yogurt, egg and melted butter then add to dry ingredients. Use a spatula or spoon to stir until just combined. Fold in strawberries.
  • Fill muffin cups 3/4 full then bake for about 20 minutes until golden brown on top.
  • Make the vanilla glaze by stirring together powdered sugar, vanilla extract and milk. Drizzle glaze over cooled muffins and enjoy.

Amanhã vai haver uma pequena festa de Carnaval na escola dos meus filhos, e o meu rapaz queria levar uns queques para os colegas e para a professora. Visto que a sua principal preocupação era levar algo que não incluísse chocolate, decidimos fazer estes muffins, que se revelaram simplesmente deliciosos.

Ingredientes:
250g de açúcar
4 ovos
300g de farinha integral
8g de fermento em pó
150g de leite
140g de óleo
30g de manteiga derretida
2 pitadas de noz moscada

para guarnecer:
2 maçãs
30g de manteiga
50g de açúcar amarelo
4 pitadas de canela


  • Descascar as maçãs e cortar em cubinhos pequenos. Numa frigideira levar ao lume a manteiga, o açúcar amarelo e a canela. Mexer até começar a caramelizar. Nessa altura juntam-se as maçãs e deixar cozinhar durante 2 minutos. Colocar num prato a arrefecer.
  • Numa tigela, misturar bem o açúcar com os ovos. Adicionar a farinha, o fermento e o leite. Envolver bem, incorporar o óleo, a manteiga derretida e a noz moscada. Misturar bem até obter uma mistura homogénea. Juntar a maçã caramelizada e envolver delicadamente.
  • Dividir a massa por 24 formas de muffins e levar ao forno pré-aquecido a 180ºC durante 20 minutos.

Ingredients:
250g sugar

  • In a bowl, mix well the sugar with the eggs. Add the flour, baking powder and milk. Mix well, to incorporate the oil, butter and nutmeg. Mix well until a homogeneous mixture. Add the caramelized apple and gentlymix.
  • Divide the mixture into 24 baking cups and take it to a preheated oven at 180 ° C for 20 minutes.

Mais precisamente uma sopinha feita pelo meu marido, namorado, o melhor amigo que eu poderia ter e um pai maravilhoso para os nossos filhotes. E sendo hoje dia de São Valentim, parece-me apropriado gabar o meu marido, de quem eu me orgulho muito!
Por isso, aqui fica a sopinha que ele hoje fez.

Este é um bolo que nunca tinha feito. Ando há anos para fazer um bolo de bolacha, mas por alguma razão nunca fiz. Mas posso dizer que este vale bem a pena, pois estava absolutamente delicioso e cremoso!

Ingredientes:

200g de bolacha maria torrada

Creme
1 lata de leite condensado
2 colheres de sopa rasas de farinha maisena
1 pitada de sal fino
3 gemas
5 dl de leite
2 dl de natas frias

Decoração
Bolacha maria triturada

  • Levar um tacho ao lume com todos os ingredientes indicados para o creme, excepto as natas. Com uma vara de arames, mexer sempre a mistura até engrossar. Retirar do lume e deixar arrefecer. Bater as natas até ficarem firmes e envolver no creme.
  • Num prato espalhar uma camada de creme e dispor uma cama de bolachas em forma de flor. Alternar as camadas de bolachas com camadas de creme. Quando as bolachas acabarem, cobrir tudo com o restante creme. Decorar com a bolacha triturada e levar ao frigorífico durante pelo menos 1 hora.
Ingredients:

200g marie biscuits

Cream
1 can sweetened condensed milk
2 tablespoons of cornstarch
A pinch of fine salt
3 egg yolks
5 dl milk
2 dl cream

Decoration
Crushed marie biscuits

  • Bring a pot on the stove with all ingredients listed, except the cream. Stir the mixture until it thickens. Remove from heat and let it cool. Whisk the cream until stiff and mix into the mixture made before.
  • In a dish spread a layer of cream and have a bed of flower-shaped cookies. Alternate layers of marie biscuits with layers of cream. When the marie biscuits end, cover it with remaining cream. Garnish with crushed marie biscuits and refrigerate for at least 1 hour.

Já há muitos anos que não fazia estes biscoitos, e é pena pois o meu marido adora-os, mas por alguma razão nunca mais me lembrei deles. Foi uma receita que aprendi com a minha mãe e que acabei por modificar para ficar mais ao meu gosto. São muito simples, económicos e rápidos de fazer.

I haven't made these cookies for so long, and it is a pity because my husband loves them, but for some reason i forgot this recipe. This was a recipe that I learned from my mother and I ended up changing to be more to my liking. They are very simple, cheap and quick to make.


Ingredientes:
125g de açúcar
125g de manteiga
1 ovo
raspa de 1/2 limão
1 colher de chá de essência de baunilha
250g de farinha
1 colher de chá de fermento em pó
avelãs peladas
açúcar para polvilhar

  • Bater o açúcar com a manteiga. Junta-se o ovo, a raspa de limão, a essência de baunilha e a farinha e amassa-se.
  • Depois de tudo bem ligado leva-se ao frigorífico por 15 minutos. Liga-se o forno a 180ºC.
  • Fazem-se bolinhas do tamanho de uma noz, coloca-se uma avelã no centro e polvilha-se com açúcar.
  • Leva-se ao forno durante 10 minutos ou até ficarem douradinhas.

O meu filho andava a pedir para fazer um bolinho recheado. Esta manhã dei por ele a dar volta às revistas que aqui tenho em casa. Depois de muito procurar escolheu este bolinho que vinha na Mariana Culinária nº45. Ele fez umas alterações, que a meu ver, teve um resultado delicioso!

Eu tinha 2 peitos de frango esquecidos e abandonados no meu congelador. Lembrei-me desta receita da revista do Pingo Doce deste mês. A receita original leva outro recheio, mas eu fiz com o que tinha em casa e  posso dizer que foi um sucesso, pois este foi o único que sobrou, mas depressa foi devorado pelo meu filho ao jantar.

I had 2 chicken breasts forgotten and abandoned in my freezer. I remembered this recipe that I saw in a magazine this month. The original recipe has another filling, but I did with what I had at home and I can say it was a success, because this was the only one left, but was quickly devoured by my son for dinner.


Ingredientes:

Para a massa
2dl de água
1 colher de chá de sal
1 tira de casca de limão
200g de farinha de trigo
50g de sêmea de trigo Pingo Doce
1 colher de sobremesa de tomilho seco
3 colheres de sopa de azeite
1 ovo
sementes de sésamo e de girassol

Recheio:
2 peitos de frango cozidos e desfiados
1/2 beringela
1 cenoura ralada
1 copo de espinafres descongelados
1 cebola pequena
2 colheres de sopa de azeite
sal qb
1 colher de sopa de farinha
1/2dl de leite magro
pimenta e noz moscada qb


  • Começa-se por fazer a massa. Leva-se a água ao lume com o sal e a casca de limão. Mistura-se a farinha com o tomilho numa tigela funda. Quando a água estiver a ferver, retira-se a casca de limão, junta-se o azeite e deita-se sobre a farinha. Mexe-se rapidamente com uma colher de pau até ficar tudo ligado. Deita-se numa bancada enfarinhada e amassa-se até se obter uma massa maleável. Faz-se uma bola e deixa-se repousar durante 30 minutos.
  • Começa-se então a preparar o recheio. Pica-se a cebola e leva-se ao lume numa frigideira com o azeite. Adiciona-se a beringela descascada, aos cubos e também a cenoura finamente ralada. Cozinha-se até os legumes amolecerem. Junta-se então o frango e os espinafres, tempera-se e mistura-se bem. Adiciona-se a farinha, mistura-se e rega-se com o leite. Deixa-se engrossar e retira-se do lume. Deixa-se arrefecer um pouco.
  • Estende-se a massa e procede-se como nos rissois. Coloca-se o recheio na massa, dobra-se a massa de modo a cobrir o recheio e corta-se com um copo. Colocam-se os pasteis num tabuleiro forrado com papel vegetal, pincelam-se com o ovo e polvilham-se com as sementes para decorar. Leva-se ao forno a 180ºC durante 25 minutos ou até a massa ficar dourada nos rebordos.
  • Serve-se com uma salada verde.

1 cup thawed spinach
1 small onion
2 tablespoons olive oil

1 tablespoon of flour
1/2dl skimmed milk

Place the pastry on a baking sheet lined with parchment paper, brush with egg and sprinkle with seeds for garnish. Take it to the oven at 180°C for 25 minutes or until dough is golden on edges.

A minha filha não é criança que goste muito de sobremesas. Aliás, dá para contar pelos dedos de uma mão, o número de sobremesas que ela gosta. Esta é uma delas. Adora esta mousse, e já é quase uma tradição cá em casa, fazer esta sobremesa no Natal e no Ano Novo.

Ingredientes:

400g de frutos vermelhos congelados
sumo de 1/2 limão
1 lata de leite condensado
4 folhas de gelatina
2 dl de natas

  • Descongelar os frutos vermelhos, reduzir a puré com a varinha mágica e passar por um passador para eliminar todas sementes.
  • Deitar o puré numa tigela, adicionar o sumo de limão e o leite condensado e mexer. Reservar.
  • Demolhar as folhas da gelatina em água fria. Escorrer e derreter num tacho quente, sem deixar ferver. Junta-se à mistura dos frutos vermelhos.
  • Batem-se as natas em chantilly (sem açúcar) e envolve-se delicadamente na mistura anterior. Levar ao frio para solidificar e decorar a gosto.

Ingredients:

400g of frozen red berries

2 dl of cream

Cá em casa adoramos este arroz e é tão fácil de fazer. Fica uma delícia!

Ingredientes:

1 frango do campo com miúdos e sangue
arroz
1 molho de salsa
1 dente de alho
1 cebola
azeite
1 copo de vinho branco
sal e pimenta
1 folha de louro

Picam-se a cebola e o alho e levam-se ao lume com o azeite e o louro, numa panela grande.
Corta-se o frango em pedaços, retira-se a pele do frango e junta-se à panela. Deixa-se o frango e os miúdos fritar um pouco até alourar de ambos os lados. Refresca-se com o vinho e deixa-se o frango cozinhar durante uns minutos.
Junta-se o arroz e envolve-se no molho. Cobre-se com água a ferver. Tempera-se com sal e pimenta e também com a salsa picada. Tapa-se a panela e deixa-se cozer. Se for preciso, adicionar um pouco mais de água a ferver. Quando o arroz estiver quase cozido, junta-se o sangue do frango e deixa-se cozinhar durante pelo menos 4 minutos. 
Servir com uma salada verde.


Ingredients:

Quando vou às compras, adoro espreitar todas as prateleiras à procura de novidades e de produtos mais saudáveis, para experimentar receitas novas. Foi o que aconteceu esta semana no Pingo Doce. Têm agora à venda pacotes de 1 kg de farinha de milho integral. Num dos lados do pacote trás a receita da broa de milho, e foi assim que um pacote veio comigo para casa e eu fiz esta broa deliciosa.

On one side of the package there's the recipe for corn bread, and that's how a package came home with me and I made ​​this delicious bread.


Ingredientes:


500g de farinha de milho integral
200g de farinha de trigo
450ml de água a ferver
20ml de água morna
12g de fermento fresco
9 gramas de sal


Numa tigela grande colocar o fermento e mexer junto com a água até este derreter. Juntar a farinha de milho, o sal e a água a ferver e mexer com uma colher ou então usar uma batedeira para não nos queimarmos. Depois da água absorvida, juntar a farinha de trigo e amassar até obter uma massa espessa. Se for preciso, juntar mais farinha de trigo. (Atenção que esta massa parece que fica mole em relação a outras massas de pão, mas é mesmo assim.)
Deixar levedar durante hora e meia. Findo este tempo, amassar rapidamente a massa, formar uma bola, colocar num tabuleiro e achatar ligeiramente. Deixar repousar durante 5 minutos e levar ao forno a 230ºC durante 1 hora.

After the water absorbed, add the flour and knead until the dough is thick. If necessary, add more flour. (Note that this dough is softer compared to other doughs)
Let it rest for an hour and half. After this time, quickly knead the dough, form a ball, place on a baking sheet and flatten slightly. Let it stand for 5 minutes and bake at 230 ° C for 1 hour.
