Gelado de ameixa rim / Sloes ice cream
Os meus pais têm 2 amexeiras que todos os anos ficam carregadinhas de ameixas deliciosas. Este ano, tirei de uma só vez 12kg e ficaram outros tantos por apanhar. Onde os meus pais nasceram chama-lhes ameixa rim, mas nos outros cantos do nosso país chamam-lhe abrunho, ameixoco e ameixa tomate de galo. Tenha lá o nome que tiver, acho-as deliciosas e são as minhas preferidas.
Mas com 12 kg de ameixas pensei: "E o que vou fazer com tanta ameixa?!" Até que a Kika me sugeriu fazer gelado das ameixas. Depois de muita pesquisa, lá encontrei esta receita no blog da São que muito agradou aos meus filhos :)


My parents have two plum trees that every year get so loaded of delicious plums. This year, took at once 12kg. Where my parents were born people call it kidney plum but in other parts of our country call it sloes. Whatever you want to call it, I find it delicious and are my favorite.
But with 12 kg of plums thought: "And what will I do with such plum?" Until Kika suggested me to make plum ice cream. After much research, I found this recipe on São's blog that pleased my children so much :)


Ingredientes:
15 ameixas
1 iogurte grego natural
200ml de natas
3 colheres de sopa de açúcar em pó

Lavam-se as ameixas e retiram-se os caroços. Colocam-se no liquidificador e tritura-se bem. Adiciona-se o iogurte e volta-se a ligar o liquidificar até ficar um creme homogéneo.
Na batedeira batem-se as natas em chantilly com o açúcar em pó. Junta-se o creme de ameixa às natas batidas e com uma espátula mistura-se com cuidado.
Leva-se à máquina de gelados durante 35 minutos e no fim desse tempo colocam-se nas formas de gelados ou num recipiente hermético.



Ingredients:
15 prunes
1 natural Greek yoghurt
200 ml of double cream
3 tablespoons powdered sugar

Wash the plums and remove the stones. Place in a blender and grind well. Add the yogurt and turn back to liquefy until smooth.
Using an electric mixer beat the cream into whipped cream with powdered sugar. Add the plum mixture to the whipped cream with a spatula and mix carefully.
Place in the ice cream maker for 35 minutes and take it to the freezer in an airtight container.

Nestes últimos dias tem estado tanto calor que nos apeteceu um chá gelado. Mas os que estão à venda têm tanto açúcar que fazem mais mal que bem. Aproveitei uma visita à casa da minha mãe para apanhar umas folhinhas de lúcia lima e uns limões biológicos para fazer este chá :)
Ficou delicioso e excelente para matar a sede nestes dias quentes, e podemos beber sem nos sentirmos culpados.

These recent days has been so hot that we felt like an iced tea. But those sold in stores have so much sugar that do more harm than good. I took a visit to my mother's house to pick up a few leaves of lemon verbena and some organic lemons to make this tea :)
It was delicious and excellent for quenching our thirst in these hot days, and we can drink without feeling guilty.


Ingredientes:
1 copo cheio de folhas de lúcia lima
2 limões
1 pau de canela
2 colheres de sopa de mel
1,5l de água
gelo

Num jarro grande colocar as folhas de lúcia lima lavadas, o limão cortado em rodelas e o pau de canela. Ferver a água e deitar dentro do jarro. Tapar com película aderente e deixar repousar até arrefecer. Adicionar o mel, mexer bem e levar ao frigorífico. Na hora de servir, juntar dois cubos de gelo a cada copo.



Ingredients:

2 tablespoons honey
1.5 l of water

Esta receita foi inspirada no programa Hungry Girl do canal Food Network. Pareceu-me tão interessante que mal podia esperar por experimentar.
As crianças estão sempre prontas para pizza, e quando viram o almoço, ficaram desconfiadas, mas devo dizer que nem elas, nem eu sentimos falta da base de pizza tradicional. Experimentem! Fica delicioso! Cortarmos no hidratos de carbono, e fica uma refeição super leve e deliciosa acompanhada de uma salada verde!

This recipe was inspired by the program Hungry Girl's Food Network channel. It seemed so interesting that I could not wait to try.
Children are always ready for pizza and at lunch when they saw, they were suspicious, but I must say that neither they, nor I missed the traditional pizza crust. Try it! It is delicious! Cut on the carbohydrates, and is light and super delicious meal with a delicious green salad!


Ingredientes:
1 bife de frango por pessoa
molho de tomate
cogumelos
pimento vermelho cortado em tiras pequenas
azeitonas
queijo mozzarella light
tiras de bacon fininhas
oregãos
azeite
sal e pimenta
alho

Pré-aquecer o forno a 200ºC. Temperar os bifes com sal, pimenta e alho laminado.
Aquecer o azeite numa frigideira e fritar rapidamente os bifes (cuidado para não ficarem demasiado secos, pois ainda vão ao forno).
Retirar os bifes da frigideira e colocar em cima de papel absorvente, para eliminar a gordura em excesso. Transferir os bifes para um tabuleiro de ir ao forno e cobrir cada um com uma colher de sopa de molho de tomate. Cobrir com os cogumelos laminados, os pimentos, o bacon (basta 1 colher de sobremesa para dar sabor) e cobrir com queijo mozzarella e as azeitonas. Polvilhar com oregãos e levar ao forno até o queijo derreter.
Servir com uma salada verde.


Ingredients:

Depois do sucesso que o Morangão Folhado fez cá em casa, decidi alterar um pouco a receita e usar um ingrediente que todos adoram cá em casa... Nutella!
O recheio ficou muito cremoso e a Nutella conferiu-lhe um sabor delicioso!

Ingredientes:
1 embalagem de mascarpone
1 iogurte grego
3 ovos

1 colher de chá de baunilha
1 base de massa folhada

Pré-aquecer o forno a 180ºC. Forrar a forma de tarte com a base de massa folhada.
Numa tigela bater o mascarpone, o iogurte, os ovos, o açúcar, a baunilha e a Nutella. Deitar esta mistura na base de massa folhada e levar ao forno durante +/- 30 minutos.
Retirar do forno, deixar arrefecer e polvilhar com açúcar em pó.


Ingredients:
1 package of mascarpone
1 Greek yogurt
3 eggs
2 tablespoons light brown sugar
2 tablespoons of Nutella
1 teaspoon vanilla
1 sheet of puff pastry

Preheat oven to 180 º C. Line with the puff pastry.
In a bowl beat the mascarpone, yoghurt, eggs, sugar, vanilla and Nutella. Pour this mixture into the puff pastry and bake for + / - 30 minutes.
Remove from oven, let cool and sprinkle with powdered sugar.

Depois de quase um mês de pausa para férias, volto com uma receita que inventei com os poucos ingredientes que tinha no frigorífico. Fi-la a pensar na minha filhota, que adorou e, em conjunto com o pai, deu o nome de Morangão Folhado a esta tarte, que ficou rectangular porque não havia tarteira à mão.
Só posso dizer que ficou deliciosa, leve e foi tão simples de fazer!

Ingredientes:

400g de morangos
açúcar em pó

Pré-aquecer o forno a 180ºC.
Forrar um tabuleiro rectangular com a base de massa folhada e reservar. Numa tigela misturar o queijo mascarpone, os ovos, o açúcar, a baunilha e o iogurte até se obter um creme suave. Deitar o creme no tabuleiro forrado com a massa folhada e levar ao forno durante cerca de 30 minutos.
Entretanto lavar e cortar os morangos às rodelas. Quando a tarte estiver cozinhada, retirar do forno e deixar arrefecer. Cobrir com filas de rodelas de morangos e polvilhar com açúcar em pó.



Ingredients:

1 base of puff pastry
400g of strawberries
icing sugar


Preheat oven to 180 º C.
Line a baking tray with rectangular base of puff pastry and reserve. In a bowl mix mascarpone cheese, eggs, sugar, vanilla and yogurt until you get a smooth cream. Pour the cream in the tray lined with the unbaked puff pastry and bake for about 30 minutes.
Meanwhile wash and cut the strawberries into slices. When the pie is cooked, remove from oven and let it cool. Cover with rows of sliced ​​strawberries and sprinkle with powdered sugar.

Nos dias de Verão custa-me sair de casa, da parte da tarde, para ir às compras. E como hoje só precisava de pão, preferi ligar o forno a sair de casa. Saiu este pãozinho leve, estaladiço e esburacado que os meus filhos adoraram.

Ingredientes:
500g de farinha de trigo
350g de água tépida
1 pitada de sal
1 1/2 colher de chá de fermento desidratado

Deitar a farinha numa tigela funda, no centro deitar o fermento, o sal e a água. Misturar tudo e amassar por uns minutos até a massa começar a despegar das mãos. Deixar levedar até dobrar de volume (+/- 1 hora).
Passado esse tempo moldar os pães (pode-se rechear o pão com chouriço) e deixar levedar por mais 30 minutos. Levar a forno pré-aquecido a 200ºC durante 20 minutos.



Ingredients:

Tinha 4 posta de pescada no congelador e não me apetecia fazer peixe cozido, por isso lembrei-me de fazer estes rissóis que a minha mãe me ensinou a fazer quando eu era pequenita.
Fiz esta massa a dobrar e rendeu cerca de 40 rissóis.


I had four slices of hake in the freezer and did not feel like making boiled fish, so I remembered to make these rissoles that my mother taught me when I was a little girl.
I made the double of this dough and yielded about 40 rissoles..


Ingredientes:
4 postas de pescada
1 copo de miolo de camarão
2 colheres de sopa de margarina
2 colheres de sopa de farinha
cerca de 500ml de leite (eu faço a olho porque a quantidade de leite varia sempre)
noz moscada
1 gema de ovo
sal
salsa
sumo de limão

Cozer a pescada e o camarão. Escorrer e desfiar o peixe e cortar o camarão em pedaços pequenos.
Levar a margarina ao lume e quando estiver derretida, juntar a farinha. Mexer bem e deixar a farinha cozinhar, mas com cuidado para não deixar queimar. Juntar o leite aos poucos até se obter um bechamel espesso. Temperar com sal e noz moscada. Juntar o peixe e o camarão, envolver, juntar a gema de ovo e mexer. Deixar cozinhar por um minuto. Adicionar a salsa e umas gotas de sumo de limão. Deixar o creme arrefecer antes de rechear a massa dos rissóis.
Agora é só rechear a massa, passar por ovo e pão ralado e fritar. Bom apetite!



Ingredients:

Os meu filhos adoram ajudar na cozinha e desta vez apareceram-ne na cozinha já de avental e prontos a trabalhar. Eu ia fazer almôndegas e eles começaram logo a dar sugestões! A primeira foi o molho não levar tomate, a segunda foi substituir o esparguete por legumes e a terceira foi levar queijo e natas. E foi assim que nasceu esta receita que ficou deliciosa! Ficou excelente para as crianças comerem os legumes que geralmente recusam, o que não admira, pois esta receita saiu da cabeça de duas crianças :)

Ingredientes:
3 peitos de frango
8 fatias de bacon
50g de chouriço
50g de queijo parmesão ralado
1 ovo
miolo de duas fatias de pão
oregãos
salsa picada
3 dentes de alho
2 batatas
brócolos
3 cenouras
1 pacote de natas de soja
1 mão de mistura de 4 queijos
1 cebola
1 folha de louro
sal qb
2 colheres de sopa de azeite
1 copo de vinho branco

Picar a carne, o bacon e o chouriço e colocar numa tigela. Juntar o queijo parmesão ralado, o miolo de pão esfarelado, a salsa, os oregãos, 2 dentes de alho picados e o ovo. Misturar todos os ingredientes até se obter uma mistura homogénea. Moldar as almôndegas e reservar.
Num tacho, aquecer o azeite. Juntar a cebola e o dente de alho picados. Deixar cozinhar até ficar translúcida. Nesta altura deitar as almôndegas e deixar cozinhar durante 3 minutos.
Deitar as batatas e as cenouras cortadas em cubos e regar com o vinho. Juntar o louro, temperar com sal e deixar cozinhar até as batatas e as cenouras estarem quase cozidas (se for necessário, juntar água).
Juntar os brócolos e deixar cozer. Quando estes estiverem cozidos juntar as natas e deixar levantar fervura e retirar do lume. Adicionar a mistura de queijos, misturar e servir.


Ingredients:
3 chicken breasts
8 slices bacon
50g chorizo
50g grated parmesan cheese
1 egg
kernels of two slices of bread
oregano
chopped parsley
3 cloves of garlic
2 potatoes
broccoli
3 carrots
1 package of soy cream

1 bay leaf

Mince the meat, bacon and sausage and place in a bowl. Add the grated Parmesan cheese, the bread crumbs, parsley, oregano, 2 cloves minced garlic and egg. Mix all the ingredients until a homogeneous mixture. Shape the meatballs and set aside.
In a pan, heat the olive oil. Add the onion and a clove of minced garlic. Let cook until translucent. At this point lay the meatballs and cook for 3 minutes.
Pour the potatoes and carrots cut into cubes and sprinkle with the wine. Add bay leaf, season with salt and cook until the potatoes and carrots are almost cooked (if necessary, add water).
Add broccoli and cook. When the broccoli is cooked add the cream and bring it to a boil. Remove from heat. Add the mixture of cheese and serve.

As férias de verão começaram! / Summer holidays has begun
A escola acabou! A minha filhota já vai para o 3º ano e o meu filhote acabou agora a primeira etapa da vida dele. A escola primária ficou para trás e em Setembro irá começar o 5º ano. É com muito orgulho que escrevo isto, pois apesar de todas as adversidades, os meus filhos conseguiram terminar mais um ano com sucesso.
Agora chegou a hora de descansar, brincar, passear, ir à praia e.... brincar! Muito!
Mas os conhecimentos que receberam transparecem nas brincadeiras e foi assim que ontem fui dar com um esqueleto feito de imans :)

Os rissois preferidos dos meus filhos, são os de queijo e fiambre. Este recheio é feito com o queijo "A Vaca que ri!" que os meus filhos adoram. Normalmente comem o queijo com pão ou com uma peça de fruta, mas desta vez o queijo teve outro fim :)

My kids favorite patties are the ones filled with cheese and ham. This stuffing is made with"The Laughing Cow!" cheese  that my kids love. They usually eat this cheese with bread or a piece of fruit, but this time the cheese had another purpose :)


Ingredientes:

para a massa dos rissois:
1 chávena almoçadeira de farinha
1 chávena almoçadeira de água
casca de 1 limão
2 colheres de azeite
sal qb
3 ovos
pão ralado
óleo

para o recheio:
400g de fiambre da pá
12 triângulos de queijo "A Vaca que ri"

Por a água a ferver com o sal, azeite e a casca de limão. Deitar a farinha e mexer rapidamente. Deixar a massa cozer em lume brando durante cerca de 15 minutos, mexendo com frequência a massa.
Tira-se do tacho, deita-se numa superfície ligeiramente enfarinhada e amassa-se até despegar das mãos (cuidado para não queimar as mãos). Embrulhar numa toalha de pano e deixar arrefecer.

Entretanto fazer o recheio. Picar o fiambre na picadora de carne e deitar numa tigela. Juntar os triângulos de queijo e misturar tudo com um garfo. Levar ao frigorífico.

Estender a massa dos rissois, colocar uma colher de sobremesa de recheio em cima da massa e dobrar a massa sobre o recheio. Cortar com um copo ou com um cortador de rissois.

Passar os rissois pelo ovo batido e de seguida pelo pão ralado. Fritar em óleo quente.


Ingredients:

Boil water with salt, olive oil and lemon peel. Pour the flour and stir quickly. Leave the dough over a low heat for about 15 minutes, stirring frequently the dough. Take it off the pan, pour in a lightly floured surface and knead until it doesn't stick to your hands (careful not to burn your hands). Wrap with a cloth towel and let cool.

Meanwhile make the filling. Chop the ham in the meat grinder and pour into a bowl. Add the triangles of cheese and mix with a fork. Take to the refrigerator.

Roll out the dough patties, place a teaspoon of filling on top of the dough and fold the dough over the filling. Cut with a glass or a patty cutter.

Cover the patties with beaten egg and then the breadcrumbs. Fry in hot oil.
