Uma das memórias que eu tenho de criança, é o chegar a casa e sentir o cheiro a pães de leite acabadinhos de fazer em forno de lenha. Agora que eu tenho filhos, olho para eles e relembro-me das coisas que a minha mãe fazia por mim e pelo meu irmão. Nos anos 80 as coisas não foram fáceis, mas a minha mãe dava a volta à situação e nunca nos faltou nada na mesa. Fazíamos criação de animais, tínhamos uma horta grande o suficiente para produzir para nós e também para vender uma parte, a minha mãe fazia comida para fora e fazia crochet também para vender. Isto enquanto o meu pai estudava em Lisboa para subir na carreira e subir de posto na Marinha Portuguesa, para nos poder dar uma vida mais desafogada.
Mas apesar de tudo isto, a minha mãe tinha sempre um mimo à nossa espera e a nossa casa cheirava sempre a algo delicioso! Não era grande pasteleira, e lembro-me dela tirar bolos do forno e ficar furiosa por sairem mal e ameaçar atirar com tudo no lixo. Mas nós comiamos consolados, pois a nossa mãe tinha feito tudo aquilo por amor a nós.
Uma das coisas que me lembro melhor era das dezenas de bolos-rei que ambas fazíamos no Natal para depois congelar e comer durante o ano. O que eu me divertia a decorar os bolos! Mas a recordação que guardo com mais saudade era o cheiro de pães de leite que a minha mãe fazia.
Lembro-me de chegar a casa com colegas de escola, ou o meu irmão convidar os amigos para lanchar na nossa casa e a mesa enchia-se de pães de leite fofinhos e que cheiravam tão bem! E assim nós comíamos e víamos a minha mãe feliz nos fazer felizes com algo tão simples!
Infelizmente a minha mãe perdeu a receita quando mudámos para Lisboa e já não se lembra das quantidades dos ingredientes. Há já algum tempo que tento recriar os pães de leite que a minha mãe fazia e ontem consegui chegar ao resultado perfeito para mim! Deliciosos, fofinhos e com um cheirinho maravilhoso, tal como me lembro de quando era criança! Juro que quando provei os pães de leite, até me vieram as lágrimas aos olhos por ter conseguido. Acho que estou a ficar velha...


One of the memories I have as a child, is coming home and smell the milk bread fresh out of the wood oven. Now that I have children , I look at them and remind me of the things my mother did for me and my brother. In the '80s things weren't easy, but my mother could turn the situation around and we never lacked anything on the table. We breeded animals such as chicken, rabbits, turkeys, had a piece of land large enough to produce for us and also to sell a part, my mother used to make food to sell for restaurants and also made crochet to sell. This while my father studied in Lisbon to rise in rank in the Portuguese Navy, to be able to give us a more comfortable life.
But despite all this, my mother always had a treat waiting for us and our house always smelled like something delicious! She wasn't a great baker, and I remember her taking cakes from the oven and be furious because it turned out bad and threatening to throw everything in the garbage. But we ate comforted, because our mother had done everything for love.
One of the things I remember best was the dozens of king-cakes we both did at Christmas and then freeze and eat during the year. I really enjoyed decorating the cakes! But the memory I keep with more longing was the smell of milk bread my mom used to make.
I remember coming home with schoolmates, or my brother would invite friends for a afternoon snack at our home and the table was filled up with fluffy milk breads and they smelled so good! And so we would eat and see my mother happy for making us happy with something so simple!
Unfortunately my mother lost the recipe when we moved to Lisbon and she doesn't remember the quantities of the ingredients. For some time now that I try to recreate the milk bread my mom used to make, and yesterday I managed to get the perfect result for me! Delicious, fluffy and with a wonderful smell as I remember when I was a child! I swear that when I tasted the milk bread it made tears to my eyes for being able to achieve my goal. I think I may be getting old...


PÃES DE LEITE

Tempo de preparação: 2 horas

Ingrediente principal: Farinha, leite
Rende 8 pães de leite

Ingredientes:
500g de farinha
200g de leite morno
60g de açúcar
2 ovos
25g de fermento fresco
60g de manteiga à temperatura ambiente
1 ovo para pincelar


Dissolver o fermento na leite e misturar todos os ingredientes na tigela de uma batedeira, à excepção da manteiga. Quando os ingredientes estiverem todos bem incorporados e juntar a manteiga e bater mais um pouco até a manteiga ficar bem incorporada na massa.
Polvilhar a bancada de trabalho com farinha e amassar a massa à mão até a massa se descolar das mãos. Colocar num alguidar polvilhado com farinha, tapar com um pano e deixar levedar durante cerca de 1 hora ou até dobrar o volume.
Dividir a massa em várias porções (eu dividi em 8 porções) e fazer bolinhas. Espalmar as bolas de massa até se obter um círculo, dobrar um lado até ao centro do círculo e pressionar. Pegar no outro lado e dobrar até ao centro e beliscar a massa para ficar colada, de forma a ficar com um cilindro. Viram-se ao contrário e colocam-se os pães de leite num tabuleiro forrado com papel vegetal. Deixam-se levedar durante 40 minutos. Ao fim desse tempo fazem-se cortes com uma tesoura de cozinha na parte superior dos pães de leite, pincelam-se com ovo batido e levam-se ao forno pré-aquecido a 180ºC durante 15 minutos ou até ficarem dourados. Quando se bater no pão de leite e este fizer um som oco é porque está cozido e pode ser retirado do forno.

NOTA:
Depois de arrefecerem, estes pães de leite podem ser congelados para se ter durante toda a semana  para pequenos almoços e para os lanches da escola.


MILK BREADS

Preparation time: 2 hours

Yields 8 milk breads

Ingredients:
500 g of all purpose flour
200 g warm milk
60 g of sugar
2 eggs
25 g fresh yeast
60 g of butter at room temperature
1 egg to brush


Dissolve the yeast in the milk and mix all the ingredients in the bowl of an electric mixer, with the exception of the butter. When the ingredients are all well incorporated and add butter and beat another minute.
Sprinkle the worktop with flour and knead the dough by hand until the dough comes off the hands. Place in a bowl sprinkled with flour, cover with a cloth and let rise for about 1 hour or until doubled in volume.
Divide the dough into several portions (I divided it into 8 portions) and make small balls. Flatten the dough balls to a circle, fold one side to the center of the circle and press. Get on the other side and fold to the center and pinch the dough to be glued, in order to get a cylinder. Turn upside down and place the milk breads on a tray lined with parchment paper. Let rise for 40 minutes. At the end of this time make cuts with scissors, brush with egg and bake in a preheated oven at 180ºC for 15 minutes or until golden brown. When you hit the milk bread and this makes a hollow sound is because it's cooked and can be removed from the oven.

NOTE:
After cool, these milk breads can be frozen to kave it for breakfast and school during all week.

Estes pães são resultado de diversas tentativas para chegar a um pão leve, fofinho e, acima de tudo saudável. Hoje voltei a tentar fazer estes pães e o resultado foi fantástico! Os meus filhos adoraram! São tão fofinhos e a massa não é seca e pesada, como às vezes acontece quando se usa farinha integral. E não são difíceis de fazer, requerem é um pouco de paciência.
Os meus filhos dizem que estes são, sem sombra de dúvida, os pães mais fofinhos e saborosos que já comeram! Muito melhores do que os de compra!
São uma opção bem mais saudável para o lanche das crianças!
Agora queria referir um ponto, eu, nesta receita, uso xarope de agave. Caso não o tenham podem usar mel, como já usei noutras versões, mas o mel tem um sabor mais acentuado que, para mim, não resulta tão bem no pão que eu queria obter. Eu uso também azeite, mas convém ser um azeite com um sabor mais suave.

These buns are a result of several attempts to reach a light, fluffy and above all healthy bread. Today I tried again to make these buns and the result was fantastic! My kids loved it! They are so fluffy and the dough it's not dry and heavy, as sometimes happens when using wholemeal flour. And it is not difficult to make, just requires a little patience.
My kids say these are, without a doubt, the fluffy and tastiest bread they they have ever eaten! Much better than the bought ones!
This is a much healthier option for the children's school snacks!
Now I wanted to mention one point, in this recipe, I use agave syrup. If you don't have it you can use honey, as I already used in other versions of this bread, but honey has a stronger flavor that, to me, does not work so well in the bread that I wanted to get. I also use olive oil, but it should be an oil with a milder flavor.




PÃES FOFINHOS INTEGRAIS

Ingrediente principal: Farinha integral, xarope de agave, azeite
Rende 8 pães
Prato: Pão

Ingredientes:
2 copos + 4 colheres de sopa de farinha integral
2 copos de farinha sem fermento
25g de fermento fresco
1/4 copo de xarope de agave
1 pitada de flor de sal
1 1/2 copo de água tépida
1/3 copo de azeite
1 ovo pequeno

Colocar na tigela do robot de cozinha, 1 copo de farinha integral, 1 copo de farinha sem fermento, o agave, o sal e a levedura dissolvida na água tépida. Amassar até se obter uma massa homogénea. Sem parar de amassar, juntar o ovo batido e o azeite.
Quando o ovo e a azeite estiverem incorporados na massa, juntar a pouco e pouco a restante farinha, até esta ficar incorporada.
Polvilhar a bancada de trabalho com farinha e amassar à mão a massa até a massa se despegar das mãos. Juntar mais farinha se for necessário. É suposto a massa ficar muito macia. Não se deve amassar demais, para o pão não ficar duro e pesado.
Colocar a massa num alguidar polvilhado com farinha e deixar levedar durante 1 hora num local quente e livre de correntes de ar.
Ao fim desse tempo amassar a massa e moldar bolinhas do tamanho que se desejar. Colocar num tabuleiro polvilhado com farinha e deixar repousar cerca de 30 minutos.
Levar ao forno pré-aquecido a 180ºC durante 15 minutos. Quando se bater no pão e fizer um som oco, é porque o pão está cozido.




FLUFFY WHOLEWHEAT BUNS

Prep Time: 1h30m + 15 m

Main Ingredient: Whole flour, agave syrup, olive oil
Makes 8 buns
Dish: Bread

Ingredients:
2 cups + 4 tablespoons wholewheat flour
2 cups all purpose flour
25g fresh yeast
1/4 cup agave syrup
1 pinch of Fleur de salt
1 1/2 glass of warm water
1/3 cup olive oil
1 small egg

Place in a mixer bowl, 1 cup wholewheat flour, 1 cup all purpose flour, agave, salt and the yeast dissolved in warm water. Knead until the dough has no lumps. While kneadding, add the beaten egg and olive oil.
When the egg and olive oil are incorporated into the dough, add little by little the rest of the flour until it is incorporated.
Sprinkle work surface with flour and knead the dough by hand until the dough doesn't stick to your hands. Add more flour if necessary. It's supposed to be a very soft dough. It shouldn't knead to much, so the bread does not get tough and heavy.
Place the dough in a bowl dusted with flour and let rise for 1 hour in a warm place, free from drafts.
At the end of that time knead the dough and make balls the size that you desire. Place on a tray dusted with flour and let stand about 30 minutes.
Bake in a preheated oven at 180°C for 15 minutes. When you hit the bread and it makes a hollow sound, it's because the bread is baked.

Churros

Há algo especial no sabor dos fritos. Pricipalmente se forem fritos doces! Eu evito a todo custo fazer fritos, pelo facto de serem tão pouco saudáveis. Mas às vezes só um docinho frito é que nos sacia! Este fim de semana não me saiam da cabeça os churros que se vendem na Rua dos Pescadores na Costa da Caparica, mas como não me apetecia ir para o meia da confusão fiquei apenas a sonhar com eles.
Mas sonhar não chegava.... então lembrei-me destes churros do livro "Cozinha, o coração da casa" da Nigella Lawson. São tão rápidos de fazer, tão simples, tão deliciosos e tão económicos!
Depressa fui para a cozinha e rapidamente apareceram estes churros lindos e deliciosos! Eu apenas comi 2 porque ainda fiquei a arrumar a cozinha e os meus filhos acabaram com eles! O exterior é estaladiço e o interior macio, uma verdadeira maravilha! Sublimes!

There is something special in the taste of fried food. Specially if it's sweet fried food! I avoid at all costs making fried food, because they are so unhealthy. But sometimes just a sweet fried treat is what we need! This weekend I couldn't get out of my head the churros that are sold at the Fishermen Street in Costa da Caparica, but didn't feel like going to the middle of the croud, I decided to day dream about them.
But dreaming wasn't enough.... then I remembered these churros in the book "Kitchen, the heart of the house" by Nigella Lawson. They are so quick to make, so simple, so delicious and so economical!
Quickly went to the kitchen and quickly appeared these beautiful and delicious churros! I just ate 2 because I stayed in the kitchen cleaning up and my kids ate it all! The outside is crispy and the inside soft, a true delight! Sublime!




CHURROS

Ingrediente principal: Farinha, azeite, canela, chocolate
Rende 16 churros

Ingredientes:

para os churros:
125g de farinha sem fermento
1 colher de chá de fermento
1 colher de sopa de 15ml de azeite
250 ml de água a ferver

açúcar e canela para polvilhar os churros
óleo para fritar

para o molho de chocolate:
100g de chocolate negro
25g de chocolate de leite
1 colher de sopa de 15ml de mel de cana
150ml de natas

Procedimento:

Misturar o açúcar e a canela num prato e reservar.

Derreter os ingredientes do molho de chocolate numa caçarola e, quando o chocolate começar a derreter, misturar até ficar um creme suave. Retirar do lume e reservar.

Para fazer os churros, deitar a farinha e o fermento numa tigela. Juntar o óleo e a água a ferver. Misturar rapidamente até se obter uma bola de massa sem grumos. Deixar repousar 10 minutos.
Entretanto aquecer o óleo. Encher um saco de pasteleiro, munido de uma ponta em estrela larga (8mm), com a massa dos churros e espremer pedaços de 5 cm de massa para dentro do óleo, cortando a massa com uma tesoura.
Fritar vários de uma vez e retirar quando estiverem dourados. Escorrer em papel de cozinha e passar com açúcar e canela. Deixar repousar durante 10 minutos (se conseguirem).
Servir com o molho de chocolate.


CHURROS

Makes 16 churros

Ingredients:

for the churros:
125g plain flour
1 teaspoon baking powder
1 tablespoon olive oil (15ml)
250 ml of boiling water

sugar and cinnamon to sprinkle the churros
oil for frying

for the chocolate sauce:
100g dark chocolate
25g milk chocolate
1 tablespoon golden syrup (15ml)
150ml double cream

Procedure:

Mix sugar and cinnamon on a plate and reserve.

Melt the chocolate sauce ingredients in a saucepan and when the chocolate begins to melt, mix until smooth. Remove from heat and reserve.

To make the churros, pour the flour and baking powder in a bowl. Add the olive oil and boiling water. Quickly mix until you get a dough ball without lumps. Let stand 10 minutes.
Meanwhile heat the oil. Fill a pastry bag provided with a large-tip star (8mm) with the churros dough and squeeze pieces of 5 cm into the oil, cutting the dough with a scissor.
Fry several at once and remove when they are golden. Drain on kitchen paper and sprinkle with sugar and cinnamon mixture. Allow to stand for 10 minutes (if you can resist!).
Serve with chocolate sauce.

Agora está muito na moda fazer bolos e bolachas com chá verde, mas confesso que não sou grande apreciadora desse chá. Prefiro chá de lúcia-lima, de limão, de tília ou de camomila.
Este bolo nasceu de uma ideia que tive para aproveitar uns pacotes de chá que precisavam de ser consumidos antes da data de validade acabar. Eu bebo pouco chá, por isso de vez em quando preciso de dar um fim ao chá que tenho na dispensa. Desta vez fiz este bolo, que ficou esplêndido, apesar de ter saído de improviso.
Um bolo fofo, húmido e com um aroma delicioso de camomila. O xarope confere uma humidade extra e um ligeiro sabor a mel, pois é feito com açúcar amarelo. Resumindo, parece que estamos a comer uma chávena de chá com mel!

Now is very usual to bake cakes and cookies with green tea, but I confess that I'm not fond of this tea. I prefer lemon verbena, lemon, tilia or chamomile tea.
This cake was born from an idea I had to use some tea bags that needed to be consumed before the expiry date is over. I rarely drink tea, so from time to time I need to put an end to the tea I have in the pantry. This time I baked this cake, which was splendid, though it came out of improvisation.
A fluffy cake, moist and with a delicious aroma of chamomile. The syrup gives one extra moisture and a slight honey flavor, because it's made ​​with brown sugar. In short, it seems that we're eating a cup of tea with honey!





BOLO DE CAMOMILA

Tempo de preparação: 40 minutos
Dificuldade: Fácil

Ingrediente principal: Camomila
Para 8 pessoas
Prato: Bolo
Tipo de cozinha: Pastelaria


Ingredientes:

1 chávena de farinha de trigo sem fermento
4 saquinhos de chá de camomila
1/2 colher de chá de fermento em pó
1 chávena de açúcar
4 ovos
6 colheres de sopa de Becel líquida

para o xarope de camomila:

1 saquinho de chá de camomila
125ml de água
125g de açúcar amarelo 

Pré-aquecer o forno a 180ºC e untar e polvilhar com pão ralado uma forma de  bolos com chaminé.
Colocar o conteúdo dos saquinhos de chá num moinho de café e moer até picar em pó (vão ficar uns pedaços ligeiramente maiores, mas não faz mal. Depois do bolo feito não se vai sentir).
Numa tigela colocar todos os ingredientes secos e misturar. Juntar os ovos e a Becel líquida e misturar bem.
Deitar a massa na forma e levar ao forno durante 30 minutos.

Entretanto faz-se o xarope de camomila, fervendo o açúcar e a água num tacho durante 5 minutos, juntando o saquinho de chá quando faltar 1 minuto para o fim do tempo.

Retirar o bolo do forno e desenformar. Furar o bolo com um palito e deitar o xarope de camomila a ferver por cima.



CHAMOMILE CAKE 

Preparation time: 40 minutes

Ingredients:

1 cup of all purpose wheat flour
4 tea bags of chamomile
1/2 teaspoon baking powder
1 cup sugar
4 eggs
6 tbsp liquid Becel

for the chamomile syrup:

1 bag of chamomile tea
125ml water
125g brown sugar

Preheat oven to 180 º C and grease and sprinkle with breadcrumbs a baking pan with chimney.
Place the contents of teabags in a coffee grinder and grind (some pieces will be slightly bigger, but it 's ok. You won't notice it when you eat the cake).
In a bowl place all dry ingredients and mix. Add the eggs and liquid Becel and mix well.
Pour the batter into the pan and bake for 30 minutes.

Meanwhile make the chamomile syrup by boiling the sugar and water in a saucepan for 5 minutes, adding the teabag when it's one minute to the end of time.

Remove cake from oven and unmold. Pierce the cake with a toothpick and pour the boiling chamomile syrup over it.

Todos nós gostamos de uma bolachinha de queijo, mas infelizmente fazem tão mal à saúde, que nos vemos forçados a evitá-las. As bolachas de compra contêm tantos aditivos, alguns dos quais dificeis de pronunciar, por isso, quando passo por elas no supermercado, procuro nem olhar para evitar a tentação, pois, apesar de deliciosas, são puro veneno!
Deste modo entrei numa busca pela receita mais saudável destas bolachas que eu conseguisse encontrar. Claro que não são completamente saudáveis, pois levam manteiga e o queijo, mas algo tem de dar sabor a estas bolachas! ;-)
Não deixem que o aspecto integral destas bolachas  vos engane, pois são tão crocantes e deliciosas, excelentes para os lanches das crianças e adultos.
Estas bolachas têm também a particularidade de se poder congelar as bolachas já cortadas para fazer mais tarde, como por exemplo, no caso de terem visitas de última hora. Assim rapidamente se cozem as bolachas, que farão as delícias dos vossos convidados.

These crackers also have the particularity of being able to freeze already cut to bake later, for example, in case of having a last minute guests. That way you quickly bake these crackers that will delight your guests.



BOLACHAS DE PARMESÃO E GÉRMEN DE TRIGO

Ingrediente principal: Queijo Parmesão, Gérmen de trigo
Rende 4 dúzias de bolachas
Prato: Bolachas salgadas

Ingredientes:

3/4 chávena de gérmen de trigo
3/4 chávena de farinha de trigo integral
1/2 chávena de queijo parmesão ralado
1/2 colher de chá de sal
1/4 chávena de manteiga fria cortada em cubos
1/4 de chávena de água gelada

Pré-aquecer o forno a 180ºC.
Colocar o gérmen de trigo, a farinha, o queijo e o sal numa tigela. Misturar.
Adiciona-se a manteiga e trabalhar rapidamente com os dedos.
Junta-se a água e trabalha-se a massa rapidamente até formar uma bola.
Faz-se um disco com a massa e embrulha-se em película aderente e leva-se ao congelador durante 5 minutos.
Estende-se a massa até ter cerca de 5 mm e cortam-se, com a ajuda de pequenos cortado res de bolachas, as bolachas com a forma que se desejar. Colocam-se as bolachas num tabuleiro forrado com papel vegetal e salpicam-se com flor de sal.
Vão ao forno durante 15minutos ou até ficarem douradas.
Em alternativa, podem-se cortar as bolachas e, de seguida colocam-se num saco de congelação, retira-se o ar e congelam-se. Depois basta retirar do congelador e colocar num tabuleiro forrado com papel vegetal e levar ao forno durante mais uns minutos para além dos 15 minutos.


WHEAT GERM PARMESAN CRACKERS

Main ingredient: Parmesan, wheat germ
Makes 4 dozen cookies
Dish: Crackers

Ingredients:

3/4 cup wheat germ
3/4 cup of whole wheat flour
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 cup cold butter, cut into cubes
1/4 cup cold water

Preheat oven to 180ºC.
Place the wheat germ, flour, cheese and salt in a bowl. Mix.
Add the butter and work quickly with your fingers.
Pour the water and work the dough quickly to form a ball.
Shape the dough into a disc and wrap in cling film and place in the freezer for 5 minutes.
Roll out the dough to be about 5 mm thick and cut with the help of small cookie cutter. Place the crackers on a baking tray lined with parchment paper and sprinkle with fleur de sel.
Bake for 15 minutes or until golden.

Comida caseira congelada (1ª parte) - Molho de tomate / Homemade frozen food (Part 1) - Tomato sauce
Agora que as férias estão a terminar e as aulas estão prestes a começar, volto a deparar-me com o dilema dos almoços para as crianças levarem para o colégio. Geralmente levanto-me cedo para fazer o almoço antes deles acordarem, mas confesso que há dias em que levantar cedo se torna difícil. É nesses dias que recorro ao  meu congelador!
Este post vem a propósito de me terem pedido sugestões de comidas capazes de serem congeladas. Será o primeiro de vários posts sobre comida para guardar no congelador, para nos facilitar a vida naqueles dias em que precisamos de um atalho para despachar o almoço, o jantar ou os lanches.
A minha primeira sugestão é o molho de tomate. Faço-o em grandes quantidades e depois divido-o em pequenas porções e vou utilizando à medida que preciso. Congelar em pequenas porções tem como objecto, ser haver menos desperdício quando apenas quero uma pequena quantidade para cobrir uma pizza.
O molho de tomate é tão simples de fazer e depois de descongelado, não se verifica nenhuma alteração no aspecto nem no sabor, desde que devidamente acondicionado. É o que se pode verificar neste prato, em que utilizei molho de tomate congelado e rapidamente compus este acompanhamento para uns deliciosos bifes de vitela.




Now that the holidays are almost over and school are about to start, I face the dilemma of lunches for my children take to school. Usually I get up early to cook before they wake up , but I confess that there are days when it is difficult to get up early . On these days I turn to my freezer !
Someone asked me asked for suggestions of foods capable of being frozen and this will be the first of several posts about food to store in the freezer, to make your life easier on those days when we need a shortcut to get lunch , dinner or snacks ready in no time.
My first suggestion is the tomato sauce. I cook this in bulk and then divide it into smaller portions and use as I need . Freezing in small portions has the purpose of having less less waste when you only want a small amount to cover a pizza, for example.
The tomato sauce is so simple to make and once thawed , there isn't any change in the appearance or flavor, if properly stored . It's what happenned with this dish (picture above), on which I used frozen tomato sauce and quickly composed this stuffed jumbo shells that were eaten with to some delicious veal steaks.


MOLHO DE TOMATE CASEIRO

Tempo de preparação: 40 minutos
Dificuldade: Fácil

Ingrediente principal: Tomate, cebola
Prato: Molho


Ingredientes:
2 kg de tomate maduro
2 cebolas grandes
3 dentes de alho grandes
oregãos
4 colheres de sopa de azeite
sal e pimenta
1 colher de chá de açúcar
1/2 copo de vinho branco
piri-piri (opcional)

Começa-se por descascar o tomate e parti-lo em pedaços. Descasca-se as cebolas e picam-se grosseiramente. Faz-se o mesmo aos dentes de alho.
Aquece-se uma frigideira larga com o azeite e deita-se a cebola e o alho. Deixa-se cozinhar em lume brando até a cebola estar translúcida. Nessa altura adiciona-se o tomate e tempera-se com sal, pimenta, oregãos e o piri-piri (caso opte por adicionar).
Deixa-se ferver durante alguns minutos e adiciona-se o vinho e o açúcar. Cozinha em lume brando até ao molho reduzir um pouco e o tomate se desfazer.
Deixar arrefecer e distribuir por caixas de plástico herméticas adequadas à congelação. Identifica-se o conteúdo e a data de produção. Coloca-se no congelador até ao dia de utilização.
Agora é usar a imaginação! Seja simples com massa de esparguete ou para criar o molho de umas deliciosas almôndegas, este molho de tomate congelado, vai encurtar o tempo de permanência na cozinha naqueles dias em que todo o tempo é pouco para tudo o que precisamos fazer.


HOMEMADE TOMATO SAUCE

Preparation time : 40 minutes

Main ingredient : Tomatoes, onions

Ingredients:
2 kg of ripe tomato
2 large onions
3 large cloves of garlic
oregano
4 tablespoons olive oil
salt and pepper
1 teaspoon sugar
1/2 cup white wine
chili pepper (optional)

Start by peeling the tomatoes and cut it into pieces. Peel the onions and chop into small pieces. Do the same to garlic cloves .
Heat a large skillet with olive oil and pour the onion and garlic . Let it cook on low heat until onion is translucent. At this point add the tomatoes and season with salt, pepper, oregano and chili pepper (if you choose to add it).
Allow to boil for a few minutes and add the wine and sugar. Cook over low heat until the sauce reduce a bit and tomatoes get soft.
Allow to cool and distribute into plastic airtight boxes suitable for freezing. Identify the content and date of production. Store in the freezer until the day of use.
Now is use your imagination! Using it simple with pasta or to create a delicious sauce for your meatballs, this frozen tomato sauce will shorten the time spent in the kitchen on those days that you need all the time you can get, but still have a delicious homemade meal.

Os meus filhos adoram queijo mozzarella. Seja fresco, fatiado, derretido, em saladas, na massa, eles adoram!
Esta ideia surgiu quando eu me preparava para temperar umas azeitonas, mas como não as tinha, lembrei-me destas bolinhas deliciosas de mozzarells e, assim, nasceram estas pequenas delícias salgadas. As crianças devoraram o queijo e os adultos, que geralmente não ligam muito ao queijo mozzarella, também adoraram!

This idea came about when I was preparing to season some olives, but as there was no olives in my fridge, I remembered these delicious balls of mozzarells and thus were born these little savory delights. The kids loved these marinated cheese balls and the even the adults loved it!

Colocar as bolinhas de queijo mozzarella numa tigela. Descascar e esmagar os dentes de alho e adicionar ao queijo. Adicionar também os oregão, o sal e a pimenta.
Comer na hora, mas fica melhor se deixarem repousar pelo menos 1 hora.


MARINATED CILIEGINE

Preparation time: 5 minutes + resting

Ingredients:
1 pack of ciliegine
oregano
2 cloves of garlic
salt
freshly ground black pepper

Place the balls of mozzarella cheese in a bowl. Peel and crush the garlic cloves and add it to the cheese. Also add the oregano, salt and pepper.
It's ready to eat, but it tastes better if you let it stand at least 1 hour in the fridge.

Por vezes, ao abrir o frigorífico, deparo-me com restos de comida e embalagens que estão prestes a passar a validade. Como deitar fora não é opção, um dia destes fiz esta mousse com uma embalagem de natas quase no fim de validade, uns iogurtes na mesma situação e um pacote de bolachas que andava enjoado e ninguém as comia.
Tão simples de fazer e rápida, esta mousse será uma sobremesa à qual vou recorrer mais vezes. Ficou tão saborosa, que a minha filha repetiu, e ela raramente repete as sobremesas!

Ingredientes:
4 iogurtes gregos naturais
200ml de natas
2 colheres de sopa de açúcar
1 folha de gelatina
1 colher de chá de essência de baunilha
1 embalagem de Bolachas Mulata moída grosseiramente

Começa-se por colocar a folha de gelatina de molho em água fria e, quando estiver macia, aquecer num tachinho ou no microondas até ficar líquida.
Numa tigela batem-se as natas em chantili com o açúcar e adiciona-se o iogurte e a baunilha, envolvendo delicadamente. Junta-se a gelatina derretida e volta-se a envolver.
Numa taça média de servir ou em taças individuais, coloca-se uma pequena camada de mousse de iogurte e cobre-se com a bolacha moída. Repetir a operação até não haver mousse e terminar com bolacha moída. Decorar a gosto e levar ao congelador durante 30 minutos e está pronto a servir!


YOGURT MOUSSE WITH COOKIES

Ingredients:
4 Greek natural yoghurt
200ml double cream

1 teaspoon vanilla extract
1 pack of Biscuit Mulata coarsely ground

Start by placing the sheet gelatin in cold water, and when soft, warm in the microwave until liquid.
In a bowl beat the cream with the sugar to get whipped cream and add the vanilla and yogurt, gently mixing. Add the gelatin and mix again.
In a medium serving bowl or in individual bowls, spread a small layer of yogurt mousse and cover with the ground cookies. Repeat the operation until there's no more mousse and finish with ground cookies. Garnish to taste and place in the freezer for 30 minutes and is ready to serve!

Um destes dias encontrei esta receita num papelinho dentro de um caderno de receitas. Como tinha um restinho de coco a pedir para ser utilizado, decidi fazer este bolo. É tão saboroso, leve e com um toque ácido do glacé de limão. A prova disso é o facto do bolo ter desaparecido no dia em que foi feito.
Para além de ser bonito visualmente, o sabor do limão vai estimular as vossas papilas gustativas e comer só uma fatia, vai ser tarefa difícil!

One of these days I found this recipe in a note inside a notebook. I had some coconut begging to be used, so I decided to make this cake. It's so tasty, light and with a touch of acid from the lemon glaze. The proof is the fact that the cake have disappeared the day it was made.
In addition to being beautiful visually, the lemon flavor will stimulate your taste buds and eating just one slice, it's going to be difficult task.


BOLO DE LIMÃO E COCO

Tempo de preparação: 50 minutos
Dificuldade: Fácil

Ingrediente principal: Limão, Coco
Para 6 pessoas

Tipo de cozinha: Pastelaria

Ingredientes:
1 chávena de açúcar
2 ovos
1/2 chávena de manteiga amolecida
raspa e sumo de 1 limão
1 1/2 chávena de farinha de trigo
1 colher de chá de fermento em pó
1/4 colher de chá de sal
1/2 chávena de leite
1/2 chávena de coco ralado

Glacé de limão:
3/4 chávena de açúcar em pó
2 colheres de chá de sumo de limão

Pré-aquecer o forno a 180ºC. Untar uma forma de bolo inglês com manteiga e polvilhar com pão ralado.
Bater o açúcar e a manteiga numa tigela. Adicionar os ovos, um de cada vez, batendo bem após cada adição. Junta-se o sumo e a raspa de limão.
Noutra tigela mistura-se a farinha, o fermento e o sal e adiciona-se à mistura de manteiga alternadamente com o leite, misturando até estar incorporada. Por último, junta-se o coco e mistura-se até se obter uma mistura uniforme. Colocar a massa na forma e levar ao forno durante cerca de 45 minutos ou até o palito sair limpo.
Quando estiver cozido, deixar arrefecer em cima de uma rede.
Entretanto faz-se o glacé de limão. Numa tigela pequena mistura o açúcar em pó com o limão até se obter uma mistura brilhante. Com um garfo, mergulha-se no glacé e rega-se o bolo formando linhas. Deixar o glacé solidificar e servir.


LEMON AND COCONUT CAKE

Preparation time: 50 minutes

Main ingredient: lemon, coconut
For 6 people

Type of cuisine: Bakery

Ingredients:
1 cup of sugar
2 eggs
1/2 cup of softened butter
zest and juice of 1 lemon
1 1/2 cup all purpose flour
1 tsp baking powder
1/4 teaspoon salt
1/2 cup of milk
1/2 cup of unsweetened shredded coconut

Lemon Glaze:
3/4 cup icing sugar
2 teaspoons lemon juice

Pre-heat the oven to 180°C. Grease a cake tin with butter and sprinkle with breadcrumbs.
Beat sugar and butter in a bowl. Add the eggs, one at a time, beating well after each addition. Add the lemon zest and the juice.
In another bowl mix the flour, baking powder and salt and add it to the butter mixture alternately with the milk, mixing until incorporated. Finally, add the coconut and mix. Put the batter in the cake tin and bake for about 45 minutes or until a toothpick comes out clean.
When it is cooked, let it cool on a rack.
Meanwhile make the lemon glaze. In a small bowl mix the icing sugar with the lemon until the mixture is shiny. With a fork, dip it in the glaze and make lines on the cake. Let the icing harden and serve.

Eu tiro inspiração de muitos livros, mas há um canal de televisão com programas deliciosos que me leva muitas vezes para a cozinha para experimentar novas receitas e novos sabores. Esse canal é o 24Kitchen. Um dos meus programas preferidos é o "Doce Diário" apresentado pela Rachel Allen. Todos os bolos apresentados neste programa têm um aspecto delicioso e são na sua maioria muito fáceis de fazer.
Esta semana enquanto pensava que bolo iria fazer para comemorar o meu aniversário de casamento, lembrei-me deste programa e de um bolo que vi esta semana, que me ficou na ideia. É tão simples de fazer e o cheiro é tão bom, que temos de resistir e não comer o bolo assim que sai do forno. A cobertura é igualmente deliciosa e muito cremosa, com um sabor amanteigado, doce e com aroma a baunilha. O crocante de amêndoa é a decoração mais saborosa que eu já coloquei num bolo! Resumindo, este bolo é delicioso e fica lindo! Perfeito para uma comemoração especial!

One of my favorite shows is "Cake Diary" presented by Rachel Allen. All cakes featured in this program look delicious and the majority is very easy to make.
This week as I thought what cake I would make to celebrate my wedding anniversary, I remembered this program and a cake I saw this week, that stayed on my mind. It is so simple to make and the smell is so good, that we must control ourselfs and not eat the cake right out of the oven. The iccing is also delicious and very creamy with a buttery flavor, and a sweet aroma to vanilla. The crunchy almond is the tastiest decoration I've ever put on a cake! In short, this cake is delicious and looks beautiful! Perfect for a special celebration!


BOLO DE AMÊNDO CROCANTE
(Retirado do programa "Doce Diário, Rachel Allen" - 24Kitchen)

Ingrediente principal: Amêndoa
Para 12 pessoas
Prato: Bolo, Sobremesa
Tipo de cozinha: Pastelaria

Ingredientes:

para o bolo

150 g de manteiga à temperatura ambiente
175 g de açúcar refinado
3 ovos grandes
150 g de farinha com fermento
1 colher de chá de fermento em pó
75 g de amêndoas moídas
2 colheres de chá de leite


para o crocante de amêndoa

óleo em spray para untar
100 g de açúcar granulado
100 g de amêndoas peladas inteiras


para a cobertura

225 g de manteiga à temperatura ambiente
450 g de açúcar em pó
1 colher de chá de extrato de baunilha


para os bolos
Pré-aquecer o forno a 180ºC. Untar duas formas de bolos 18 centímetros com um pouco de manteiga e cobrir as bases com papel manteiga.
Bater a manteiga e o açúcar até ficar leve e cremosa, em seguida, adicionar os ovos aos poucos, batendo bem entre cada adição. Peneirar a farinha e o fermento juntos, e adicionar à mistura de manteiga com as amêndoas moídas. Misture o leite.
Dividir igualmente pelas formas e assar durante 20 minutos.
Retire os bolos do forno quando eles estiverem prontos. Deixar arrefecer nas formas durante alguns minutos, em seguida, desenformar e deixar arrefecer numa rede.

Enquanto os bolos estão no forno, fazer o crocante de amêndoa. Primeiro, untar um tabuleir com um pouco de óleo em spray. Misture o açúcar e as amêndoas numa frigideira. ALMOND BRITTLE CAKE

For 12 people
Dish: Cake, Dessert
Type of cuisine: Pastry

Ingredients

for the cake

150 g butter
175 g caster sugar
3 large eggs
150 g self-raising flour
1 tsp baking powder
75 g ground almonds
2 tsp milk


for the almond brittle

spray vegetable oil, for greasing
100 g caster sugar
100 g unskinned whole almonds


for the almond butter icing

225 g butter
450 g icing sugar
1 tsp vanilla extract


for the cakes

Preheat the oven to 180ºC. Grease two 18cm cake tins with butter and line the bases with baking paper. 
Beat the butter and sugar together until light and creamy then gradually add the eggs, beating well between each addition. Sieve the flour and baking powder together then add to the butter mixture with the ground almonds. Stir in the milk. 
Divide equally between the prepared tins. Bake for 20 minutes.
Remove the cakes from the oven when they are ready. Leave to cool in the tins for a few minutes, then turn out and cool on a wire rack. 

for the almond brittle

While the cakes are baking, make the almond brittle. First, grease a baking sheet with the vegetable oil. Combine the sugar and almonds in a saucepan. Put over a medium-low heat until the sugar turns caramel colour, carefully rotating the pan until the almonds are covered – this will only take a few minutes. Very carefully pour the mixture onto the baking sheet to cool.
Take great care when making the caramel, because it reaches an extremely high temperature. Don't leave the saucepan unattended. 


for the icing
Beat the butter until soft then gradually beat in the icing sugar, using an electric mixer. Beat in the vanilla extract.

To assemble, slice both cakes horizontally so you have four layers. Spread the first layer with the butter icing and place the second layer on top, then repeat this operations with all layers. Spread the rest of the icing around the top and sides of the cake. 
Break the almond brittle and arrange on top of the cake.
