Havia uma maçã no cesto da fruta a pedir para ser comida, mas ninguém a quis comer. Triste por ser desprezada por quem a comprou na praça, chorava por ninguém gostar dela. Certo dia, pegaram nela e a maçã foi a estrela num bolo delicioso. E foi desta forma que todos em casa comeram a maçã e ela feliz por todos gostarem dela!

Ingredientes:
125g de manteiga
200g de açúcar
2 ovos
1 colher de chá de baunilha
150g de farinha de trigo
100g de farinha de trigo integral
1 colher de chá de fermento
1 maçã sem casca cortada em cubos
100g de nozes picadas grosseiramente
açúcar em pó e canela para polvilhar

Pré aquecer o forno a 180ºC. Untar com manteiga e polvilhar com pão ralado uma forma de bolo inglês.
Numa tigela bater a manteiga com o açúcar. Juntar os ovos e a baunilha e encorporar bem. Adicionar a farinha com o fermento e mexer a massa até ficar homogénea. Incorporar a maçã e as nozes e deitar na forma. Levar ao forno durante cerca de 45 minutos.
Ao fim desse tempo desenformar e polvilhar com açúcar em pó e canela.


Ingredients:
125g butter
200g sugar
2 eggs
1 teaspoon vanilla
150g plain flour
100g of whole wheat flour
1 teaspoon of baking powder
1 apple, peeled, diced
100g coarsely chopped walnuts
powdered sugar and cinnamon for sprinkling

Preheat the oven to 180 ° C. Grease with butter and sprinkle with breadcrumbs baking pan of pound cake.

No Natal comprei um livro que já andava a "namorar" há meses "Le grand livre Marabout de la pâtisserie facile". Tem 600 receitas, cada uma mais deliciosa que a outra, já para não falar das imensas técnicas de pastelaria.
Tenho andado indecisa sobre qual seria a primeira receita a ser feita e acabei por me decidir por este bolo. Este bolo ficou como um dos meus preferidos! Mesmo muito saboroso!

Last month I bought a book that I have been wanting for months "Le grand livre Marabout de la patisserie facile." It has 600 recipes, each one more delicious than the other, not to mention the pastry techniques.
I've been indecisive about what would be the first recipe to be made and I ended up deciding on this cake. This cake was one of my favorites! It's SO tasty!


Ingredientes:
2 laranjas
1 colher de chá de fermento
6 ovos
220g de açúcar em pó
240g de amêndoa moída
75g de farinha
50g de pinhão

Lavar as laranjas e cozer num tacho com água durante 1h e 30m ou até ficarem macias. Escorrer e deixar arrefecer.
Pré-aquecer o fono a 180ºC. Untar uma forma com manteiga redonda e forrar com papel vegetal.
Cortar as extremidades da laranja, cortar em quartos e descartar as sementes. Reduzir a puré junto com o fermento e reservar.
Numa tigela bater os ovos com o açúcar até se obter uma espuma fofa e homogénea. Adicionar a amêndoa moída, a farinha e o puré de laranja. Mexer delicadamente até não ter grumos.
Deitar na forma, polvilhar com os pinhões e levar ao forno durante cerca de 1h. Ao fim desse tempo, retirar do forno e polvilhar com açúcar em pó.


Ingredients:
2 oranges
1 teaspoon of baking powder
6 eggs
220g icing sugar
240g almond flour
75g flour
50g pine nuts

Wash the oranges and boil in a pan with water for 1 hour 30 minutes or until tender. Drain and leave to cool.
Preheat oven to 180ºC. Grease a round pan with butter and line with parchment paper.
Cut the ends of the orange, cut into quarters and discard the seeds. Reduce to puree along with the baking powder and set aside.
In a bowl beat the eggs with the sugar until a soft and homogeneous foam. Add the ground almonds, the flour and orange puree. Stir gently until there is no lumps.
Pour into the round baking pan, sprinkle with pine nuts and bake for about 1 hour. At the end of this time, remove from oven and sprinkle with powdered sugar.

Estes palmiers foram uma experiência, que acabou por ser bem sucedida. Surgiram da necessidade de aproveitar um resto de queijo Parmesão que tinha sobrado de outra refeição.
O leve sabor a pimenta caiena confere o toque picante que torna estes palmiers muito saborosos. Mas o melhor é experimentarem! Não se vão arrepender!

These palmiers were an experience that turned out to be successful. Arose from the need to use a rest  of Parmesan cheese that was left from another meal.
The mild flavor of cayenne pepper gives the spicy touch that makes these palmiers very tasty. But  the best is for you to try it! You will not regret it!


Ingredientes:
1 embalagem de massa folhada (usei do Lidl)
queijo Parmesão
pimenta caiena qb
oregãos
sementes de sésamo

Abrir a folha de massa folhada e polvilhar com o Parmesão. Pressionar o queijo com as mãos para se agarrar à massa folhada. Polvilhar com pimenta caiena (lembro que esta pimenta é muito picante, por isso basta usar um pouco) e com os oregãos. Polvilhar com as sementes de sésamo. Enrolar a massa até meio a partir de uma das extremidades, depois repitar a operação a partir da outra extremidade.
Cortar com em fatias de meio centímetro e colocar num tabuleiro forrado com papel vegetal. Levar ao forno a 200ºC até ficarem douradinhos e crocantes.


Ingredients:
1 pack of puff pastry (I used one from Lidl)
Parmesan cheese
cayenne pepper to taste
oregano
sesame seeds

Open the sheet of puff pastry and sprinkle with Parmesan cheese. Press the cheese with your hands. Sprinkle with cayenne pepper (remember that this pepper is very spicy, so just use a little) and the oregano. Sprinkle with sesame seeds. Roll the dough from one end to the middle and do the same on the other end.
Cut into slices with half a centimeter and place on a tray lined with parchment paper. Bake at 200ºC until golden and crispy.

Andava eu às compras com a minha filha, e como faço sempre, perguntei-lhe o que ela queria levar de almoço para o colégio no dia seguinte. Ela depressa me pediu carne assada e, depois de uma troca de ideias, logo decidimos que iríamos rechear com linguiça. E assim foi! Depois de bem temperada, esta carne ficou deliciosa.

I was shopping with my daughter, and as I always do, I asked her what she wanted to have for lunch at school the next day. She quickly asked me roasted meat and, after an exchange of ideas, we decided that we would stuff it with linguiça. And so it was! After well seasoned, the meat was delicious.


Ingredientes:
1 perna de porco desossada
1 linguiça grande ou 2 médias
3 dentes de alho
4 colheres de sopa de azeite
1 colher de chá cheia de massa de pimentão
1 colher de sobremesa de mel
1 colher de sobremesa de mostarda Maille à L´Ancienne
sal e pimenta qb
2 copos de vinho branco

Numa tigela pequena misturar o alho bem esmagado, o azeite, a massa de pimentão, o mel, a mostarda, o sal e a pimenta. Misturar bem e reservar. Rechear a perna com a linguiça e temperar com a mistura de temperos. Regar com o vinho de deixar marinar durante a noite. Assar a 200ºC. Quando estiver assada reservar durante 10 minutos, cortar em fatias e servir.


Ingredients:
1 boneless leg of pork
One large or two medium linguiças
3 cloves of garlic
4 tbsp olive oil
1 teaspoon of paprika paste
1 tablespoon of honey
1 tablespoon Maille mustard a L'Ancienne
salt and pepper
2 glasses of white wine

In a small bowl mix the crushed garlic, olive oil, paprika paste, honey, mustard, salt and pepper. Mix well and set aside. Stuff the leg with the linquiça and season with the seasoning. Cover with the wine leaving marinate overnight. Bake at 200 º C. When roasted, let it reat for 10 minutes, slice and serve.

A minha filhota tinha-me pedido um bolo rei para o Natal diferente dos habituais. Lembrei-me logo do Bolo Rei feito pela Marta! Só posso dizer que foi um sucesso, e os meus filhos depressa o devoraram! Fiz algumas alterações à receita e substituí as frutas cristalizadas por pepitas de chocolate. Como não tinha geleia de fruta, pincelei o bolo com mel.

My daughter had asked me a king cake for Christmas different from the usual. I remembered right away of the king cake made by Marta! I can only say it was a success, and my children quickly ate it! I made a few changes to the recipe and replaced the candied fruit for chocolate chips. And since I had no fruit jelly, I brushed the cake with honey.


Ingredientes:
750 g de farinha de trigo
25 g de fermento de padeiro
3 dl de leite
1 ovo
2 gemas
100 g de açúcar
75 g de manteiga
1/2 cálice de vinho da Madeira
raspa de 1 laranja
pinhões
nozes
100g de pepitas de chocolate

para decorar o bolo:
ovo batido
pinhões e nozes
mel

Misturar 250 g de farinha com o fermento, o leite, o ovo e as gemas. Amassar e deixar levedar durante 30 minutos. Noutra tigela, amassar a restante farinha com o açúcar, a raspa de laranja e a manteiga. Junte à massa anterior já levedada. Juntar o vinho da Madeira e amassar. Adicionar as pepitas de chocolate, os pinhões e as nozes e amassar até ficar tudo bem envolvido. Formar uma bola, tapar com um pano e deixar levedar durante 30 minutos. Formar uma coroa com a massa, colocar num tabuleiro forrado com papel vegetal. Pincelar com o ovo batido e decorar com os pinhões e com as nozes. Deixar repousar 10 minutos e cozer o bolo no forno a 190ºC durante 30 a 35 minutos. Quando o bolo sair do forno, pincelar com o mel aquecido no microondas durante 20 segundos.

Mix 250g of flour with the yeast, milk, the egg and the egg yolks. Knead and let rise for 30 minutes. In another bowl, knead the remaining flour with the sugar, orange zest and butter. Add the first dough. Add Madeira wine and knead. Add the chocolate chips, pine nuts and walnuts and mix well. Form a ball, cover with a cloth and let rise for 30 minutes. Form a crown with the dough, place on a tray lined with greaseproof paper. Brush with beaten egg and decorate with pine nuts and walnuts. Fiz estas filhoses super rápidas para o Natal cá de casa :) Apesar de simples, têm um sabor muito agradável a cenoura e laranja. São uns bolinhos fritos deliciosos, ficam fofinhos e esta é uma receita que rende bastante.

I made these super fast Christmas carrot fritters for our Christmas table :) Though simple, they taste like carrot and orange. They're delicious fried dumplings, are soft and this is a recipe that yields a good deal.


Ingredientes:
600g de cenouras descascadas
350g de farinha
250g de açúcar amarelo
2 ovos
1 laranja (sumo e casca)
1 colher de sobremesa de fermento
1 pitada de sal
óleo para fritar
açúcar e canela

Cozer as cenouras com casca da laranja e a pitada de sal. Escorrer as cenouras e as cascas de laranja, adicionar o sumo da laranja e reduzir tudo a puré e deixar amornar. Junta-se depois o açúcar, os ovos, o fermento e a farinha. Misturar até não haver grumos. Aquecer o óleo e fritar pequenas quantidades de cada vez (eu usei uma colher de sobremesa para dosear a quantidade). Escorrer em papel absorvente e polvilhar com açúcar e canela.

350g flour
250g light brown sugar
2 eggs
1 orange (juice and rind)
1 tablespoon of baking powder
1 pinch of salt
oil for frying
sugar and cinnamon

Boil carrots with orange peel and a pinch of salt. Drain the carrots and orange peel, add the orange juice and reduce everything to puree and let it warm. Add the sugar, eggs, baking powder and flour. Mix until it has no lumps. Heat the oil and fry small amounts at a time (I used a dessertspoon to dose the amount). Drain on paper towels and sprinkle with sugar and cinnamon.

No Dia de Reis comemora-se o dia em que o menino Jesus recebeu a visita dos Reis Magos. Provenientes do Oriente e guiados por uma estrela, visitaram Jesus Cristo recém nascido em Belém. Eram 3 os Reis Magos e tinham como nome Belchior, Gaspar e Baltasar.
Belchior, que representava a raça europeia, ofereceu ouro que simbolizava a nobreza. Baltasar, representando a raça africana, ofereceu incenso, simbolizando a divindade. Por fim, Gaspar, representando a raça asiática, ofereceu mirra simbolizando a humanidade de Jesus Cristo.
Neste dia não pode faltar o tradicional Bolo Rei, as filhoses, as azevias, as rabanadas e outros doces típicos da época.
Este ano em vez do típico Bolo Rei, fiz este "Roscón de reyes" que vi no blog Kanela y Limon. Eu e o meu filho gostámos muito deste bolo. Já o meu marido e a minha filha não apreciaram, e preferem o bolo rei habitual.
Ficou fofinho e muito saboroso, embora seja também pouco doce. Muito fácil de confeccionar, fica lindo na mesa de Reis.

Ingredientes:

3 ovos
100g açúcar
1/2 colher de chá de canela
40g de Becel líquida
25g de levedura fresca
60g de Whisky
1 pitada de sal
125g de leite
40g de cacau sem açúcar
500g de farinha
1 ovo para pincelar
nozes, pinhões, cerejas cristalizadas e açúcar para decorar

Na tigela na máquina de amassar juntar todos os ingredientes secos e reservar. Numa tigela misturar (sem bater) os ingredientes líquidos e dissolver o fermento. Juntar os ingredientes líquidos aos secos e deixar a máquina amassar durante uns minutos. Quando tudo estiver bem incorporado, deitar a massa para uma superfície enfarinhada e amassar até se descolar das mãos.
Colocar a massa numa tigela grande, tapar com película aderente e deixar levedar de um dia para o outro.
No dia seguinte, dividir a massa em duas metades iguais e formar duas roscas. Colocar num tabuleiro, tapar com um pano e deixar levedar até dobrar de volume.
Ao fim desse tempo, pincelar com ovo batido e decorar com as frutas e o açúcar. Levar a forno pré-aquecido a 200ºC durante +/- 20 minutos.



Ingredients:
3 eggs
100g sugar
1/2 teaspoon cinnamon
40g of liquid Becel (or melted butter)
25g of fresh yeast
60g Whisky
1 pinch of salt
125g of milk
40g sugar-free cocoa
500g flour
1 egg for brushing
walnuts, pine nuts, candied cherries and sugar to decorate

In a bowl add all dry ingredients and set aside. In a mixing bowl add the liquid ingredients, mix and dissolve the yeast. Add liquid ingredients to the dry and let the machine knead for a few minutes. When everything is well incorporated, pour the dough onto a floured surface and knead until it doesn't stick to your hands.
Place the dough in a large bowl, cover with plastic wrap and let rise overnight.
The next day, divide the dough into two equal halves and form two threads. Place on a tray, cover with a cloth and let rise until doubled in volume.
At the end of that time, brush with beaten egg and decorate with the fruits and sugar. Bake at a preheated oven at 200 ° C for + / - 20 minutes.

Andava curiosa e ansiosa para experimentar estas filhoses. No entanto receava que me saísse tudo mal e fosse para o lixo... Mas, surpreendentemente, saíram todas bem e ficaram uma delícia!
Foram facílimas de fazer, ao contrário do que imaginava, contudo, à medida que as fazia, descobri três truques que me facilitaram a tarefa de fazer estas deliciosas filhoses. A quarta dica é algo que aparece em todas as receitas de filhoses de forma e que deve ser escrupulosamente respeitada.
  1. colocar o polme num recipiente que não seja muito grande, de preferência com uma forma e tamanho muito semelhante à forma das filhoses. Isto porque o polme, à medida que vai diminuindo, o nível de polme desce e fica mais difícil de mergulhar a forma.
  2. colocar várias folhas de papel de cozinha sobrepostas, entre a frigideira e o recipiente do polme, para embeber o excesso de óleo na forma de filhoses, quando esta é retirada da frigideira para ser mergulhada no polme.
  3. ao mergulhar a forma das filhoses coberta de polme no óleo, manter o ferro debaixo de óleo durante 3 segundos para a filhós manter a forma perfeita. Ao fim dos 3 segundos, retirar a forma e acabar de fritar a filhós.
  4. NUNCA mergulhar totalmente a forma no polme, senão a filhós não se solta.

It was super easy to make, rather than imagined, but as I was making it, I discovered three tricks that made it easier to fulfill this task of making these delicious sweet shaped fritters. The fourth tip is something that appears in all the recipes of sweet shaped fritters and which must be scrupulously respected.
  1. put batter in a container that is not too large, preferably with a very similar shape and size to the form of fritters. This is because, as it decreases, the level of batter descends and becomes more difficult to cover the shaped fritter's iron with batter.
  2. place several sheets of kitchen paper, between the frying pan and the batter container, to soak the excess oil in the iron of making the fritters, when this is removed from the pan.
  3. when diving the iron of making fritters in the oil, keep the iron underneath oil during 3 seconds for the batter keep the perfect shape. After 3 seconds, remove the iron and fry the the fritter.
  4. Never immerse completely the way in the batter, or the batter won't loosen from the iron.

Ingredientes:
3 ovos
120 ml de leite
raspa de uma laranja grande
2 colheres de sopa de aguardente
125g de farinha
1 pitada de sal
mistura de açúcar e canela
óleo para fritar

Bater os ovos ligeiramente. Juntar o leite, a raspa de laranja, a aguardente e o sal. Adicione a farinha e misture com uma vara de arames até obter uma massa homogénea.
Numa frigideira aquecer o óleo. Quando o óleo estiver quente mergulhar a forma deixar aquecer durante uns instantes. Retirar a forma do óleo, retirar o excesso de óleo com uma toalha de papel e mergulhar no polme sem deixar que este passe para a parte superior da forma. Mergulhar a forma no óleo e manter durante 3 segundos, depois retirar e voltar a repetir a operação. Deixar as filhoses fritar até ficarem douradas, escorrer em papel de cozinha e passar por açúcar e canela.

120 ml milk

2 tbsp brandy
125 g flour
1 pinch of salt
mixture of sugar and cinnamon
oil for frying

Beat the eggs slightly. Add milk, orange zest, brandy and salt. Add the flour and mix until you obtain a homogeneous batter.
In a pan heat oil. When the oil is hot place the iron and let warm up for a few moments. Remove the iron, remove the excess oil with a paper towel and dip in batter without letting it pass to the top of the iron. Dip the iron in the oil and keep it in for 3 seconds, then remove and repeat the operation. Fry the fritters until golden, drain on kitchen paper and dust with sugar and cinnamon.

No Natal não podem faltar as farófias. Bem.... no resto do ano também não :-) Nós adoramos farófias em qualquer altura do ano!
São perigosamente fáceis de fazer o que é uma terrível ameça à minha dieta ;-) Mas palavras para quê? Uma imagem vale por mil palavras!

At Christmas we have to have at our table clouds of meringue with egg custard. Well .... the rest of the year we also have to have it :-) We love it at any time of the year!

Ingredientes:
6 claras
6 gemas
150g de açúcar
casca de 1 limão
1 pau de canela
1 litro de leite
1 vagem de baunilha
1 pitada de sal
canela

Aquecer o leite com o pau de canela, a casca do limão, a vagem de baunilha e 100g de açúcar. Bater a claras com a pitada de sal. Quando estiverem em castelo pouco firme, junta-se o açúcar e continua-se a bater até ficarem bem firmes.
Com uma colher de sopa vão-se deitando colheradas no leite que não deve estar a ferver, mas apenas quase a ferver. Deixa-se cozer durante cerca de 20 segundos de cada lado e retira-se do leite.
Quando as farófias estiverem cozidas, retira-se a casca de limão, o pau de canela e a vagem de baunilha. Retiram-se as sementes da vagem de baunilha e voltam-se a juntar ao leite.
Numa tigela rompem-se a gemas com um garfo e deita-se aos poucos um pouco do leite quente, mexendo energicamente para impedir que cozam. Repetir a operação. De seguida deita-se em fio esta mistura de gemas e leite na panela com leite quente e mexe-se com uma vara de arames até a mistura começar a espessar. Deitar o creme em cima das farófias e polvilhar com canela.

(RECEITA ADAPTADA DO BLOG "OUTRAS COMIDAS")



Ingredients:
6 egg whites
6 egg yolks
150 g sugar
rind of 1 lemon
1 cinnamon stick
1 liter of milk
1 vanilla pod
1 pinch of salt
cinnamon

Heat the milk with the cinnamon stick, lemon peel, vanilla pod and 100g of sugar. Beat the egg whites with a pinch of salt. When they are slightly whipped, add the sugar and continue to beat until you get a firm meringue .
With one tablespoon lay spoonfuls of meringue in the milk that should not be boiling, but just about to boil. Let it cook for about 20 seconds on each side and remove from the milk.
When the meringue is all cooked, remove the lemon rind, cinnamon stick and vanilla pod. Remove the seeds from the vanilla pod and add to the milk.
In a bowl break the yolks with a fork and pour slowly a little of the hot milk, whisking vigorously to prevent it from cooking. Repeat the operation. Then pour this mixture into egg yolks and milk in saucepan with hot milk and stir until the mixture starts to thicken. Pour the cream on top of the cooked meringue and sprinkle with cinnamon.

Azevias de chocolate e noz / Chocolate and walnuts fried pockets
Este ano quis fazer umas azevias que satisfizessem o palato da minha filhota. Ela não aprecia os recheios convencionais e não aprecia recheios muito doces. Por isso, ao folhear a revista "Cozinha Prática de Sucesso"do Natal de 2012, descobri estas azevias. Não são excessivamente doces, levam  muito menos açúcar e são uma óptima opção para quem não aprecia as azevias tradicionais.

This year I wanted to make some Christmas fried pockets that satisfy the palate of my daughter. She doesn't appreciate the conventional fillings and doesn't appreciate excessively sweet fillings. So, as I browsed the magazine "Practical Cooking Success" Christmas 2012, I discovered these fried pockets. They aren't overly sweet, take much less sugar and are a great option for those who doesn't appreciate the traditional Christmas fried pockets.


Ingredientes:

óleo para fritar
açúcar e canela

para a massa
350g de farinha
1 pitada de flor de sal
60g de manteiga
1 ovo
1 dl de água

para o recheio
2,5 dl leite
50g de açúcar
35g de farinha
1 ovo
2 gemas
1 colher de chá de baunilha
1 pitada de flor de sal
1 colher de sopa de chocolate em pó
100g de miolo de noz picado

Começar por fazer a massa. Com as mãos misturar a farinha, o sal e a manteiga. adicionar o ovo e a água e amassar até formar uma bola. Embrulhar num pano e deixar repousar durante 20 minutos.
Entretanto fazer o recheio. Levar ao lume um tacho com o leite e dissolver o chocolate com uma vara de arames. Numa tigela misturar o ovo e as gemas com o açúcar, a farinha, a baunilha e o sal. Deitar esta mistura no leite a ferver e misturar com a vara de arames até ficar uma mistura espessa.
Polvilhar a bancada com farinha e tender a massa até ficar muito fininha. Colocar uma colher de sobremesa de recheio sobre a massa, dobrar a massa sobre o recheio e cortar com um corta massa rendilhado.
Fritar as azevias em óleo quente e passar pela mistura de açúcar e canela.

for the dough
350 g flour
1 pinch of Fleur de Sel
60 g of butter
1 egg
1 dl of water

for the filling
2,5 dl milk
50 g sugar
35 g flour
1 egg
2 egg yolks
1 teaspoon vanilla
1 pinch of Fleur de Sel
1 tablespoon cocoa powder
100 g chopped walnuts

Start by making the pastry. With your hands to mix the flour, salt and butter. Add egg and water and knead until it forms a ball. Wrap in a cloth and allow to stand for 20 minutes.
Meanwhile make the filling. Bring to boil a pot with the milk and dissolve the chocolate. In a bowl mix the egg and the egg yolks with the sugar, flour, vanilla and salt. Pour this mixture into the boiling milk and mix until the mixture thickens.
Dust the countertop with flour and tend the dough until very thin. Place a dessertspoon of filling on the dough, fold the dough over the filling and cut with a pastry cutter.
Fry the pockets in hot oil and dust with the mixture of sugar and cinnamon.
