Quando visitei a Madeira nesta Páscoa, comi num restaurante um bolo do caco delicioso com manteiga de alho. Gostei tanto que quando cheguei a casa comprei um bolo do caco e fiz também. Mas como a pequenita adora tudo com mozzarella, experimentei juntar também este queijo. O resultado foi fenomenal! Tão bom que não sobrou nada!


When I visited Madeira this Easter, I ate in a restaurant a delicious Madeiran bread with garlic butter. I liked it so much that when I got home I bought a Madeiran bread and made it. My little girl loves everything with mozzarella cheese, so I added this cheese. The result was phenomenal! So good that there was nothing left!


Ingredientes:
1 bolo do caco grande
manteiga
alho
oregãos
queijo mozzarella ralado

Pré-aquecer o forno a 180ºC. Forrar um tabuleiro com papel vegetal.
Derreter a manteiga com o alho esmagado, sem deixar ferver a manteiga. Cortar o pão longitudinalmente e pincelar o interior com a manteiga derretida. Polvilhar com o queijo ralado e com os oregãos e tapar com a segunda metade de pão. Pincelar também o exterior da metade de cima do pão e levar ao forno até o queijo derreter.
Cortar em triângulos e servir quente.

Ingredients:
1 large Madeiran bread
butter
garlic
oregano
grated mozzarella cheese

Preheat oven to 180 º C. Line a tray with baking paper.
Melt the butter with the crushed garlic, do not boil the butter. Cut bread lengthwise and brush the inside with melted butter. Sprinkle with the grated cheese and the oregano and cover with the second half of bread. Brush the outside of the top half of the bread with the melted butter and bake until cheese is melted.
Cut into triangles and serve hot.

Eu adoro cogumelos! Descubro sempre uma boa desculpa para adicionar cogumelos aos pratos salgados. Adoro a textura dos cogumelos, já para não falar do seu sabor. Além disso, os diferentes cogumelos têm um sabor tão diversificado, que dá-me gosto cozinhar com eles.
Para acompanhar uma sopinha ao jantar, fiz estas empadas deliciosas e extremamente cremosas (não, não levam natas!). Feitas em parceria com o meu filhote de 10 anos que ajudou e fez sugestões, estas empadas revelaram-se surpreendentemente apetitosas!


I love mushrooms! I always find a good excuse to add mushrooms to savory dishes. I love the texture of mushrooms, not to mention the taste. In addition, the mushrooms have so diversified flavors, that gives me so much pleasure cooking it.
To eat after soup at dinner, I made these delicious pies and that are extremely creamy (no, it doesn't have cream!). Made in partnership with my 10 years son, who helped and made suggestions, these pies have proved to be surprisingly appetizing!


Ingredientes:
1 cebola picada
3 colheres de sopa de azeite
250g de cogumelos Paris
250g de cogumelos Pleurothus
250g de cogumelos Portobello
1 colher de sopa de farinha
3 colheres de sopa de salsa picada
sal e pimenta qb
1 pitada de pimenta caiena
leite qb
sumo de limão a gosto
2 placas de massa folhada do LIDL
1 ovo para pincelar
sementes de sésamo

Aquecer o azeite numa frigideira larga e saltear a cebola. Quando estiver translúcida, adicionar os cogumelos cortados em fatias. Temperar com sal e pimenta. Cozinhar até os cogumelos murcharem. Juntar a farinha, envolver e deixar cozinhar a farinha. Adicionar o leite até se obter um creme suave. Temperar com a pimenta caiena, o sumo de limão e juntar a salsa picada. Deixar arrefecer.
Pré-aquecer o forno a 180ºC. Untar uma forma de muffins com óleo Spray Espiga.
Cortar círculos para as bases e para as tampas das empadas e forrar as formas. Rechear a massa com o recheio de cogumelos e tapar com as tampas de massa folhada. Pincelar com ovo e polvilhar com sementes de sésamo. Levar ao forno até a massa folhada ficar dourada.
Servir com uma salada verde.

Nota: O recheio que sobrar pode ser congelado para outra ocasião.


Ingredients:
1 onion, chopped
3 tablespoons olive oil
250g Paris mushrooms
250g Pleurothus mushrooms
250g of Portobello mushrooms
1 tablespoon of flour
3 tablespoons of chopped parsley

Cut circles to the bases and caps of the pies and line the muffin tray. Stuff with the mushroom stuffing and cover with puff pastry. Brush with egg and sprinkle with sesame seeds. Bake until the  puff pastry is golden.
Serve with a green salad.

Note: The stuffing that wasn't used can be frozen and used on another occasion.

Aqui deixo finalmente a receita das broas de limão. Tão simples de fazer e tão deliciosas! São ideais para acompanhar um chá num final de tarde.

Ingredientes:
250g de açúcar amarelo
125g de manteiga à temperatura ambiente
2 ovos
500g de farinha para bolos
raspa de 2 limões
sumo de 1 limão

1 gema para pincelar

Forrar um tabuleiro com papel vegetal e resevar. Pré-aquecer o forno a 200ºC.
Colocar todos os ingredientes numa tigela e amassar até todos os ingredientes ficarem ligados. Deixar repousar durante 10 minutos.
Decorrido este tempo, amassar novamente e formar pequenas broas. Dispor no tabuleiro e pincelar com a gema de ovo. Levar ao forno durante cerca de 10 minutos ou até ficarem douradas.
Quando frias, colocar num recipiente hermético.

250g of sugar
125g of butter (room temperature)
2 eggs
500g self raising flour
zest of 2 lemons
juice of 1 lemon

1 egg yolk to brush

Line a baking tray with parchment paper. Pre-heat oven at 200ºC.

Acho um gasto supérfluo comprar barras de cereais e bolachas no supermercado, que vêm carregadas com gordura e açúcar refinado. Todo este açúcar faz mal às crianças, talvez não se sintam agora os efeitos, mas em adultos terão de lidar com o peso que foram acumulando ao longo dos anos e também com doenças como a diabetes. Claro que uma vez ou outra não é grave, o problema é que quando se tem crianças e temos de pensar em lanches diários é fácil cair na tentação de mandar bolachas e barras de cereais. Sim, eu poderia mandar fruta e iogurtes, mas qual é a criança que quer comer todos os dias fruta e iogurtes, quando os colegas comem bolachas e barras apetitosas que vêm em pacotes apelativos?!
Assim opto por fazer bolachas, barras de cereais e bolos em casa e assim tenho maior controlo na quantidade de açúcar que dou aos meus filhos. E foi o caso destas barras. Vi esta receita num programa da Annabel Langbein e de tão fácil que é, depressa fiz estas barras deliciosas! Claro que fiz ao meu gosto e mudei algumas coisas. A minha filha que não é grande apreciadora de barras de muesli, comeu 4 num abrir e fechar de olhos!
Foi também uma excelente oportunidade para usar o mel de cana dos Engenhos da Calheta, que trouxe da Ilha da Madeira nestas férias da Páscoa.

All this sugar is bad for children, they may not feel the effects now, but when they become adults, they have to deal with the weight they have accumulated over the years and with diseases such as diabetes. Of course every once and a while isn't serious, the problem is that when you have children and have to think about everyday snacks, it's easy to fall into the temptation of sending cookies and cereal bars. Yes, I could send fruit and yogurt, but what child wants to eat fruit and yoghurt every day, when colleagues eat cookies and bars that come in appealing packages?!
So I choose to make cookies, cereal bars and cakes at home, so I have more control on the amount of sugar I give to my children. And it was the case of these bars. I saw this recipe on a Annabel Langbein's program and it seemed so easy, so I ran to the kitchen to make ​​these delicious bars! My daughter isn't a big admirer of muesli bars, and she ate 4 in the twinkling of an eye!
It was also a great opportunity to use the molasses from the "Engenhos da Calheta", which I brought from Madeira these Easter holidays.
Now, enjoy my version of these delicious bars!


Ingredientes:
2 chávenas de flocos de aveia
1 chávena de sementes de girassol
1/2 chávena de pevides
1/2 chávena de sementes de linhaça
1 chávena de amêndoa granulada
120g de margarina Becel
6 colheres de sopa de mel de cana
1/2 chávena de açúcar mascavado
1/3 chávena de manteiga de amendoim

Pré-aquecer o forno a 180ºC.
Num tabuleiro misturar a aveia, as sementes e a amêndoa e levar ao forno a torrar durante 15 minutos.
Entretanto, num tacho ferver durante 5 minutos em lume baixo, a margarina, o melaço, o açúcar mascavado e a manteiga de amendoim.
Retirar o tabuleiro do forno e verter o seu conteúdo para uma tigela e envolver o caramelo feito anteriormente.
Espalhar rapidamente a mistura num tabuleiro forrado com papel vegetal e pressionar bem de forma a formar uma camada homogénea. Levar ao frigorífico durante 4 horas para solidificar. Ao fim desse tempo. retirar do tabuleiro, cortar em rectângulos iguais e guardar num frasco hermético.

Ingredients:
2 cups of rolled oats
1 cup sunflower seeds
1/2 cup of pumpkin seeds
1/2 cup of flax seeds
1 cup granulated almond
120g margarine Becel
6 tablespoons of molasses
1/2 cup of brown sugar
1/3 cup peanut butter

Preheat oven to 180 ºC.
In a tray mix the rolled oats, the almonds and the seeds and toast for 15 minutes.
Meanwhile, in a saucepan boil for 5 minutes on low heat, the margarine, molasses, brown sugar and peanut butter.
Remove the tray from the oven and pour its contents into a bowl and wrap the caramel done previously.
Quickly spread the mixture on a baking tray lined with parchment paper and press down firmly so as to form an even layer. Cool in the refrigerator for 4 hours to solidify. At the end of this time. remove from pan, cut into equal rectangles and store in an airtight jar.

Se o clafoutis doce é delicioso, porque não fazer um salgado?! Foi o que fiz para um almoço feito à pressa. Utilizei uns restos de legumes que não foram usados na sopa e um restinho de queijo feta. Ficou delicioso e nem sentimos falta da carne ou do peixe.

Ingredientes: (para 2 pessoas)
1 courgette pequena cortada em cubinhos
1 mão bem cheia de espinafres
1 tirinha de pimento vermelho
1/2 alho francês
1/2 queijo feta
1 dente de alho
1 fio de azeite
sal e pimenta
oregãos
4 ovos
50 ml de leite
70g de queijo parmesão
1 colher de sopa de farinha

Aquece-se uma frigideira com o azeite e o alho picado. Deita-se o alho francês, a courgette, o pimento e os espinafres, tempera-se com sal e pimenta e deixa-se saltear por uns minutos.
Numa tigela colocam-se os ovos, o leite, o queijo parmesão, os oregãos e a farinha. Mistura-se bem com uma vara de arames e juntam-se os legumes salteados. Ajusta-se o tempero.
Coloca-se a mistura num pirex untado, desfaz-se o queijo feta por cima e vai a forno pré-aquecido a 200ºC durante 30 minutos.
Serve-se com uma salada verde.

Ingredients: (for 2)
1 small zucchini diced
1 hand full of spinach
1 strip of red pepper in cubes
1/2 leek
1/2 feta
1 clove of garlic
1 olive oil
salt and pepper
oregano
4 eggs
50 ml of milk
70g Parmesan
1 tablespoon flour

Encontrei esta receita de bolo de chocolate da Annabel Langbein entre as minhas anotações que esperavam ser copiadas para o livro de receitas. Ontem decidi finalmente copiar a receita e depois de a escrever, não resisti em ir para a cozinha e fazer este bolo. Ficou delicioso!
Este bolo fica húmido e fofo tal como um bolo de chocolate deve ser. Além disso fica muito bonito numa mesa de lanche ou na mesa de pequeno almoço.

Ingredientes:
3 chávenas de farinha com fermento
2 chávenas de açúcar amarelo
1 1/2 colher de chá de baunilha
3/4 de chávena de cacau em pó
2 colheres de chá de bicarbonato de sódio
200g de manteiga amolecida
1 copo de leite
3 ovos grandes
1 chávena de café quente

Colocar todos os ingredientes numa tigela funda e mexer até a manteiga derreter com o calor do café. Dividir a massa por duas formas de bolo redondas, devidamente untadas e polvilhadas com cacau.
Levar a forno pré-aquecido a 180ºC durante 40 minutos.

Para fazer a ganache de chocolate basta ferver 200ml de natas, retira-se do lume e deita-se 200g de chocolate partido em pedaços. Mexer até o chocolate derreter e se tornar suave e brilhante.

Colocar um bolo num prato largo e cobrir com metade da ganache de chocolate. Colocar o segundo bolo por cima e cobrir novamente. Decorar a gosto.


Ingredients:
3 cups self raising flour
2 cups of light brown sugar
1 1/2 tsp vanilla
3/4 cup of cocoa powder
2 teaspoons baking soda
200g butter, softened
1 cup milk
3 large eggs
1 cup of hot coffee

Place all ingredients in a deep bowl and stir until butter is melted by the heat of the coffee. Divide the batter by two round cake shapes, properly greased and dusted with cocoa.
Bake in a preheated oven at 180 ° C for 40 minutes.

To make the chocolate ganache simply boil 200ml of double cream, remove from heat and pour 200g of chocolate chopped into pieces. Stir until the chocolate is melted and become smooth and shiny.

Place cake on a plate and cover with half off the chocolate ganache. Place the second cake on top and cover again. Garnish to taste.

Um dia destes encontrei umas fatias de pão da Bimbo, que são mais compridas do que o habitual, e decidi fazer estes enroladinhos. São óptimos para acompanhar uma sopa ou como aperitivos numa festa. Os meus filhos ficaram fãs destes enroladinhos!
Tão simples e rápidos de fazer, experimentem e também vão adorar este petisco!

Ingredientes:
1 embalagem de Enrolados Bimbo
manteiga
presunto
queijo de cabra
mistura de saladas

Barrar as fatias de pão com manteiga. Cobrir com folhas de salada e as fatias de presunto ou as fatias de queijo. Enrolar as fatias e cortar em 4 rolinhos iguais. E já está! Simples!
Também se pode rechear com pasta de atum com milho ou azeitonas. Há tantas alternativas para o recheio, é só deixar a imaginação trabalhar!



Ingredients:
1 pack of Enrolados Bimbo
butter
prosciutto
goat cheese
mixed salads

Spread the bread slices with butter. Cover with salad leaves and slices of prosciutto or cheese slices. Roll the slices and cut into 4 equal rolls. That's it! Simple!

O Colégio dos meus filhotes, no âmbito da comemoração do Dia da Mãe, convidou-me a fazer um pequeno workshop com os alunos do 2º ciclo. Tanto a turma de 5º ano do meu filho, como a turma de 6º ano mostraram-se super entusiasmados com a actividade e mostraram serem bastante habilidosos. A eles cabe todo o mérito, pois eu apenas levei a receita e expliquei como se procedia. O resto foi feito por eles! A disposição dos cake pops coube à Professora Isa, que montou um lindo bouquet doce. O fotógrafo de serviço foi o Dr. Romão a quem agradeço as fotos.
Eu gosto muito de crianças, por isso foi muito divertido ver o espírito de partilha entre colegas, pois todos deram a vez para que todos pudessem amassar os donuts, todos decoraram, partiram bolachas e todos comeram e raparam as tigelas! :-) Claro que a certa altura o chocolate começou a falar mais alto e já havia uns gulosos cobertos de chocolate, mas muito bem dispostos!
No dia seguinte, durante a festa do Dia da Mãe, estes doceiros mostraram com muito orgulho os doces que fizeram e com muito prazer os comeram.
Muito obrigado ao Colégio de Alfragide, pela oportunidade que me deram de ensinar aos rapazes e raparigas do 2º ciclo a fazer este miminhos para eles e para as suas mães.

Receita dos Oreo Cake Pops:


511 gramas de bolachas Oreo
227 gramas de queijo Philadelphia
Candy melts, chocolate ou glacé
Confetis coloridos
Pauzinhos para cake pops

Reduzir as bolachas a pequeníssimos pedaços (quase pó).
Colocar numa tigela e misturar com o queijo. Mexer até se obter uma pasta homogénea e grossa (poderá ser preciso juntar um pouco mais de bolacha moída).
Fazer bolas do tamanho de uma noz e levar ao congelador durante 5 minutos.
Derreter a cobertura.
Mergulhar a ponta do pauzinho na cobertura e espetar no cake pop.
Levar novamente ao congelador.
Cobrir os cake pops com a cobertura, polvilhar com os confetis e espetar num bloco de esferovite para secar.

Oreo Cake Pops Recipe :

511 grams of Oreo cookies
227 grams of cheese Philadelphia
Candy melts, chocolate or glacé
colorful confetti
sticks for cake pops

Reduce the oreo to tiny pieces (almost powder).
Place in a bowl and mix with the cheese. Stir until a thick and smooth paste (you may need to add a little more ground oreos).

Receita dos Mini-Donuts:

1 copo de farinha
½ copo de açúcar
1 colher de sopa de fermento em pó
1 ovo
½ copo de leite
½ colher de chá de baunilha
4 colheres de sopa de óleo

Misturar os ingredientes secos.
Juntar o ovo, a baunilha e o leite e bater vigorosamente durante uns minutos.
Adicionar o óleo e bater durante mais uns minutos.
Aquecer a máquina de donuts e fazer os donuts.
Deixar arrefecer e decorar a gosto.


Mini-Donuts Recipe:

1 cup flour
½ cup sugar
1 tablespoon baking powder
1 egg
½ cup milk
½ teaspoon vanilla
4 tablespoons oil

Mix the dry ingredients.
Add the egg, vanilla and milk and beat vigorously for a few minutes.
Add the oil and beat for a few more minutes.
Heat the mini-donut machine and make the donuts.
Allow to cool and decorate to taste.

Um dia destes, depois de fazer comida tailandesa, sobrou-me uma grande porção de creme de coco. Sem saber o que fazer àquele resto que sorria para mim no frigorífico decidi fazer este pudim com o que tinha no frigorífico e na dispensa.
Apesar de ter sido feito de improviso, ficou delicioso, embora um bocadinho doce demais para o meu gosto. Contudo é um pudim a repetir, pois o meu filho e a minha filha adoraram :) 

One day, after making Thai food, I found myself with a large portion of coconut cream. Not knowing what else to do to that, I decided to make this pudding with what I had in the fridge and in the pantry.
Although it was done impromptu, it was delicious, though a little too sweet for my taste. However I will be making this pudding again, because my son and my daughter loved it :)



Ingredientes:
1 lata de leite condensado
4 ovos
 +/- 150g de creme de coco Koala
1 medida (lata de creme de coco) de leite
caramelo

Numa tigela bater todos os ingredientes (excepto o caramelo). Untar uma forma de pudim com o caramelo e deitar a mistura de ovos, tapar a forma e levar ao lume numa panela de pressão durante 13 min (contar o tempo depois da panela ganhar pressão).
Desenformar quando estiver morno.
Em alternativa podem-se usar ramequins e cozer em banho maria.


Ingredients:
1 can of condensed milk
4 eggs
  + / - 150g coconut cream Koala
1 measure (tin of coconut cream) of milk
caramel

In a bowl beat all ingredients (except caramel). Grease a pan with the caramel and pour the egg mixture, cover the custard pan and bring to boil in a pressure cooker for 13 min (counting time after gainning pressure).
Unmold when warm.
Alternatively one can use ramekins and bake in a water bath.

Não há muitas sobremesas que a minha filha goste. Faço crumble várias vezes, geralmente de maçã e/ou pera, e a minha filha limita-se a comer a crosta. Quando vi esta receita na TV&Culinária deste mês, decidi que a tinha de fazer com as bananas que estavam a escurecer na minha fruteira.
A receita original pede nozes, mas como a minha piolhinha adora avelãs, fiz a substituição.
Este crumble é mesmo para quem gosta apenas da crosta, pois a banana transforma-se num leve creme doce. Fica tão estaladiço e delicioso!

There aren't many desserts that my daughter like. I make crumble several times, usually apple and / or pear, and my daughter just eats the crust. When I saw this recipe in Cooking & TV this month, I decided that had to do with the bananas that were getting brown in my fruit bowl.
The original recipe calls for walnuts, but my little girl loves hazelnuts, so I made the replacement.
This crumble is really only for those who only like the crust because the banana turns into a light custard. It is so crispy and delicious!


Ingredientes:
2 bananas bem maduras
1 limão (eu usei 2 tangerinas)
100g de açúcar amarelo
200g de farinha
50g de chocolate em pó
80g de manteiga fria (eu usei 120g)
100g de miolo de noz (eu usei avelãs)

Descascar as bananas e cortar em rodelas. Regar com o sumo do limão (ou tangerinas) e dispor no fundo de uma tarteira.
À parte misturar a farinha, o açúcar, o chocolate e a manteiga, até se obter uma massa areada. Adiciona-se o miolo de avelã e cobrem-se as rodelas de banana.
Leva-se ao forno a 190ºC durante cerca de 20 minutos. Comer quente com chantili.

2 very ripe bananas
1 lemon (I used 2 tangerines)
100g light brown sugar
200g flour
50g cocoa powder
80g cold butter (I used 120g)
100g walnuts (I used hazelnuts)

Peel the bananas and cut into slices. Sprinkle with lemon juice (or tangerines) and place at the bottom of a baking dish.
In a bowl mix flour, sugar, chocolate and butter until you get a crumble. Add the chopped hazelnut and cover up the banana slices.
Bake at 190 ° C for about 20 minutes. Eat warm with whipped cream.
