Este é um prato que eu faço muitas vezes no verão. Tão simples de fazer, fresco, económico e saudável! Os meus filhos adoram e o meu marido, que é alentejano, adora ainda mais!
Esta é a forma como eu faço aqui em casa e que é sempre um sucesso. O meu filho gosta tanto, que até para o colégio ele levou gaspacho, muito bem acondicionado em recipientes herméticos. E não é que resultou!
Seja em casa, num pic-nic ou na escola, esta sopa gelada sabe sempre bem!

This is a soup that I make lots of times at the summer. So easy to make, fresh, frugal and healthy! My kids love it and my husband, that is from Alentejo, loves even more!
This is the way I make it and it's always a success. My son loves it so much, that he has even taken this soup for lunch at school, very well packed in airtight containers. And it really worked!
Whether at home, at a pic-nic or at school, this cold soup is always a hit!


Ingredientes:
água gelada
tomate
pepino
pimento vermelho
cebola
presunto
azeite
1 dente de alho
vinagre
sal
pão alentejano

Corta-se o tomate, o pimento e o pepino em cubos pequeno e pica-se a cebola. Corta-se também o presunto em pedaços pequenos. Colocam-se os vegetais e o presunto cortados numa travessa.
Corta-se o pão em pedaços pequenos.
Numa terrina coloca-se a água e tempera-se com o alho esmagado, o azeite, vinagre e o sal a gosto e mexe-se bem.
No prato mistura-se os vegetais, o presunto e o pão e rega-se com a água temperada. Agora é só comer!


Ingredients:
cold water
tomato
cucumber
red pepper
onion
prosciutto
olive oil
1 clove of garlic
vinegar
salt
bread from Alentejo

Cut the tomato, pepper and cucumber into small cubes and mince the onion. Also cut the prosciutto into small pieces. Place the vegetables and sliced prosciutto on a platter.
Cut the bread into small pieces.
In a bowl put up the water and season with crushed garlic, olive oil, vinegar and salt to taste and stir well.
On the plate mix vegetables, prosciutto and bread and add the water. Now just eat!

Eu gosto de fazer tudo a partir do zero, de escolher os ingredientes, o amassar, cortar, sentir o cheiro da mistura de ingredientes... Enfim dá-me prazer em fazê-lo e além disso sei bem o que estou a dar de comer à minha família. Mas, por vezes, temos de fazer alguma coisa à última da hora e não podemos dar-nos ao luxo de esperar horas para que a massa levede. Foi assim que apareceram estes cinnamon rolls.
O hipermercado Continente vende uma massa para croissants muito boa, com a qual eu faço sempre croissants. Mas desta vez queria fazer uns cinnamon rolls para o pequeno almoço, mas como já era quase hora de comer, tive de improvisar! Em vez de fazer os croissants, usei a massa para fazer cinnamon rolls.
Ficaram surpreendentemente bons! Ainda melhores do que quando uso esta massa para fazer os croissants!
Podemos colocar outros recheios, como Nutella! Ficam deliciosos!
É tão rápido de fazer, ficam deliciosos, forma-se uma calda de caramelo fantástica e vão certamente impressionar a vossa família com estes caracóis doces!

I like to make food from scratch. Choosing the ingredients, kneading the dough, to cut, to smell the mixture of ingredients... I enjoy doing it, and besides, this way I know what I'm feeding my family. But sometimes, we have to make something to eat at the last minute and we can't afford to waste hours waiting the dough to rise. That's how these cinnamon rolls were created.
The supermarket Continente sells a croissants dough that is delicious, with which I always make croissants. But this time I wanted to make cinnamon rools for breakfast and it was almost time to eat, so I had to improvise. Instead of making croissants I made cinnamon rolls with the croissant dough.
The cinnamon rolls were surprisingly good! The dough tastes even better this way!
You can also use other fillings like Nutella! It tastes delicious!
It's so fast to make, it's delicious, you get a wonderful caramel on the bottom of the baking dish and you're going to impress your family for sure!





Ingredientes:
1 embalagem de massa para croissants Continente
açúcar amarelo qb
margarina Becel líquida qb
canela a gosto
raspa de 1 laranja
1 ovo para pincelar

Ligar o forno a 180ºC. Untar um prato de pirex com manteiga.
Abrir o rectângulo de massa e pincele com a margarina Becel líquida. Espalhar o açúcar amarelo por todo o rectângulo de massa e polvilhar com canela. Distribuir a raspa de laranja pela massa e enrolar pelo lado maior. Cortar em rolinhos de tamanho igual e dispor em forma de flor no prato de levar ao forno. Pincelar com ovo batido e deixar cozer durante cerca de 20 minutos. E estão prontos a comer!


Ingredients:
1 ready croissant dough
light brown sugar
liquid magarine Becel
cinnamon to taste
zest of 1 orange
1 egg

Start by turning the oven to 180ºC
Spread the dough and brush with the liquid margarine. Spread the sugar all over the dough and dust with cinnamon. Add the orange zest and roll the dough. Cut into equal rolls and place on the baking dish. Brush with the beaten egg and bake for about 20 minutes. And it ready!!

Apesar do calor que se tem sentido, fiz estas bolachas que são as melhores que já fiz até hoje! Não são as mais doces, nem as mais bonitas, mas de sabor ficaram perfeitas! São melhores quando acabadas de fazer. No dia seguinte continuam deliciosas, mas deixam de ser estaladiças. Este é o único defeito delas, mas que continuam deliciosas, isso continuam. Para quem gosta de Nutella, como a minha filha, faz uma marotice e barra a bolacha com este creme. Fica muito bom!

Ingredientes:
120g de manteiga amolecida
160g de açúcar amarelo
1 colher de mel de cana
2 ovos
300g de farinha com fermento
80g de coco
45g de flocos de aveia

Pré-aquecer o forno a 180ºC. Forrar dois tabuleiros com papel vegetal.
Numa tigela bater bem a manteiga, o açúcar e o mel de cana. Adicionar um ovo de cada vez, mexendo bem entre cada adição. Juntar a farinha, o coco e a aveia.
Com a ajuda de colheres de sobremesa, moldar bolinhas e dispor nos tabuleiros. Levar ao forno durante 10 a 15 minutos. Quando estiverem frios, guardar num frasco hermético.


Ingredients:
120g of softened butter
160g of light brown sugar
1 tablespoon of treacle
2 eggs
300g of self-raising flour
80g of desiccated coconut
45g of  rolled oats

Preheat oven to 180ºC. Line 2 oven trays with parchment paper.
Beat butter, sugar and treacle until smooth. Add the eggs, one at a time. Stir in the flour, coconut and the rolled oats.
Make small dough balls with the help of two teaspoons and place on the baking trays. Bake for 10 to 15 minutes. When cold, place in a airtight container.

Ontem não me sentia mesmo nada inspirada para cozinhar. Era um daqueles dias em que tudo me irritava, tudo incomoda, tudo chateia... Mas, ao fim do dia, tenho uma "karateca" e dois desportistas para alimentar. Um deles já na adolescência, com uma fome que não acaba! O outro, o pai, cansado e esfomeado, precisa de recuperar forças de um dia de trabalho e da visita ao ginásio.
Depois de uma rápida pesquisa por receitas soltas que vou anotando, improvisei esta tarte de chouriço e queijo, os quais andavam já fartos do meu frigorífico, que se revelou tão aromática quanto deliciosa!
Tão rápida de fazer, excelente para utilizar restos e que agrada a miúdos e graúdos!

Yesterday I wasn't feeling inspired to cook. It was one of those days that everything got me mad, everything bothered, everything annoyed me... But, at the end of the day, I have a karate girl and two sportmen to feed. One of them a teen, with a neverending hunger! The other, the father, tired and hungry, needs to recover his strength from a long day's work and from a visit to the gym.
After a quick search among dozens of loose recipes that I take note, I improvised this chorizo and cheese pie, which were already tired of living in my fridge, that proved to be as aromatic as it was delicious!
So quick to make, excelent to use leftovers and it pleases kids and grown ups!


Ingredientes:
3 ovos
1 1/2 de leite magro
3/4 chávena de óleo
1 colher de sopa de pó Royal
30g de queijo Parmesão ralado
12 colheres de sopa de farinha sem fermento
1 pitada de flor de sal
pimenta qb
Chouriço picado, qb
Queijo mozzzarella a gosto
Oregãos

No liquidificador bater os ovos com o leite, o óleo e o queijo Parmesão. Sem desligar, juntar a farinha misturada com o pó Royal, o sal e a pimenta. Quando estiver tudo bem batido desligar e verter para um tabuleiro untado com manteiga.
Espalhar o chouriço picado por cima, bem como o queijo mozzarella. Polvilhar com oregãos e levar ao forno a 180ºC durante 20 minutos.
Ao fim desse tempo, retirar do forno, cortar em quadrados e servir com uma salada verde.

Ingredients:
3 eggs
1 1/2 cup of milk
3/4 cup of vegetable oil
1 tablespoon of baking powder
30g of Parmesan cheese
12 tablespoons of all purpose flour
a pinch of Fleur de salt
a pinch of pepper
minced chorizo to taste
shredded mozzarella cheese to taste
oregano

In a blender mix the eggs with the milk, the vegetable oil and the Parmesan cheese. With the blender still on, add the flour mixed with the Fleur de salt, baking powder and pepper. Pour into a greased baking tray.
Distribute the minced chorizo and the mozzarela, over the batter. sprinkle with the oregano and bake at 180ºC for 20 minutes.
After that, remove from the oven and cut into squares. Serve with a green salad.

Cá em casa adoramos coco! Bolo de coco, pudim de coco, enfim... sabe-nos muito bem comer coco. Quando vi este bolo na Women's Weekly, achei que ia fazer as delícias do pessoal cá de casa! E foi mesmo! Deliciosamente húmido e incrivelmente saboroso e simples de fazer.



We love coconut! Coconut cake, coconut pudding, welll... we really like coconut! When I saw this cake in Women's Weekly, I knew it would please my people! And it did! Deliciously moist and incredibly tasty and easy to make.



Ingredientes:
90g de manteiga amolecida
110g de açúcar
1 ovo
100g de farinha sem fermento
50g de farinha com fermento

para a cobertura:
3 ovos batidos
60ml de leite
60g de margarina Becel líquida
275g de açúcar amarelo
150g de coco ralado

Pré-aquecer o forno a 180ºC. Untar e forrar uma forma de 20x30cm.
Bater a manteiga, o açúcar e o ovo até se obter uma mistura leve e fofa. Juntar as farinhas e envolver. Deitar na forma e levar ao frigorífico durante 20 minutos.
Entretanto faz-se a cobertura. Para isso misturam-se todos os ingredientes da cobertura e espalha-se por cima da massa arrefecida. Vai ao forno durante cerca de 50 minutos.
Deixa-se arrefecer na forma e corta-se em quadrados de tamanho igual.


Ingredients:

3 eggs beaten
60ml of milk

275g of light brown sugar
150g of shredded coconut

Preheat oven to 180ºC. Grease and line a 20x30cm baking pan.
Beat butter, sugar and egg in a small bowl until you get a light and fluffy mixture. Gently stir flours.
Spread mixture into baking pan and refrigerate for 20 minutes.
Meanwhile make the coconut topping. Combine the ingredients and pour topping over cooled base.
Bake for about 50 min. Cool in the baking pan and cut into squares.

O calor chegou em força e a vontade de comer sobremesas fresquinhas também! Mas como não devemos abusar nas gorduras e no açúcar, fiz este tiramisù cremoso e delicioso. Sem natas, sem ovos, com pouco açúcar, muito rápido de fazer, muito fácil e com poucos ingredientes. Mas passemos à receita!



The heat has arrived and, with it, the desire to eat fresh deserts. As we shouldn't eat to much fat and sugar, I made this creamy and delicious tiramisù. Without cream, eggs, low on sugar, very fast to make, very easy and with only a few ingredients. But let's get on to the recipe!



Ingredientes:
5 iogurtes gregos magros açucarados
250g de palitos La Reine
200g de mascarpone
3 colheres de sopa de açúcar
1 litro de água
3 colheres de sobremesa de café solúvel
1 colher de essência de baunilha
cacau em pó para polvilhar
framboesas para decorar (opcional)

Numa tigela aquecer a água e misturar o café solúvel e 1 colher de sopa de açúcar. Noutra tigela bater os iogurtes com o mascarpone, a baunilha e as restantes 2 colheres de açúcar, até se obter um creme homogéneo.
Cobrir o fundo de uma tigela com um pouco do creme. Embeber levemente os palitos La Reine no café e dispor em cima do creme sem deixar buracos. Repetir estas duas operações até acabar com o creme e com os palitos. Terminar com a camada de creme.
Polvilhar com o cacau em pó e decorar com as framboesas. Guardar no congelador durante 30 minutos e servir.



Ingredients:
5 light and sweetened Greek yogurts
250g of ladyfingers
200g of mascarpone
3 tablespoons sugar
1 liter of water
3 teaspoons instant coffee
1 teaspoon vanilla extract
cocoa powder for dusting
raspberries to decorate (optional)

Heat water in a bowl and mix the instant coffee and 1 tablespoon sugar. In another bowl beat yogurt with mascarpone, vanilla and the remaining 2 tablespoons of sugar, until you get a homogeneous cream.
Cover the bottom of a bowl with a couple tablespoons of the yogurt cream. Lightly soak the ladyfingers in coffee and arrange on top of the cream without leaving holes. Repeat these two operations until you have no more cream and ladyfingers. Finish with a layer of yogurt cream.
Dust with cocoa powder and decorate with raspberries. Store in the freezer for 30 minutes and serve.

Quando visitei a Madeira nesta Páscoa, comi num restaurante um bolo do caco delicioso com manteiga de alho. Gostei tanto que quando cheguei a casa comprei um bolo do caco e fiz também. Mas como a pequenita adora tudo com mozzarella, experimentei juntar também este queijo. O resultado foi fenomenal! Tão bom que não sobrou nada!


When I visited Madeira this Easter, I ate in a restaurant a delicious Madeiran bread with garlic butter. I liked it so much that when I got home I bought a Madeiran bread and made it. My little girl loves everything with mozzarella cheese, so I added this cheese. The result was phenomenal! So good that there was nothing left!


Ingredientes:
1 bolo do caco grande
manteiga
alho
oregãos
queijo mozzarella ralado

Pré-aquecer o forno a 180ºC. Forrar um tabuleiro com papel vegetal.
Derreter a manteiga com o alho esmagado, sem deixar ferver a manteiga. Cortar o pão longitudinalmente e pincelar o interior com a manteiga derretida. Polvilhar com o queijo ralado e com os oregãos e tapar com a segunda metade de pão. Pincelar também o exterior da metade de cima do pão e levar ao forno até o queijo derreter.
Cortar em triângulos e servir quente.

Ingredients:
1 large Madeiran bread
butter
garlic
oregano
grated mozzarella cheese

Preheat oven to 180 º C. Line a tray with baking paper.
Melt the butter with the crushed garlic, do not boil the butter. Cut bread lengthwise and brush the inside with melted butter. Sprinkle with the grated cheese and the oregano and cover with the second half of bread. Brush the outside of the top half of the bread with the melted butter and bake until cheese is melted.
Cut into triangles and serve hot.

Eu adoro cogumelos! Descubro sempre uma boa desculpa para adicionar cogumelos aos pratos salgados. Adoro a textura dos cogumelos, já para não falar do seu sabor. Além disso, os diferentes cogumelos têm um sabor tão diversificado, que dá-me gosto cozinhar com eles.
Para acompanhar uma sopinha ao jantar, fiz estas empadas deliciosas e extremamente cremosas (não, não levam natas!). Feitas em parceria com o meu filhote de 10 anos que ajudou e fez sugestões, estas empadas revelaram-se surpreendentemente apetitosas!


I love mushrooms! I always find a good excuse to add mushrooms to savory dishes. I love the texture of mushrooms, not to mention the taste. In addition, the mushrooms have so diversified flavors, that gives me so much pleasure cooking it.
To eat after soup at dinner, I made these delicious pies and that are extremely creamy (no, it doesn't have cream!). Made in partnership with my 10 years son, who helped and made suggestions, these pies have proved to be surprisingly appetizing!


Ingredientes:
1 cebola picada
3 colheres de sopa de azeite
250g de cogumelos Paris
250g de cogumelos Pleurothus
250g de cogumelos Portobello
1 colher de sopa de farinha
3 colheres de sopa de salsa picada
sal e pimenta qb
1 pitada de pimenta caiena
leite qb
sumo de limão a gosto
2 placas de massa folhada do LIDL
1 ovo para pincelar
sementes de sésamo

Aquecer o azeite numa frigideira larga e saltear a cebola. Quando estiver translúcida, adicionar os cogumelos cortados em fatias. Temperar com sal e pimenta. Cozinhar até os cogumelos murcharem. Juntar a farinha, envolver e deixar cozinhar a farinha. Adicionar o leite até se obter um creme suave. Temperar com a pimenta caiena, o sumo de limão e juntar a salsa picada. Deixar arrefecer.
Pré-aquecer o forno a 180ºC. Untar uma forma de muffins com óleo Spray Espiga.
Cortar círculos para as bases e para as tampas das empadas e forrar as formas. Rechear a massa com o recheio de cogumelos e tapar com as tampas de massa folhada. Pincelar com ovo e polvilhar com sementes de sésamo. Levar ao forno até a massa folhada ficar dourada.
Servir com uma salada verde.

Nota: O recheio que sobrar pode ser congelado para outra ocasião.

250g Paris mushrooms
250g Pleurothus mushrooms
250g of Portobello mushrooms
1 tablespoon of flour
3 tablespoons of chopped parsley
salt and pepper to taste
1 pinch cayenne pepper
milk
lemon juice to taste
2 sheets of puff pastry
1 egg for brushing
Sesame seeds

Heat the olive oil in a large skillet and sauté the onion. When translucent, add the sliced ​​mushrooms. Season with salt and pepper. Cook until the mushrooms wilt. Add the flour, mix and cook the flour. Add the milk to obtain a smooth cream. Season with cayenne pepper, lemon juice and add the chopped parsley. Leave to cool.
Preheat oven to 180ºC. Grease a muffin tray with oil spray.
Cut circles to the bases and caps of the pies and line the muffin tray. Stuff with the mushroom stuffing and cover with puff pastry. Brush with egg and sprinkle with sesame seeds. Bake until the  puff pastry is golden.
Serve with a green salad.

Note: The stuffing that wasn't used can be frozen and used on another occasion.

Aqui deixo finalmente a receita das broas de limão. Tão simples de fazer e tão deliciosas! São ideais para acompanhar um chá num final de tarde.

Ingredientes:
250g de açúcar amarelo
125g de manteiga à temperatura ambiente
2 ovos
500g de farinha para bolos
raspa de 2 limões
sumo de 1 limão

1 gema para pincelar

Forrar um tabuleiro com papel vegetal e resevar. Pré-aquecer o forno a 200ºC.
Colocar todos os ingredientes numa tigela e amassar até todos os ingredientes ficarem ligados. Deixar repousar durante 10 minutos.
Decorrido este tempo, amassar novamente e formar pequenas broas. Dispor no tabuleiro e pincelar com a gema de ovo. Levar ao forno durante cerca de 10 minutos ou até ficarem douradas.
Quando frias, colocar num recipiente hermético.

2 eggs
500g self raising flour
zest of 2 lemons
juice of 1 lemon

1 egg yolk to brush

Line a baking tray with parchment paper. Pre-heat oven at 200ºC.
Mix all ingredients and let it rest for 10 minutes. After 10 minutes knead the dough again and make small "broas". Bake for 10 minutes or until golden. When cold, keep it in a airtight container.

Acho um gasto supérfluo comprar barras de cereais e bolachas no supermercado, que vêm carregadas com gordura e açúcar refinado. Todo este açúcar faz mal às crianças, talvez não se sintam agora os efeitos, mas em adultos terão de lidar com o peso que foram acumulando ao longo dos anos e também com doenças como a diabetes. Claro que uma vez ou outra não é grave, o problema é que quando se tem crianças e temos de pensar em lanches diários é fácil cair na tentação de mandar bolachas e barras de cereais. Sim, eu poderia mandar fruta e iogurtes, mas qual é a criança que quer comer todos os dias fruta e iogurtes, quando os colegas comem bolachas e barras apetitosas que vêm em pacotes apelativos?!
Assim opto por fazer bolachas, barras de cereais e bolos em casa e assim tenho maior controlo na quantidade de açúcar que dou aos meus filhos. E foi o caso destas barras. Vi esta receita num programa da Annabel Langbein e de tão fácil que é, depressa fiz estas barras deliciosas! Claro que fiz ao meu gosto e mudei algumas coisas. A minha filha que não é grande apreciadora de barras de muesli, comeu 4 num abrir e fechar de olhos!
Foi também uma excelente oportunidade para usar o mel de cana dos Engenhos da Calheta, que trouxe da Ilha da Madeira nestas férias da Páscoa.

All this sugar is bad for children, they may not feel the effects now, but when they become adults, they have to deal with the weight they have accumulated over the years and with diseases such as diabetes. Of course every once and a while isn't serious, the problem is that when you have children and have to think about everyday snacks, it's easy to fall into the temptation of sending cookies and cereal bars. Yes, I could send fruit and yogurt, but what child wants to eat fruit and yoghurt every day, when colleagues eat cookies and bars that come in appealing packages?!
So I choose to make cookies, cereal bars and cakes at home, so I have more control on the amount of sugar I give to my children. And it was the case of these bars. I saw this recipe on a Annabel Langbein's program and it seemed so easy, so I ran to the kitchen to make ​​these delicious bars! My daughter isn't a big admirer of muesli bars, and she ate 4 in the twinkling of an eye!
It was also a great opportunity to use the molasses from the "Engenhos da Calheta", which I brought from Madeira these Easter holidays.
Now, enjoy my version of these delicious bars!


Ingredientes:
2 chávenas de flocos de aveia
1 chávena de sementes de girassol
1/2 chávena de pevides
1/2 chávena de sementes de linhaça
1 chávena de amêndoa granulada
120g de margarina Becel
6 colheres de sopa de mel de cana
1/2 chávena de açúcar mascavado
1/3 chávena de manteiga de amendoim

Pré-aquecer o forno a 180ºC.
Num tabuleiro misturar a aveia, as sementes e a amêndoa e levar ao forno a torrar durante 15 minutos.
Entretanto, num tacho ferver durante 5 minutos em lume baixo, a margarina, o melaço, o açúcar mascavado e a manteiga de amendoim.
Retirar o tabuleiro do forno e verter o seu conteúdo para uma tigela e envolver o caramelo feito anteriormente.
Espalhar rapidamente a mistura num tabuleiro forrado com papel vegetal e pressionar bem de forma a formar uma camada homogénea. Levar ao frigorífico durante 4 horas para solidificar. Ao fim desse tempo. retirar do tabuleiro, cortar em rectângulos iguais e guardar num frasco hermético.

Ingredients:
2 cups of rolled oats
1 cup sunflower seeds
1/2 cup of pumpkin seeds
1/2 cup of flax seeds
1 cup granulated almond
120g margarine Becel
6 tablespoons of molasses
1/2 cup of brown sugar
1/3 cup peanut butter

Preheat oven to 180 ºC.
In a tray mix the rolled oats, the almonds and the seeds and toast for 15 minutes.
Meanwhile, in a saucepan boil for 5 minutes on low heat, the margarine, molasses, brown sugar and peanut butter.
Remove the tray from the oven and pour its contents into a bowl and wrap the caramel done previously.
Quickly spread the mixture on a baking tray lined with parchment paper and press down firmly so as to form an even layer. Cool in the refrigerator for 4 hours to solidify. At the end of this time. remove from pan, cut into equal rectangles and store in an airtight jar.
