Há uns meses comprei um livrinho inglês com diversas receitas de mini tartes chamado "Mini Pies" da Sara Lewis. Tem receitas deliciosas de tartes doces e salgadas.
No meu dia de anos fiz estas mini tartes gregas de espinafres e pinhões. Para além de ficarem lindas, são simples de fazer e ficam deliciosas!
Estas mini tartes são óptimas para oferecer a amigos que sejam vegetarianos, só é preciso ter a certeza que o queijo usado é adequado para vegetarianos.

A few months ago I bought a book with several mini tarts recipes called "Mini Pies" by Sara Lewis. It has delicious recipes for sweet and savory pies.
On my birthday I made these mini Greek spinach and pine nut pies. In addition to being beautiful, are simple to make and delicious!
These mini pies are great to offer to friends who are vegetarians, you just need to make sure that the cheese used is suitable for vegetarians.





Ingredientes: (para 12 mini tartes)
55g de manteiga
1 rolo de massa brick

recheio:
250g de espinafres baby leaf
1 colher de sopa de azeite
1 dente de alho picado
100g de queijo feta esfarelado
200g de queijo creme Philadelphia light
2 ovos
noz moscada qb
sal e pimenta qb
3 colheres de sopa de pinhões

Pré aquecer o forno a 180ºC. Untar ligeiramente as formas de muffins e reservar.
Para fazer o recheio, aquecer uma frigideira com o azeite e o alho picado. Juntar os espinafres e cozinhar até ficarem murchos. Retirar da frigideira e espremer para retirar o líquido em excesso. Picar grosseiramente os espinafres e reservar.
Numa tigela colocar o queijo feta e o queijo creme. Juntar os ovos e bater até ficar uma mistura macia. Temperar com a noz moscada, o sal e a pimenta (cuidado que o queijo feta já é salgado!). Nesta fase, juntar os espinafres picados e envolver bem.
Desenrolar a massa brick e cortar quadrados de massa. Pincelar levemente os quadrados de massa com a manteiga, sobrepor dois quadrados de massa de forma a que os cantos não se sobreponham e formem uma estrela e forrar as formas de muffins. Rechear com a mistura de espinafres e polvilhar com pinhões e os restos de massa que sobrem.
Levar ao forno durante 20 minutos ou até a massa estar dourada e o recheio ter crescido um pouco. Servir mornas ou frias.


Ingredients: (for 12 mini pies)
55g of butter
1 roll of brick pastry

filling:
250g baby leaf spinach
1 tablespoon olive oil
1 clove garlic, minced
100g of feta cheese crumbled
200g of Philadelphia Light cream cheese
2 eggs
nutmeg to taste
salt and pepper
3 tablespoons pine nuts

Preheat oven to 180ºC. Grease a 12 section muffin tin.
To make the filling, heat a frying pan with olive oil and chopped garlic. Add the spinach and cook until wilted. Remove from pan and squeeze to remove excess fluid. Chop the spinach coarsely and set aside.
In a bowl place the cream cheese and feta cheese. Add the eggs and beat until a smooth mixture. Season with nutmeg, salt and pepper (be careful that the feta is already salty!). At this stage, add the chopped spinach and mix well.
Unroll the dough and cut squares. Lightly brush the squares with butter, overlap two squares so that the corners do not overlap and form a star and line the muffin tins. Fill with spinach mixture and sprinkle with pine nuts and the rest of the remaining brick pastry.
Bake for 20 minutes or until the pastry is golden and the filling has risen. Serve warm or cold.

Depois do meu computador ter soltado o seu último fôlego, aqui volto eu com uma receita deliciosa. Hoje ao ver esta receita na revista "Bimby", não resisti em fazê-la.
Eu fiz algumas alterações no recheio, que ficou bem ao nosso gosto. A massa ficou perfeita! É certamente uma receita a repetir!

I made some changes to the filling, which was much to our liking. The dough was perfect! It's certainly a recipe to repeat!



Ingredientes:

para a massa:
75g de margarina
25g de azeite
50g de vinho branco
50g de água
1 ovo
450g de farinha tipo 65
sal

para o recheio:
1 molho de grelos de couve cozidos
2 cenouras cozidas
1 dente de alho
1/2 cebola
150g de natas de soja
1 alheira de cogumelos
1 alheira de peru
sal e pimenta qb
1 gema de ovo
azeite
sementes de sésamo

Forrar uma tarteira com papel vegetal e pré aquecer o forno a 200ºC.
Colocar a margarina, o azeite, o vinho e a água num tacho e aquecer até a margarina derreter. Juntar a farinha e o ovo e misturar até obter uma massa macia que não se cola às mãos. Reservar.

Numa frigideira colocar o azeite, o alho e a cebola picados e deixar alourar. Juntar a cenoura cortada em cubos e os grelos. Juntar as natas de soja, temperar e envolver.

Estender 2/3 da massa e forrar a tarteira. Colocar o recheio dentro. Estender a restante massa e tapar o recheio. Fazer um buraco no centro para libertar o vapor. Pincelar com gema de ovo, polvilhar com sementes de sésamo e levar ao forno durante 30 minutos.


Ingredients:

for the dough:
75g margarine
25g of olive oil
50g of white wine
50g water
1 egg
450g flour type 65
salt

for the filling:
1 bunch of spring greens cooked
2 cooked carrots
1 clove of garlic
1/2 onion
150g of soy cream
1 mushroom alheira
1 turkey alheira
salt and pepper
1 egg yolk
olive oil
sesame

Line a pie pan with parchment paper and preheat the oven to 200ºC.
Place the margarine, olive oil, wine and water in a saucepan and heat until the margarine melts. Add the flour and egg and mix to a soft dough that does not glue the hands. Reserve.

In a skillet put olive oil, chopped garlic and onion and let brown. Add the diced carrots and spring greens. Add the soy cream, spice and mix.

With a roll spread 2/3 of the dough and line the pie pan. Place the stuffing inside. Do the same with the remaining dough and cover the filling. Make a hole in the center to release the steam. Brush with egg yolk, sprinkle with sesame seeds and bake for 30 minutes.

Para fugir ao habitual doce para comemorar o Dia de São Valentim, fiz este pão cuja receita veio na revista Vaqueiro nº216. Revelou-se um pão com um aroma inebriante devido ao chá aromático que leva.
A receita original inclui também sultanas, mas omiti este ingrediente porque a minha pequenota não gosta de sultanas.
Nós comemos este pão, acabadinho de sair do forno, com manteiga. O aroma do chá liberta-se quando cortamos as fatias de pão e perfuma a casa! Façam este pão e preparem-se para um sabor e aroma verdadeiramente únicos.

In order to make something diferent to celebrate Valentine's Day, I made this bread THat I saw in the magazine Vaqueiro No. 216. It proved to be a bread with a heady aroma due to the aromatic tea that is one of the ingredients.
The original recipe also includes sultanas, but I omited this ingredient because my little girl doesn't like it.
We ate this bread, fresh out of the oven, with butter. The aroma of the tea is released when we cut the bread slices and perfumes the house! Make this bread and prepare yourself for a truly unique flavor and aroma.



Ingredientes:
150g de farinha de centeio
350g de farinha
2 saquetas de chá Lipton London Earl Grey
1 saqueta de levedura de padeiro desidratada
1 colher de sobremesa de flor de sal
2 colheres de sopa de açúcar amarelo
50g de Vaqueiro líquida
2,75ml de água tépida
75g de nozes

Ligar o forno a 180ºC.
Numa tigela misture todos os ingredientes secos. De seguida juntar a Vaqueiro líquida, a água tépida e amassar no robot de cozinha até a massa se despegar da tigela.
Colocar a massa numa superfície enfarinha e amassar com as mãos até se despegar das mãos. Formar uma bola e levar a levedar numa tigela em local quente durante 3 horas (é importante respeitar este tempo, pois o pão de centeio demora mais tempo a levedar do que o pão de trigo).
Ao fim desse tempo voltar a amassar, formar um rolo e colocar numa forma de bolo inglês untada com spray Espiga e polvilhada com pão ralado. Deixar levedar novamente durante 30 minutos em local quente.
Cozer o pão durante 25 minutos, ou até ficar dourado.
Comer quente com manteiga ou com compota.


Ingredients:
150g rye flour
350g flour
2 sachets of Lipton Tea London Earl Grey
1 sachet of dried baker's yeast
1 dessertspoon of sea salt
2 tablespoons brown sugar
50g liquid Vaqueiro
2.75 ml of warm water
75g walnuts

Turn the oven to 180 º C.
In a bowl mix all dry ingredients. Then add the liquid Vaqueiro, warm water and knead in food processor until the dough detachs from the bowl.
Place the dough on a floured surface and knead it doesn't stick to your hands. Form a ball and let it rest in a warm place for 3 hours (it is important to respect this time because the rye bread takes longer to ferment than wheat bread).
At the end of this time re-knead, form a roll and place in a greased reactagular baking pan and sprinkled with bread crumbs. Let it rest again for 30 minutes in a warm place.
Bake the bread for 25 minutes, or until golden brown.
Eat hot with butter or jam.

Os lanches do meu filho incluem sempre um batido. Nada doce, sempre com fibras e muita fruta. Normalmente faço-os com leite, iogurte grego ou kefir, mas desta vez usei o sumo de laranja como base para um batido cheio de nutrientes deliciosos para as crianças e também para adultos.
Não se sente a falta do leite, pois é um batido muito suave devido à banana, que lhe confere também um sabor doce, não necessitando, assim, de açúcar. Experimentem!!

My son´s afternoon snack always include a smoothie. Nothing sweet, always with plenty of fruit and fiber. I usually make it with milk, Greek yogurt or kefir, but this time I used orange juice as a base for a smoothie full of delicious nutrients for children and also for adults.

sumo de 4 laranjas
4 colheres de sopa de frutos vermelhos
1 banana madura
1 colher de sopa de gérmen de trigo

Bater todos os ingredientes num liquidificador até se obter um batido homogéneo e cremoso. Simples!

Depois de desvendar qual o problema com o computador, volto com uma receita do livro "Dia a dia - receitas para toda a semana" da Mafalda Pinto Leite. É ideal para quem é intolerante ao glúten, pois não leva farinha de trigo.
Ficou muito saborosa e desapareceu num instante, mas quando saiu do forno, ao ver que a banana não caramelizou, eu polvilhei com um pouco de açúcar e derreti com um maçarico de cozinha. Ficou com uma crosta de caramelo, que se parte quando cortamos uma fatia. Uma delícia!

Ingredientes:
3/4 chávena de açúcar amarelo
2 bananas maduras cortadas em rodelas finas
185g de margarina Becel
1 colher de chá de essência de baunilha
3 ovos
1 1/3 de farinha de amêndoa
1/3 de farinha de arroz

Pré-aquecer o forno a 180ºC. Untar uma tarteira e forrar com papel vegetal. Polvilhar o fundo da tarteira com 2 colheres de sopa de açúcar e cobrir com a banana cortada em fatias finas.
Numa tigela bater a margarina com o restante açúcar e com a baunilha. Juntam-se os ovos e envolve-se. Finalmente juntam-se as farinhas e mexe-se bem.
Deita-se a massa em cima da banana e leva-se ao forno durante +/- 35 minutos.
Quando tirar o bolo do forno, desenforma-se e polvilha-se a banana com açúcar a gosto e queima-se com um maçarico de cozinha até se obter uma superfície caramelizada. Servir com uma bola de gelado de nata.

2 ripe bananas sliced
185g margarine Becel
1 teaspoon vanilla extract
3 eggs
1 1/3 almond flour
1/3 of rice flour

Preheat oven to 180ºC. Grease a pie pan and line with parchment paper. Sprinkle the bottom of the pie pan with 2 tablespoons of sugar and cover with thinly sliced ​​banana.
In a bowl mix the butter with the remaining sugar and the vanilla. Add the eggs and mix. Finally add the flour.
Pour the dough on top of the banana and bake for +/- 35 minutes.
When you take the cake from the oven, unmold it and sprinkle the banana with sugar to taste and burn it with a kitchen blowtorch until you get a caramelized surface. Serve with a scoop of ice cream.

Passei anos a ver receitas com pepitas de caramelo, pepitas de manteiga de amendoim, pepitas de chocolate branco e com as pepitas de chocolate semi-amargo. Infelizmente, no mercado nacional, apenas se encontra à venda as pepitas de chocolate semi-amargo.
Os meus filhos muito me pediam para encontrar umas pepitas diferentes do habitual, e eu até procurei saber como poderia comprar online, mas saía tão caro que acabava sempre por desistir!
Finalmente, esta semana, descobri uma loja em Lisboa que vende as famosas pepitas de caramelo, de manteiga de amendoim e de chocolate branco! Fiquei tão contente! Sim!, eu fico contente com coisas assim!  E depressa dei um pulinho a Lisboa para procurar a loja e saí de lá uma cliente muito feliz e satisfeita por finalmente ter encontrado o que procurava há anos!
O problema foi saber por onde começar! Enquanto vinha sentada no metro, a minha mente fervilhava de ideias! Faria eu umas bolachas?! Um bolo? Muffins? Tanta ideia e tanta dificuldade em decidir!
Até que ontem, enquanto vagueava pelas receitas da Nigella Lawson, encontrei esta receita de muffins de banana com pepitas de caramelo. São deliciosos! Fofos, leves e o sabor destas pepitas dão um sabor muito especial a estes muffins. Cada vez que se morde uma pepita de caramelo há uma explosão de sabor na nossa boca que eleva estes muffins a um nível muito superior!

So I  made a quick visit to Lisbon to search for the store and walked out a very happy customer and glad to have finally found what I was looking for for years!
The problem was knowing where to start! As I was sitting on the subway, my mind buzzed with ideas! Would I make some cookies?! A cake? Muffins? So many ideas and it was so hard to decide!
Until yesterday, while wandering through Nigella Lawson's recipes, I found this recipe for banana muffins with butterscotch morsels. They are delicious! Fluffy, light and the flavor of these chips give a very special flavor to these muffins. Each time you bite a butterscotch chip there is an explosion of flavor in our mouths that raises these muffins to a much higher level!


Ingredientes:
3 bananas muito maduras
125ml de óleo vegetal
2 ovos
250g de farinha
80g de açúcar
1/2 colher de chá de bicarbonato de sódio
1 colher de chá de fermento
100g de pepitas de caramelo

Forrar  as formas de muffins com formas papel e reservar. Pré-aquecer o forno a 180ºC.
Bater ligeiramente o óleo com os ovos e reservar. Descascar as bananas e esmagar com um garfo.
Numa tigela juntar a farinha, o açúcar, o bicarbonato de sódio e o fermento e misturar. Juntar as bananas esmagadas e a mistura de óleo e ovos e mexer. Juntar as pepitas de caramelo.
Dividir a massa pelas formas de muffins e levar ao forno durante 20 minutos.



Ingredients:
3 very ripe bananas
125ml vegetable oil
2 eggs
250g flour
80g sugar
1/2 teaspoon baking soda
1 teaspoon of baking powder
100g butterscotch chips

Line a muffins baking pan with muffin papers and set aside. Preheat oven to 180 º C.
Lightly mix the oil with the eggs and set aside. Peel the bananas and mash with a fork.
In a bowl add the flour, sugar, baking soda, baking powder and mix. Add the mashed bananas and the mixture of oil and eggs and mix. Add the butterscotch chips.
Place equal quantities of dough in the muffin tins and bake for 20 minutes.

Com o mau tempo que tem estado só nos apetece uma comida quentinha e reconfortante. Esta semana tenho tido vontade de provar sabores de outros países exóticos. Esta manhã a minha mente foi parar à Tailândia e depois de ter pesquisado como fazer algo delicioso com os sabores característicos deste país, acabei por fazer esta sopa que ficou deliciosamente picante!
Tão simples de fazer, delicioso, muito rápida de fazer, cheia de legumes frescos, com o aroma delicioso do marisco, ligeiramente picante e com umas cores lindas! Experimentem que vale a pena! Fiquem agora com as fotos e com a receita!

This morning my mind flew to Thailand and after researching how to make something delicious with the flavors of this country, I ended up making this soup that was deliciously spicy!
So simple to make, delicious, very quick to make, full of fresh vegetables, with the delicious aroma of seafood, slightly spicy and with some beautiful colors! Try it! I'll leave you now with the photos and the recipe!



Ingredientes:

para o caldo de galinha:
1/4 de galinha
1 cenoura
1 cebola
1 pedaço de gengibre
sal e pimenta qb
4 dentes de alho
1,5l de água

para a sopa:
1,5L de caldo de galinha
10 camarões
1 dente de alho picado finamente
1/4 chávena de sumo de lima
3 colheres de sopa de molho de peixe
3 colheres de sopa de açúcar mascavado
2 malaguetas
120g de cogumelos shiitake
2 ovos, levemente batidos
125g de rice noodles
4 couves pak choi
amendoins torrados
coentros picados
cebolinho
gomos de lima para decorar


Para o caldo de galinha colocar todos os ingredientes numa panela de pressão e cozer durante 20 minutos.  Enquanto isso, descascar os camarões (reservar as cascas e cabeças ), retirar a tripa e reservar. Ao fim desse tempo coar o líquido através de um passador.
Ferver o caldo com as cascas e cabeças do camarão em lume brando durante 10 minutos. Coar os sólidos do caldo .Levar de novo ao lume e adicionar o sumo de lima, o molho de peixe, 1 colher de sopa de cebolinho picado, a couve, o açúcar, 1 malagueta (sem sementes) cortada em juliana fina, o alho e os cogumelos cortados em fatias. Cozinhar durante 10 minutos.
Entretanto ferver 2 litros de água e juntar os rice noodles. Esperar 4 minutos. Depois disso escorrer os noodles e colocar um montinho em cada prato.
Acrecentar o camarão ao caldo da sopa e cozinhar durante 3 minutos. Bater ligeiramente os ovos e mexendo sempre, deitar os ovos em fio.
Deitar a sopa sobre a massa e decorar com os coentros picados, a malagueta cortada em rodelas finas, o amendoim, cebolinho picado e um gomo de lima.

for chicken broth:
1/4 chicken
1 carrot
1 onion
1 piece of ginger
salt and pepper
4 cloves of garlic
1,5 l of water

for the soup:
1,5 liters of chicken stock
10 shrimps
1 clove garlic, finely chopped
1/4 cup of lime juice
3 tablespoons of fish sauce
3 tablespoons brown sugar
2 chillies
120g shiitake mushrooms
2 eggs, lightly beaten
125g rice noodles
4 cabbage pak choi
roasted peanuts
chopped coriander
chive
lime wedges for garnish


For chicken broth place all ingredients in a pressure cooker and cook for 20 minutes. Meanwhile, peel the shrimps (reserving the shells and heads), remove the gut and reserve. After this time strain the liquid through a sieve.
Boil the broth with shrimp shells and heads on low heat for 10 minutes. Strain the solids from the broth. Boil again and add the lime juice, fish sauce, 1 tablespoon of chopped chives, cabbage, sugar, 1 chili (without the seeds) cut into thin julienne, garlic and sliced ​​mushrooms. Cook for 10 minutes.
Meanwhile boil 2 liters of water and add the rice noodles. Wait 4 minutes. After that drain the noodles and place it on each plate.
Add the shrimp to the soup and cook for 3 minutes. Stirring constantly, slowly pour the eggs.
Pour the soup over the pasta and garnish with chopped coriander, chili thinly sliced​​, peanuts, chopped chives and a slice of lime.

Quando fiz este roscón de reyes, sobrou-me metade de um bolo. Para não se estragar acabei por o congelar. Há uns dias vi esta receita no blog Coco&Baunilha e decidi fazê-la com o roscón de reyes. Fiz algumas alterações e ficou delicioso! Fica aqui a minha versão deste pudim, que vale bem a pena experimentar, nem que seja com pão. Fica com uma textura cremosa com os pedacinhos de pinhões e nozes que decoravam o roscón de reyes.

A few days ago I saw this recipe on the blog Coconut & Vanilla and decided to make it with the leftover of the roscón de reyes. I made some changes and it was delicious! Here is my version of this pudding, which is well worth experiencing, even if it is with bread. It has a creamy texture and the little bits of the pine nuts and walnuts that decorated the roscón de reyes give it a little crunch.


Ingredientes:
1 litro de leite
casca de 1 limão
1 pau de canela
1/2 roscón de reyes de chocolate (não retirar os frutos secos que decoram o bolo)
4 ovos
130g de açúcar
1 colher de chá de baunilha
3 colheres de sopa de licor de cacau
caramelo

Aquecer o leite com a casca de limão e a canela. Colocar o roscón de reyes, cortado em fatias, dentro do leite e deixar repousar até absorver todo o leite. Nessa altura retirar a casca do limão, o pau de canela e triturar com a varinha mágica. Os frutos secos irão ficar em pedacinhos o que vai dar uma textura muito agradável ao pudim.
Juntar os ovos, o açúcar, a baunilha e o licor de cacau e mexer. Deitar esta mistura num pirex untado com caramelo e levar a forno aquecido a 180ºC durante 1 hora.



Ingredients:
1 liter of milk
1 lemon peel
1 cinnamon stick
1/2 chocolate roscón de reyes (do not remove the nuts that decorate the cake)
4 eggs
130g sugar
1 teaspoon of vanilla extract
3 tablespoons of cocoa liquor
caramel

Heat the milk with the lemon peel and cinnamon. Place roscón de reyes, sliced​​, inside the milk and let stand until it absorbed all the milk. By then remove the lemon peel, cinnamon stick and grind with the immersion blender. The nuts will be in small pieces which will give a very nice texture to the pudding.
Add the eggs, sugar, vanilla and cocoa liquor and mix. Pour this mixture into a baking dish with caramel and bake in a heated oven at 180°C for 1 hour.

Eu e o meu marido adoramos comida indiana. Mas como não estamos em altura de andar muito em restaurantes e também porque não há nada como uma comidinha caseira, procurei, li, investiguei, procurei os melhores ingredientes e meti mãos à obra.
Este frango ficou delicioso, e superou as minhas expectativas! Revelou-se tão fácil de fazer, que vai ficar na minha lista de receitas a repetir.

Me and my husband love Indian food. But as we are not in time to eat regularly in restaurants and also because there's nothing like a homemade food, I searched, read, researched, and searched for the finest ingredients to work.
This chicken was delicious and exceeded my expectations! Proved so easy to make, that it will be on my list of recipes to repeat.






Ingredientes:
1 frango do campo
6 dentes de alho
15g de amêndoas peladas
15g de creme de côco
15g de gengibre fresco
20g Meat Curry Masala
1 cebola média
4 colheres de sopa de azeite
120g de iogurte grego natural
1 tomate maduro grande
sal qb

Colocar o gengibre, o alho, a amêndoa, o creme de coco e duas colheres de sopa de água num copo e triturar com a varinha mágica até se obter uma pasta. Reservar.Lavar e cortar o frango em pedaços pequenos e reservar.Picar a cebola e levar ao lume com o azeite. Quando a cebola estiver translúcida, deitar a pasta de gengibre feita anteriormente e cozinhar durante 5 minutos. Juntar o pó meat curry masala e cozinhar durante 2 minutos. Juntar o iogurte, mexer, de seguida deitar o sal e o tomate descascado e triturado com a varinha mágica. Cozinhar durante 4 minutos, mexendo de vez em quando.A esta altura juntar o frango e deixar ganhar cor por uns minutos. Juntar 250ml de água a ferver, tapar a panela e deixar cozinhar durante 45 minutos.Servir com arroz basmati cozido.




Ingredients:
1 chicken
6 cloves of garlic
15g of peeled almonds
15g coconut cream
15g fresh ginger
20g Meat Curry Masala
1 medium onion
4 tbsp olive oil
120g 
natural 
Greek yoghurt 
1 large ripe tomato
salt to taste



Place the ginger, garlic, almond, coconut cream and two tablespoons of water in a cup and blend with a immersion blender until you get a paste. Reserve.
Wash and cut the chicken into small pieces and set aside.
Chop the onion and cook in medium heat with olive oil. When the onion is translucent, pour the ginger paste made earlier and cook for 5 minutes. Add the Meat Curry Masala and cook for 2 minutes. Add the yogurt, stir, then pour the salt and tomato peeled and blended with the immersion blender  Cook for 4 minutes, stirring occasionally.
At this point add the chicken and cook for a few minutes. Add 250ml of boiling water, cover the pan and simmer for 45 minutes.
Serve with cooked basmati rice.
